Time 2h30m

Yield 8

Number Of Ingredients 17

2 (8 ounce) bone-in pork chops
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon chili powder
1 bay leaf
3 cups chicken broth
2 cups water
2 tablespoons soy sauce
¼ cup flour
3 potatoes, cut into small chunks
1 cup chopped broccoli
1 carrot, diced
1 onion, diced
2 stalks celery, diced

Steps:

  • Place pork chops, paprika, oregano, garlic powder, salt, pepper, chili powder, bay leaf, chicken broth, water, and soy sauce in a large stock pot. Bring to a boil, uncovered, then reduce heat to medium low and let simmer for 1 hour. Remove the pork chops and set aside to cool.
  • Whisk 3/4 cup of the cooking liquid with the flour; set aside. When the pork chops are cool remove and discard any bones or fat. Chop or shred the meat into bite size pieces.
  • Add the potato, broccoli, carrot, onion, celery, and cooked pork back to the pot. Bring the mixture to a boil, stir in the flour mixture. Reduce heat and simmer for 1 hour. Remove the bay leaf and gently mash the potatoes before serving.

Neely's Chickpea, Ham and Swiss Chard Soup image

Provided by Patrick and Gina Neely : Food Network

Time 1h15m

Yield 4 servings

Number Of Ingredients 14

3 slices bacon, chopped
1 medium onion, chopped
4 garlic cloves, chopped
1 large carrot, diced
One 6-ounce piece smoked ham steak, diced into 1/4-inch cubes
1/2 teaspoon red pepper flakes
Salt and freshly cracked black pepper
1 small bunch Swiss chard, stemmed and sliced into thin ribbons
1 quart low-sodium chicken broth
One 16-ounce can chickpeas or black-eyed peas, drained and rinsed
One 15-ounce can diced tomatoes
Hot sauce, as needed
Worcestershire sauce, as needed
Grated Parmesan, for garnish

Steps:

  • Add the bacon to a heavy-bottomed Dutch oven over medium heat. Fry until crisp, then transfer to a paper towel-lined plate and reserve. To the same Dutch oven, add the onion, garlic, and carrot, and saute until the vegetables are tender, roughly 4 minutes. Add the ham steak and red pepper flakes and adjust the seasonings with salt and black pepper, to taste. Add the Swiss chard and saute until it begins to soften.
  • Stir in the chicken broth, chickpeas or black-eyed peas, and the canned tomatoes with their juices. Bring the soup to a boil, then reduce the heat to a simmer and let cook for 30 minutes. Taste for seasoning and add more salt and pepper, if necessary. Splash with some hot sauce and Worcestershire sauce. Ladle the soup into serving bowls and sprinkle each serving with Parmesan cheese and bacon.

Categories     main-dish

Time 16m

Yield 1 serving

Number Of Ingredients 7

1 1/2 teaspoons olive oil
1 tablespoon all-purpose flour
One 6-ounce bone-in center-cut pork chop
Kosher salt and freshly ground black pepper
1 lemon, cut in half, 1 half cut into wedges
One 14.5-ounce can cannellini beans, drained and rinsed
10 ounces baby spinach

Steps:

  • Heat the oil in a medium skillet over medium-high heat. Put the flour in a shallow dish. Season the pork chop with salt and pepper. Dredge in the flour and add to the skillet. Cook until golden, about 5 minutes, then flip and cook to desired doneness, about 3 minutes more. Give the lemon half a good squeeze over the chop.
  • Next, add the cannellini beans and spinach to a medium skillet set over medium-high heat. Season with salt and pepper and cook, stirring occasionally, until the beans are warmed through and the spinach is just wilted, 3 to 4 minutes. Give the beans and spinach a good squeeze of the lemon half.
  • Serve the beans and spinach alongside the pork chop with the lemon wedges for squeezing over.

Provided by Patrick and Gina Neely : Food Network

Time 52m

Yield 4 servings

Number Of Ingredients 15

Olive oil, for brushing grill grates
Kosher salt and freshly ground pepper
1 teaspoon ground cumin
1/2 teaspoon allspice
Four 8-ounce boneless center-cut loin pork chops
2 tablespoons butter
1 shallot, minced
1 tablespoon all-purpose flour
1/2 cup pomegranate juice
1/4 cup low-sodium beef stock
1 tablespoon red wine vinegar
1 tablespoon raspberry preserves
Fresh pomegranate seeds, for garnish (optional)
Kosher salt and freshly ground black pepper
Rice, for serving

Steps:

  • Heat a grill to medium-high heat and brush the grill grates with olive oil.
  • Whisk together 1 1/2 teaspoons salt, 1 teaspoon pepper, cumin and allspice in a small bowl. Sprinkle the pork chops with the rub. Grill the pork chops on each side 6 to 7 minutes, for a total of 12 to 14 minutes. Remove the chops to a plate and tent with foil.
  • In a small saucepan, melt the butter. Once the butter starts to foam, add the shallot and saute until tender. Add the flour and stir until pasty. Stir in the pomegranate juice, beef stock, red wine vinegar and raspberry preserves. Bring to a simmer while stirring. The sauce will thicken when it begins to simmer. Taste and then season with salt and pepper.

DEEP-FRIED PORK CHOPS AND QUICK VEGETABLE SOUP

Deep-Fried Pork Chops and Quick Vegetable Soup image

Categories     Pork     Vegetable     Fry     Fall     Simmer     Boil

Yield serves 4

Number Of Ingredients 21

Vegetable soup
3 tablespoons butter
2 leeks, white and light-green parts, thinly sliced
2 celery stalks, chopped
2 carrots, chopped
3 tablespoons all-purpose flour
1 tablespoon tomato paste
4 cups Chicken Stock (page 28)
One 14.5-ounce can diced tomatoes
1 large white potato, cubed
1 cup frozen lima beans
1 cup frozen peas
1 cup frozen corn
5 ounces fresh green beans, cut into bite sized pieces
2 tablespoons chopped fresh flat-leaf parsley, for garnish
Pork chops
Peanut oil, for deep-frying
3/4 cup all-purpose flour
1 tablespoon salt
1 teaspoon black pepper
Four 1 inch thick bone in center cut pork chops

Steps:

  • Melt the butter in a large pot over medium heat. Add the leeks, celery, and carrots, and cook, stirring, until softened, 10 to 12 minutes. Sprinkle the flour over the vegetables, and continue to cook, stirring, until the flour reaches a light blond color. Add the tomato paste, and cook for another minute. Add the stock, and bring the mixture to a boil, stirring occasionally. Add the diced tomatoes and the potato, reduce the heat to low, and simmer until the potato is cooked through, about 20 minutes. The soup can be made up to 1 day in advance.
  • While the soup is simmering, heat 2 inches of peanut oil in a large Dutch oven to 325°F. Place the flour in a large casserole dish, and season with salt and pepper. Dredge the chops in the flour mixture, patting off the excess. Place the chops, two at a time, in the hot oil, and fry until cooked through, about 6 minutes. Transfer the cooked chops to a paper towel lined baking sheet, and repeat with the remaining chops.
  • Add the cooked chops to the soup and simmer over medium-low heat for another 30 minutes, or until the meat from the chops falls off the bone. During the last 10 minutes of cooking, add the lima beans, peas, corn, and green beans. To serve, ladle the soup into wide, shallow bowls, and garnish with the parsley.
