Number Of Ingredients 10

1 cup shortening
1 cup granulated sugar
1 cup brown sugar
1 teaspoon vanilla
2 beaten eggs
1 cup peanut butter
2 1/2 cups flour
1 1/2 teaspoons soda
1 teaspoon baking powder
dash of salt

Steps:

  • Preheat oven to 350 degrees. Thoroughly cream shortening, sugars, and vanilla. Add eggs and beat thoroughly; stir in peanut butter. Stir dry ingredients into creamed mixture. Form into 1" balls, place on ungreased cookie sheet. Press each with back of a fork to make crisscross. Bake 10 to 12 minutes or until lightly browned. Remove from oven and allow cookies to cool on cookie sheet for 1 minute. Remove to wire rack and cool completely. Variations: Monster Cookies: Use an ice cream scoop to measure dough. Roll into balls. Place about 5 cookies on large cookie sheet. Make crisscross design. Bake for 16 to 18 minutes or until lightly browned. Remove from oven. Allow to cool on cookie sheet for 1 to 2 minutes. Remove to wire rack and cool completely. Soft Peanut Butter Cookies: Decrease shortening to 1/2 cup and add 1 stick of softened butter with the shortening. Glazed Cookies: Melt 1 cup of peanut butter chips and 1 tablespoon of shortening over low heat or in the microwave. Using a spoon, drizzle over cooled cookies.

1 1/4 cups sifted flour
3/4 teaspoon baking soda
1/2 cup soft butter or 1/2 cup margarine
1/2 cup chunky peanut butter
1/2 cup light brown sugar, firmly packed
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla

Steps:

  • Sift dry ingredients.
  • In large bowl, combine butter and peanut butter. Beat for 30 seconds at medium speed.
  • Add sugar and brown sugar; and beat until fluffy.
  • Add egg and vanilla; beat well.
  • Stir in flour mixture and beat until well blended.
  • Refrigerate, covered, at least 1 hour.
  • Form dough into 1 inch balls.
  • Place on lightly greased cookie sheets. Flatten with fork, dipped in flour, making a criss cross pattern.
  • Bake at 375 degrees for 10 to 12 minutes or until lightly browned.
  • Cool 1 minute; remove to rack.

1 cup butter, softened
2 cups sugar
2 eggs beaten
3 cups applesauce with 3 tsp baking soda added to it
3 1/2 cups flour
1 tsp cloves
1 tsp allspice
1 tsp cinnamon
1 tsp salt
2 cups of raisins
1 1/2 cups walnuts, chopped

Steps:

  • 1. Preheat oven to 350 degrees. Flour and grease a tube pan or 2 loaf pans. 2. Stir together applesauce and baking soda. Set aside. Cream butter, sugar and eggs together, add to applesauce mix. 3. Stir together dry ingredients; flour, cloves, all spice, cinnamon & salt, add to applesauce mixture. Stir in raisins and walnuts. 4. Pour into baking pan. Bake 350 degrees, tube pan for 1 hour 20 minutes or loaf pans for 1 hour.

1 c. shortening
2 c. sugar
3 eggs
1 1/2 tsp. vanilla extract
1 c. buttermilk
1 tsp. baking soda
5 c. all-purpose flour
1/2 tsp. nutmeg
1/2 tsp. salt
2 tsp. baking powder

Steps:

  • In a large bowl, cream shortening and sugar; add eggs and vanilla. In a small bowl, combine buttermilk and baking soda. Stir in half the buttermilk mixture. Combine flour, nutmeg, salt and baking powder. Stir in dry ingredients alternately with buttermilk mixture. Dough will be tender. With a rolling pin, roll dough to 1/2-inch thick, using generous amounts of flour. Cut out cookies with a round cookie cutter. Bake on a greased cookie sheet. Bake for 10 minutes (I baked mine 12 minutes and they were super soft) at 350 degrees. Do Not Overbake. The cookies should be soft. Cool completely and spread with pink icing.

PASTRY FOR DOUBLE CRUST 9
FILLING:
1 C raisins
1/2 C butter (do not use margarine)
1 C brn sgr, packed
1 C karo corn syrup ( grease cup before measuring)
1/2 tsp salt
2 large eggs, beaten lightly
1 1/2 tsp vanilla extract (please no imitation)
PASTRY: . .OR, . . Y0U CAN CHEAT AND USE STORE BOUGHT
2 C flour
1 C shortening or lard
1 tsp salt
1 egg
1 Tbs vinegar
2 Tbs cold water, a bit more if needed

Steps:

  • 1. PASTRY: cheat and use refer store bought, or make your favorite, or this one. Blend Shortening/Lard and flour with pastry cutter, till you have created a uniform crumbly texture, about the size of peas.
  • 2. in seperate bowl; mix egg, vinegar, & col water. Add to Shortening and flour mixture. Mix ONLY til mixed,. . "NO MORE". NOTE: This is the Key t a tender crust. DO NOT OVER HANDLE THE DOUGH! Roll into ball of dough. Place in freezer 10-15 min to chill. Roll out on lightly floured surface about the thickness of a CD case.
  • 3. use wide mouth jar lid as cutter, or Cut 4" rounds of pastry dough and line tart pan or Muffin tins. Preheat Oven @ 400
  • 4. FILLING: In Heavy saucepan, combine raisins,butter, sugar, syrup, & salt, over low heat til butter is melted and sugar is disolved. Do not let mixture get too hot. NOTE: Only heat to WARM stage. Remove from Heat.
  • 5. Stir in Eggs, & vanilla.
  • 6. Spoon filling into tart shells, filling 2/3 full.
  • 7. Bake: 400 for 15 min. Reduce heat to 350 and bake 5 more minutes, or until pastry is a golden brown. DO NOT OVER BAKE DO NOT let filling bubble over or you will have trouble geting your tarts out of the pan. Cool 15 min before removing from pan.
  • 8. HINT: centers will be slightly runny, but not too runny, so every bite you take will ooze down your chin, and these crusts flakey.I like runny--the type the dribbes when you bite into one. if you like your more firm, bake a full 20 min.

My Grandmother Bess gave me this recipe which was her Mother's recipe. I've used it for years. I did add the Peanut Butter Glaze.

1 cup shortening
1 cup granulated sugar
1 cup brown sugar, packed
1 teaspoon vanilla
2 beaten eggs
1 cup peanut butter
2 1/2 cups all purpose flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
dash of salt
PEANUT BUTTER GLAZE
1 (10 ounce) package peanut butter chips
2 tablespoons shortening

Steps:

  • 1. Preheat oven to 350 degrees. Grease or spray cookie sheets with cooking spray. In medium bowl, combine flour, baking soda, baking powder and salt; set aside. In large bowl, thoroughly cream shortening, sugars, and vanilla. Add eggs and beat thoroughly; stir in peanut butter. Gradually beat dry ingredients into creamed mixture. Form into 1" balls and dip tops or roll in sugar; place on cookie sheet. Press each with back of a fork to make crisscross design. Bake 10-12 minutes or until golden brown. Remove from oven and cool on cookie sheets for 1 minute. Cool completely on wire rack.
  • 2. Peanut Butter Glaze: Combine peanut butter chips and shortening in microwave safe bowl. Stir at 15 second intervals until mixture is melted. Drizzle over cookies. Let set until glaze hardens.
  • 3. Note: These cookies are best when well browned. For Giant Cookies: Roll 4 scoops into balls. Bake about 20 minutes or until well browned. I use a large cookie sheet which allows me to bake 4-6 large cookies at a time.
