Grandmother's Polish Cabbage and Noodles image

This is a Polish recipe that my grandmother made, and it is easy and delicious. Add more butter if needed. Use ham or kielbasa.

¼ cup butter
1 head cabbage, cored and chopped
1 large onion, diced
1 (12 ounce) package farfalle (bow tie) pasta
2 tablespoons water
1 ½ cups cooked ham, cut into bite-size pieces
2 pinches white sugar, or to taste

Steps:

  • Melt butter in a large skillet over medium-low heat; cook and stir cabbage and onion until very tender, about 30 minutes.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in bow tie pasta and return to a boil. Cook pasta until tender but still slightly firm, about 12 minutes. Drain well and set aside.
  • Stir water and cooked ham into cabbage mixture; heat through. Thoroughly mix in sugar.
  • Gently stir bow tie pasta into the ham and cabbage and heat through.

This simple recipe came from the Polish side of my family. We simply called it 'cottage cheese and noodles' or 'lazy man pierogies.' It's a great comfort food and can be made with any kind of noodle. It could be a side dish, but we always enjoyed it as a meal.

½ cup butter
1 small onion, diced
1 (16 ounce) package egg noodles
1 (16 ounce) package cottage cheese
½ cup sour cream
½ teaspoon sea salt
¼ teaspoon ground black pepper

Steps:

  • Melt butter in a saucepan over medium heat. Cook and stir onion in melted butter until softened, 7 to 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and return to the pot.
  • Stir butter and onion mixture, cottage cheese, sour cream, sea salt, and black pepper into the noodles. Place the pot over medium heat; cook and stir until heated through and warm, 5 to 8 minutes.

Growing up in South Bend, Indiana, Polish dinner buffets are extremely common at weddings and funerals. Polish noodles are a staple at these events and served alongside Polish sausage, green beans, mashed potatoes and chicken gravy, and fried chicken. While at a Polish meat market, an elderly Polish lady passed this recipe on to me upon request.

1 (49.5 fluid ounce) can chicken broth
½ cup water, or as desired
1 tablespoon chicken soup base, or more to taste
1 (16 ounce) package kluski noodles

Steps:

  • Combine chicken broth, water, and chicken base in a 6-quart saucepan and bring to a boil. Add kluski noodles, reduce heat, and simmer until liquid is completely absorbed, 30 to 40 minutes.

GRANDMA'S POLISH "HALUSKI"

This is an Old World thrift comfort food. We used to get home-made Kielbasa sausage when I was young from the butcher at Farmers Market. This is filling and children usually love it. It's what I call a "More" dish. There are many versions of this and I came across a many-ingredient one concocted by Guy Fieri of Diners, Drive-Ins...

1 large head of green cabbage
1 small yellow onion
1/2 c butter
1 lb box wide egg noodles
4 oz bacon
1/4 c sour cream (optional)
1/2 lb kielbasa sausage, quartered then chopped
salt & fresh cracked black pepper

Steps:

  • 1. Chop onion and cabbage coarsely. In a large skillet fry the bacon fairly crisp and discard most of the grease, add the butter and slowly make it brown. THIS is an important part. Cook the onion and cabbage over medium heat in the bacon/butter until it's soft, stirring as necessary to prevent burning. This will take quite a while and reduce by about 1/2. Cook the Kielbasa together with this.
  • 2. While the above is cooking, boil the noodles to the instructions, drain well and when the cabbage mix is ready, mix it all together. You can now add the optional sour cream if you like.
  • 3. I've added about a cup of well rinsed and drained Sauerkraut at times and liked that as well. Optional.

3 c flour
6 eggs
1/2 tsp salt

Steps:

  • 1. In a big mixing bowl, mix together all ingredients with your hands.
  • 2. Mix until hard (yet pliable) dough forms. If gets really wet, add little bits of flour to keep it workable. (10-15 minutes). Dough will not be very smooth at this point.... work it out until it is smooth.
  • 3. Separate dough into two round balls. Turn out onto floured surface and let them rest for 5 minutes.
  • 4. Working with one of the dough balls, roll it out on a floured surface (don't forget to flour your rolling pin). Roll it until thin but firm enough for you to pick up the whole sheet (roll for about 15 minutes until about 1/8 in. thick).
  • 5. Set first sheet aside and roll out the second dough ball.
  • 6. Set the sheets somewhere so they can "dry". You don't need to hang them like you sometimes see in pictures or movies. You can leave one on the rolling board and one on the table or clean countertop... Let them rest and dry for about 15 minutes.
  • 7. Time to cut the noodles! Cut dough into strips about 3-4 in. wide. Then, stack those strips, and working from the shorter end, and using a SHARP knife, cut your noodles into small strips.
  • 8. Put cut noodles into lightly-floured bowl. Get your water boiling. When ready, boil noodles until they rise to the top. (This will be quicker than when you boil the packaged noodles from a box).
  • 9. Enjoy fresh noodles with anything... here we gobbled them up with a tiny bit of butter, tiny bit of sugar, fresh crumbled farm cheese and berry jam...
  • 10. ... and with orange marmalade...!
