MOTHER'S APPLESAUCE CAKE
This is a good old-fashioned applesauce cake. It will fill your house with the spicy fragrance of fall.

Steps:
- Preheat oven to 300 degrees F (150 degrees C). Grease and flour a tube pan.
- Whisk together flour, salt, cinnamon, cloves, and soda. Set aside.
- Cream together 1/2 cup butter and 2 cups brown sugar, beating until light and fluffy. Mix in eggs. Add flour mixture into creamed mixture alternately with applesauce, beginning and ending with flour mixture. Stir in the raisins, dates, and walnuts. Pour batter into prepared pan.
- Bake in preheated oven until a tester inserted in the center of the cake comes out clean, about 1 1/2 hours. Cool on wire rack.
- To make icing, melt 1/2 cup butter or margarine in a small saucepan over low heat; stir in 1 cup brown sugar. Boil for 2 minutes. Stir in milk, and continue to stir until the mixture returns to a boil. Remove from heat, and cool for 5 minutes. Beat in vanilla and confectioners' sugar. Frost cooled cake.

- Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack. Dust with confectioners' sugar if desired. Serve warm or cold.

OLIVIA'S APPLESAUCE CAKE
This cake is the one Olivia Walton made in the movie "The Homecoming", which was the basis for the TV series "The Waltons". She made the cake for Christmas, but apples are plentiful here, so we enjoy it any time of the year!

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, cloves, nutmeg, baking soda, cinnamon and salt. Remove 1/2 cup flour mixture to a small bowl; stir in raisins and nuts. , Add remaining flour mixture to the creamed mixture alternately with applesauce, beating well after each addition. Stir in raisin mixture. Pour batter into a greased and floured 10-in. fluted tube pan. , Bake at 350° for 65-75 minutes or until a toothpick inserted in the center comes out clean. - Cream butter and sugar till light.
- Add eggs, beating well after each addition.
- Sift dry ingredients together and add to creamed mixture alternately with applesauce.
- Stir in raisins and pecans.
- Turn batter into greased and lightly floured pan (13 x 9 x 2-inch).
- Bake at 350 F about 45 minutes to till done.

This cake is one of my grandfather's favorites. And it seems like he always knows when you're making it-he must have a keen sense of smell! The recipe was passed down through the generations beginning with my great-grandmother. Sometimes I can imagine her making it all those years ago.

GRANDMA EVANS' APPLESAUCE SPICE CAKE

Steps:
- In a large bowl, stir in 1 tsp. of baking soda to applesauce and let it fizz up a bit. (1 minute)
- Then add in the eggs, margarine and brown sugar. Blend together.
- Add the flour, baking powder, and spices to the mix and blend in.
- (The recipe says that if it seems a little dry, add 1/2 cup of milk. I have never needed to do this, but if it looks thicker than the usual texture of a cake batter, you can add a little, or perhaps a little more applesauce.)
- put into a greased 8x8 cake pan and bake at 350 degrees - for about 45 minutes, or until a fork comes out clean when testing the center of the cake.
- This cake is lovely with a simple lemon icing drizzled on it - some icing sugar, with a bit of lemon juice mixed to give it the consistency you want,....

- Heat oven to 350°F. Grease and flour 13x9-inch pan. In large bowl, mix flour, granulated sugar, 2 teaspoons cinnamon, the baking powder, baking soda and salt. Add applesauce, oil and eggs; beat on low speed of electric mixer until moistened. Beat 2 minutes on high speed. With spoon, fold in apple and raisins; pour into pan.
- Bake 28 to 38 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
- Heat butter in medium saucepan over medium heat until light golden brown, stirring frequently. Remove from heat; cool 2 to 3 minutes. Beat in powdered sugar, 1/4 teaspoon cinnamon, the vanilla and enough apple juice for desired spreading consistency. Immediately spread over top of cooled cake. (Frosting sets up quickly).
