500 g minced or ground beef
1 pkg ranch dressing seasoning
4 cobs of corn (fresh)
1 can(s) la costeña pinto beans
1 can(s) mutti brand finely chopped pomodoro tomatoes
1 can(s) small pink kidney beans
1 can(s) large kidney beans
1 can(s) crushed tomatoes
1 bottle passata (700ml) or tomato sauce
KIM'S SPECIAL SPICE SEASONING INGREDIENTS (MAY ALSO BE USED FOR TACOS OR FAJITAS). PLEASE USE FRESHEST DRIED SPICES YOU CAN FIND.
2-3 tsp ground cumin
2 tsp whole mixed peppercorns
2 tsp pink sea salt
2 tsp sweet paprika - smoked paprika may be used for 1 of the teaspoons
2 tsp dried oregano
2 1/4 tsp dried garlic flakes - or powder
1 tsp dried onion flakes - or powder
1-2 small dried tabsco chili peppers. other chili may be substituted but must be dried to use in spice mix.
500 g mushrooms - whole, sliced, or chopped. your preference, as is the type of mushrooms. i prefer button and cut in half.

Steps:

  • 1. **Note** Mushrooms belong with the fresh ingredients and are to be cooked with the beef in the next step. Not to be mixed with the dried spices. Place all dried spices (except ranch dressing seasoning) together in spice grinder and blend until fine and well blended. Put aside until needed.
  • 2. In large, 5 litre or 1 gallon stock pot, place 1-2 TBSP olive oil. Turn up heat to medium-high and add beef and mushrooms. Cook until browned.
  • 3. Turn heat down to medium and add Ranch dressing seasoning and 1/2 to 2/3 of Kim's Special Spice Blend - or as much as you dare! But, it's best to start with less than to be over seasoned because it can be very, very spicy especially with the dried chili peppers.
  • 4. Add all beans and canned tomatoes plus 1-2 cans water. Passata is used to temper the spices and add that special tomato flavour! I use at least 1/2 the jar but often use all of it, depending on my mood. Some people like their chili more brown while others like theirs more red. So the passata or tomato sauce is what makes the difference.
  • 5. Cut the corn off the cob and add to pot. Give it all a big stir. Bring to the boil, then turn the heat down to low or medium/low depending on your stove. Stir every 10-15 minutes, check seasonings. More may be added after the the first 15 minutes, if needed. Just remember that dried chilies will get a little hotter as they cook. Cook for at least 1 hour or until your chili is rich and thick. This will make about 3 1/2 litres or slightly less than 1 gallon of chili.
  • 6. You may also add or substitute in black beans, black eyed peas, borlotti beans and whatever vegetable your heart desires (celery, onion, garlic, bell peppers, spinach, zucchini, carrot, etc.). More veg also means you may need to add more seasoning. To keep it from getting too hot I often just add more cumin and oregano to taste first, then go from there. I'm not much for "recipes" anymore as most of my cooking is done to taste - so this recipe was hard for me. But it is so dear to my heart I finally had to share it. It is also one of the ways for me to get hubby to eat many different vegetables in one meal. Once you're ready to serve a bit of grated cheddar cheese, a dollop of sour cream, and a few chives or sliced green onions to top off the bowl makes it even better. Serve with tortilla chips or saltine crackers and have at it "flat out like a lizard drinking" as my Aussie mother-in-law says.

For a more authentic chilli with a depth of flavour, use diced belly pork, beef steak and pancetta and slowly simmer

500g lean belly pork slices
700g skirt steak or lean stewing beef
75g diced pancetta or rashers rindless smoked streaky bacon
2 tbsp olive oil
2 onions , chopped
4 garlic cloves , finely chopped
1 unwaxed lemon
3 tbsp Mexican chilli powder (see tip) or the milder dulce pimentón powder
1 tsp ground cumin
1 tbsp flour
2 bay leaves
2 tsp dried oregano
2 tbsp tomato purée
300ml red wine
450ml chicken or beef stock
400g can black beans , drained and rinsed
rice or couscous , to serve
300ml soured cream
4 small firm ripe avocados
juice 2 limes , plus extra wedges to serve (optional)
2 tbsp sweet chilli dipping sauce
2 tbsp chopped coriander or chives

Steps:

