POLISH CABBAGE AND NOODLES (LAZANKI)
An unexpected combination of flavors comes together to create Lazanki, a dish that could be called an incredibly flavorful and comforting Polish stroganoff.

- In a large, cast iron or non-stick skillet, heat onions with 2 Tbsp water over medium-low heat. Cover and cook 30 minutes until dark brown and caramelized, checking frequently and adding water if necessary to prevent burning.
- Add remaining ingredients except noodles and sour cream. Simmer over low heat for 20-30 min, until cabbage is tender.
- Bring some water to a boil in a medium saucepan. Add noodles and cook 7-9 minutes, until al dente. Drain and set aside.
- Remove the cabbage mixture from the heat. Add sour cream and mix thoroughly. Add drained noodles and toss until well mixed.
- Top with a sprinkling of parsley.

Steps:
- 1. Melt one stick of butter in pan. Slice onion into thin strips and add to pan.
- 2. Carmelize onions; keep covered and on low to low/medium heat, stirring every 5-7 minutes until onions are carmelized and a rich brown color..this will take at least 40 minutes. These were mine after 25 minutes.
- 3. These were mine after 45 minutes.
- 4. I let them go for another 5 minutes. Perfect.
- 5. Transfer onions to metal bowl; cover and set aside.
- 6. Roughly chop mushrooms.
- 7. Add the broth to pan; keep on low-medium heat.
- 8. Stir in mushrooms. Cover and let saute until all liquid in the pan has been absorbed (about 15-20 min). Stir every so often. They should look like this when ready.
- 9. Transfer mushrooms to onion bowl.
- 10. Wash and roughly peel / chop cabbage into large pieces. Add to pot with water to cover cabbage. Cover pot and bring to a low boil. Boil until cabbage is tender; about 10 minutes.
- 11. Drain cabbage VERY well. In strainer, use utensils to push down on cabbage. Mix it. Push down again. Get as much liquid out of the cabbage as you can.
- 12. Place cabbage on cutting board and roughly chop it.
- 13. Melt 1 stick of butter in pan on low-medium heat. Add cabbage, salt and pepper. Stir, cover and saute for about 10 minutes, stirring every so often.
- 14. Cabbage is done when parts of it start to brown, like this.
- 15. Mix cabbage into onion bowl. Taste; add salt and pepper if necessary. Set aside.
- 16. Boil noodles. Drain.
- 17. Into your pan, add the noodles and mixture from bowl. Mix well. Warm it on low-medium heat for 5 minutes, covered.
- 18. This dish is very good as is. At this point, add your optional meat, or enjoy it without!

- Wash, and finely chop the cabbage (be sure to throw away the core).
- Add a bit of water and cook the cabbage until soft. If you use sauerkraut, rinse it first, and cook it too.
- When the cabbage is soft, drain it off.
- Chop the smoked bacon, finely chop the onions and fry it together until it's caramelized and soft.
- Mix the cabbage, bacon, and onions together.
- Cook the pasta separately.
- Mix everything together and season with salt and pepper.

LAZANKI
Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Bring a large pot of salted water to a boil. Add cabbage and cook until tender, about 15 minutes; drain.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- While the pasta and cabbage are cooking, heat oil in a large skillet over medium heat. Saute onions until tender.
- Combine cabbage, pasta, onions, salt, pepper and soy sauce; mix well and transfer to a 9x13 inch casserole dish. Bake in preheated oven for 30 minutes.
LAZANKI
I have no idea what this name means ; It was one of my grandma's recipes but I remember her making it often. This can be served as a side dish or as a main course dish.

Steps:
- 1. Bring a large pot of salted water to boil ; add cabbage and cook until tender ; about 15 minutes.
- 2. Mean while bring a large pot of water to a boil and cook pasta for about 8-10 minutes until Al Dente. Drain.
- 3. While the cabbage and pasta are boiling ; in a skillet with the oil saute the onions until tender.
- 4. Combine the cabbage , pasta , onions , salt & pepper and soy sauce together and mix well.
- 5. Transfer to a buttered 13x9" baking dish.
- 6. Bake in a pre-heated oven @ 450° for 30 minutes.
