GRANDMA'S FRESH PEACH PIE
As a child I loved Grandmas pies I always beleive the crust helped add flavor to any pie and Grandma made the best crust ever. If there were left over dough she would roll it out put cinnamon and sugar on it and bake it till it was light brown what a treat.

- 1. In a bowl mix sugar,salt,tapioca,lemon juice,almond extract and peaches.Mix well pour into unbaked pie shell.
- 2. Dot with butter, put top crust on. Flute edges, spinkle with alittle sugar, cut steam vents.

My mom and I would often make this yummy and easy peach crisp using her home-canned peaches when I was little.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Arrange peaches evenly in an 8x8-inch baking dish.
- Mix flour, brown sugar, butter, cinnamon, and salt in a bowl using a pastry cutter until evenly crumbled. Fold oats into flour mixture; sprinkle and press topping into peaches.
- Bake in the preheated oven until topping is lightly browned, about 30 minutes.

GRANDMA 'DREA'S PEACH CRISP
Once again I find myself in the sharing mood so I present to you Grandma 'Drea's recipe for crisp. I have always enjoyed my mothers crisps and have never been able to get the topping down til I finally asked for the recipe. She used this same basic recipe no matter what the fruit and my first one was half fresh peaches and half fresh nectarines and it was perfect! I hope you all enjoy it over the years as I grew up doing so!!

Steps:
- Preheat oven @ 375`.
- Mix all filling ingredients til fruit is well coated
- Pour into a sprayed/greased 13X9 baking dish.
- Cut margarine or butter into the rest of the dry ingredients then mix til nice and crumbly.
- Spread LOOSELY over the fruit mix.
- Bake in a preheated oven @ 375` for 40-50 minutes.
- If the filling is bubbling and the topping is golden it's done baking.
- Cool for at least an hour on a wire rack to allow the crisp to "set".

PEACH CRISP III
Very easy dessert with wholesome granola and oats for the topping. Not too sweet for those who prefer natural peach flavors. Good peaches make the difference, but you can use canned. Serve warm with fresh whipped cream.

- Make the peach filling: In a large bowl, combine the peaches, lemon juice, granulated sugar, cornstarch, vanilla, and salt. Mix well to coat the peaches evenly.
- Make the streusel topping: In a medium bowl, mix together the brown sugar, flour, oats, pecans, cinnamon, nutmeg and salt, using your fingers to rub out any lumps of brown sugar. Add the soft butter and mix with a spoon until the mixture is crumbly (go ahead and use your hands if it's easier).
- Transfer the peaches to the prepared baking dish and press into an even layer. Sprinkle the streusel evenly over top. Bake the crisp for 40 to 45 minutes, until the topping is golden brown and the filling is bubbly. Remove from the oven, and cool for at least 20 minutes before serving.