  • The day before, cut all the meat into small chunks - this will take at least 30 mins. In a spacious, heavy-based pan, fry the pancetta in the oil over a medium heat until it is crisp and the fat has melted.
  • Stir the onions and garlic into the crisping pancetta and cook, stirring often, for 10-15 mins until soft.
  • Cut the lemon into quarters lengthways, then remove the pithy core and seeds. Chop into small pieces (each with a bit of peel). Remove the pan from the heat and scoop the contents into a sieve, letting any fat drain back into the pan - and give some encouragement with a wooden spoon.
  • Return the pan to the heat and brown the pork in the hot fat, then stir in the beef and brown that too. Add the chilli powder and cumin, and cook over a low heat for 2 mins, stirring constantly. Add the flour and cook for a further 2 mins. Add the bay leaves, 1/2 tsp salt, the lemon, oregano, tomato purée, red wine and stock. Return the onions to the pan. Bring to a simmer, stirring often, then reduce the heat and cook, uncovered, and stirring occasionally to avoid sticking, for 2 hrs until the sauce is thick and the liquid has reduced. Add salt to taste. Cool, cover and chill overnight. Can be frozen at this stage for up to 1 month - defrost overnight in the fridge before continuing with the recipe.
  • Add the beans to the chilli and reheat. Serve with rice or couscous, a dollop of soured cream, slices of avocado tossed in lime juice, a splash of chilli sauce, sprinkling of coriander, and lime wedges, if you like.

2 medium onions, chopped
2 garlic cloves, minced
1 medium green pepper, chopped

1/4 teaspoon ground cinnamon
1 teaspoon ground cumin

2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 cup water
1 can (16 ounces) kidney beans, rinsed and drained
Optional: Sour cream and jalapeno slices

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink, 5-7 minutes; crumble beef. Drain and set aside. , In the same pot, heat oil; saute onions until tender. Add garlic; cook 1 minute longer. Stir in the green pepper, salt, chili powder, bouillon, cayenne, cinnamon, cumin and oregano. Cook for 2 minutes, stirring until combined. , Add tomatoes and browned beef. Stir in water. Bring to a boil. Reduce heat; cover and simmer for about 1 hour. Add beans and heat through. If desired top with sour cream and jalapeno.

This chili recipe is many years in the making and I have won several awards with it. I think you'll be pleased with it. You can alter it to your own spice levels to achieve your perfect chili. Garnish with shredded mozzarella cheese, and use corn chips for dipping.

4 tablespoons vegetable oil
1 green bell pepper, chopped
1 yellow onion, chopped
2 ½ pounds lean ground beef
2 beef bouillon cubes
⅔ cup red wine
2 (16 ounce) cans whole peeled tomatoes, chopped, juice reserved
garlic cloves, crushed
1 (12 ounce) can tomato paste
1 ½ teaspoons paprika
2 ½ teaspoons chili powder
1 teaspoon cayenne pepper
2 ½ teaspoons dried basil
½ teaspoon dried oregano
2 tablespoons dried parsley
½ teaspoon black pepper
1 teaspoon salt
12 drops hot pepper sauce (e.g. Tabasco™)
1 (15 ounce) can kidney beans, drained
3 tablespoons flour
3 tablespoons corn meal
½ cup water

Steps:

  • Heat oil in a large saucepan over medium heat. Cook green pepper, and onion, until softened. Add the ground beef and cook until browned. Crumble over bouillon cubes, and stir in wine; continue to cook for a few minutes. Stir in chopped tomatoes, garlic, and tomato paste. Season with paprika, chili powder, cayenne pepper, basil, oregano, and parsley. Stir in salt and pepper.
  • Bring to a boil over high heat. Reduce heat to medium low. Cover, and simmer for 90 minutes, stirring occasionally.
  • Stir in kidney beans, and hot pepper sauce. You can add the reserved tomato juice if more liquid is needed. Continue to simmer for an additional 30 minutes.
  • In a small bowl, whisk together the flour, corn meal, and water until smooth. Stir into chili, and cook for a further 10 minutes, or until chili has thickened up.

This great chilli recipe has to be one of the best dishes to serve to friends for a casual get-together. An easy sharing favourite that uses up storecupboard ingredients.

1 large onion
1 red pepper
2 garlic cloves
1 tbsp oil
1 heaped tsp hot chilli powder (or 1 level tbsp if you only have mild)
1 tsp paprika
1 tsp ground cumin
500g lean minced beef
1 beef stock cube
400g can chopped tomatoes
½ tsp dried marjoram
1 tsp sugar (or add a thumbnail-sized piece of dark chocolate along with the beans instead, see tip)
2 tbsp tomato purée
410g can red kidney beans
plain boiled long grain rice , to serve
soured cream , to serve

Steps:

  • Prepare your vegetables. Chop 1 large onion into small dice, about 5mm square. The easiest way to do this is to cut the onion in half from root to tip, peel it and slice each half into thick matchsticks lengthways, not quite cutting all the way to the root end so they are still held together. Slice across the matchsticks into neat dice.
  • Cut 1 red pepper in half lengthways, remove stalk and wash the seeds away, then chop. Peel and finely chop 2 garlic cloves.
  • Start cooking. Put your pan on the hob over a medium heat. Add 1 tbsp oil and leave it for 1-2 minutes until hot (a little longer for an electric hob).
  • Add the onion and cook, stirring fairly frequently, for about 5 minutes, or until the onion is soft, squidgy and slightly translucent.
  • Tip in the garlic, red pepper, 1 heaped tsp hot chilli powder or 1 level tbsp mild chilli powder, 1 tsp paprika and 1 tsp ground cumin.
  • Give it a good stir, then leave it to cook for another 5 minutes, stirring occasionally.
  • Brown 500g lean minced beef. Turn the heat up a bit, add the meat to the pan and break it up with your spoon or spatula. The mix should sizzle a bit when you add the mince.
  • Keep stirring and prodding for at least 5 minutes, until all the mince is in uniform, mince-sized lumps and there are no more pink bits. Make sure you keep the heat hot enough for the meat to fry and become brown, rather than just stew.
  • Make the sauce. Crumble 1 beef stock cube into 300ml hot water. Pour this into the pan with the mince mixture.
  • Add a 400g can of chopped tomatoes. Tip in ½ tsp dried marjoram, 1 tsp sugar and add a good shake of salt and pepper. Squirt in about 2 tbsp tomato purée and stir the sauce well.
  • Simmer it gently. Bring the whole thing to the boil, give it a good stir and put a lid on the pan. Turn down the heat until it is gently bubbling and leave it for 20 minutes.
  • Check on the pan occasionally to stir it and make sure the sauce doesn't catch on the bottom of the pan or isn't drying out. If it is, add a couple of tablespoons of water and make sure that the heat really is low enough. After simmering gently, the saucy mince mixture should look thick, moist and juicy.
  • Drain and rinse a 410g can of red kidney beans in a sieve and stir them into the chilli pot. Bring to the boil again, and gently bubble without the lid for another 10 minutes, adding a little more water if it looks too dry.
  • Taste a bit of the chilli and season. It will probably take a lot more seasoning than you think.
  • Now replace the lid, turn off the heat and leave your chilli to stand for 10 minutes before serving. This is really important as it allows the flavours to mingle.
  • Serve with soured cream and plain boiled long grain rice.

This is a classic recipe from Robb Walsh, a Texas food historian and a restaurateur: no beans. In the Texas spirit, it does, however, call for three pounds of meat - boneless chuck, buffalo or venison. There is also some bacon for good measure. This is a hearty meal, great for a cold day when the best thing to do is to stay in and watch that other Texas religion, football.

3 medium dried ancho chiles, stems and seeds removed, spread flat
1/2 teaspoon cumin seeds
1/2 teaspoon dried Mexican oregano
1/4 teaspoon garlic powder
2 tablespoons cumin seeds
8 ounces bacon
3 pounds boneless beef chuck, buffalo or venison, cut into 1/4-inch cubes
1 pound (2 medium) white onions, chopped
2 teaspoons paprika
1 teaspoon dried Mexican oregano
1 teaspoon ground black pepper
1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
4 large garlic cloves, minced
1 3/4 cups beef broth
1 28-ounce can puréed tomatoes
2 ancho chiles, stems and seeds removed

Steps:

  • For the chile powder: Place the chiles flat in a cast-iron skillet over medium heat and cook, turning as needed, until lightly toasted. Transfer to a plate to cool. Put the cumin seeds in the hot pan and stir until fragrant. Transfer to a bowl to cool.
  • Using scissors, cut the chiles into small strips. Using a spice grinder or a clean coffee grinder, grind in batches into a powder. Pour into a bowl. Grind the cumin seeds into a powder and add to the bowl. Add the oregano and garlic powder. If the mixture is still coarse, grind again until fine. Reserve 3 1/2 tablespoons for the chili; save the rest in a jar.
  • For the chili: In a Dutch oven over medium heat, stir the cumin seeds until fragrant, about 1 minute. Pour onto a work surface and using a small, heavy skillet, crush them coarsely. Set aside.
  • Return the pot to medium-high heat, add the bacon and fry until crisp, 5 to 8 minutes. Transfer to paper towels to drain.
  • Increase the heat to high. Working in small batches, add the beef cubes to the pot and cook, stirring, until well browned on all sides. Using a slotted spoon, transfer the beef to a bowl.
  • Reduce the heat to medium, add the onions to the remaining bacon drippings and sauté until lightly browned, about 8 minutes.
  • Add the crushed cumin, reserved chili powder, paprika, oregano, black pepper, thyme, salt and garlic and cook, stirring often, for 1 minute. Crumble in the bacon and add the broth, tomatoes, 1 cup water, anchos and the browned beef. Increase the heat to high and bring to a boil, then decrease the heat to low, cover partly and simmer for 2 hours, until the meat is very tender. Add water as needed to maintain a good chili consistency.
  • Remove the anchos, purée them in a food processor or blender and return the purée to the pot. Stir well, simmer for a few minutes to blend the flavors and serve.
