GRAND MARNIER SEAFOOD CASSEROLE
A wonderful seafood casserole, well worth the little bit of effort to make a white sauce. A great Lenten dish, and suitable for company. Modified from the Houston Livestock Show & Rodeo 50th Anniv. cookbook. Serve with a salad and hot French bread. Can be frozen.

Steps:
- WHITE SAUCE: Make white sauce by melting butter over low heat in sauce pan or skillet.
- Add and blend the flour over low heat 3-5 minutes.
- Slowly stir in milk, cooking till thickened and smooth, about 20 minutes.
- Add worcestershire sauce.
- Set aside.
- CASSEROLE: Preheat oven to 350.
- Melt butter in your largest skillet and saute the mushrooms, shallots, and onion tops lightly.
- Add the seafood, and sprinkle the lemon juice over it.
- Add seasonings and Grand Marnier.
- Simmer about 10 minutes.
- Add white sauce and combine.
- Layer half the rice in a 13x9 glass casserole dish.
- Add half the seafood mixture on top of the rice.
- Repeat.
- Top with cheese, and bake 30 minutes or until bubbly.

GRAND MARNIER FRENCH TOAST
I found this recipe in Epicurious Magazine. Be sure to serve with orange slices and a side of bacon or fried ham to complete your meal. This recipe can be prepared the night before to make your morning preparation a little easier.

Steps:
- Whisk first 6 ingredients to blend in medium bowl.
- Dip each bread slice into egg mixture and arrange in 13x9x2-inch glass baking dish.
- Pour remaining egg mixture evenly over bread.
- Let stand until egg mixture is absorbed, at least 20 minutes.
- (Can be prepared 1 day ahead. Cover and refrigerate.).
- Place baking sheet in oven and preheat to 350°F.
- Melt 2 tablespoons butter in heavy large skillet over medium heat.
- Add 4 bread slices to skillet and sauté until cooked through and brown, about 3 minutes per side.
- Place on baking sheet in oven to keep warm. Repeat cooking with remaining 2 tablespoons butter and 4 bread slices.
- Transfer French toast to 4 plates.
- Sift powdered sugar over.
- Serve with maple syrup.
GRAND MARNIER SOUFFLE
If you've never made a souffle, don't be afraid to try. It really is a grand finale to a special dinner.

- Brush a 5-cup souffle dish with melted butter; dust with brown sugar. Refrigerate until ready to use.
- In a medium saucepan, bring ¾ cup of the milk and the vanilla to the boil over medium heat. Remove and set aside.
- In a small bowl, blend the cornstarch and the remaining ¼ cup milk until smooth. Add ¼ cup of the sugar, 2 of the yolks and salt and stir until smooth. Gradually whisk this mixture into the warm milk.
- Cook over medium-low heat, whisking constantly, until thick, 3-4 minutes. Remove from heat and let cool, about 10 minutes. Beat in remaining 4 yolks, one at a time. Sift flour over mixture in two batches, mixing well.
- Cook over medium-low heat, stirring constantly, until smooth. Remove from heat and stir in liqueur and zest. Scrape custard into a bowl and set aside to cool.
- Preheat oven to 400 degrees F.
- In a large bowl, beat whites until soft peaks form. Slowly add remaining ¼ cup sugar and beat until firm peaks form. Fold whites into cooled custard.
- Transfer to soufflé dish and bake for 20 minutes, until puffed and browned on top. Dust top with icing sugar and serve immediately (a soufflé waits for no one!).

GRAND MARNIER SAUCE
This is a delicious sauce served over grilled or baked shrimp or scallops. Do not drown the seafood in this sauce. Just drizzle it. We love it.

Steps:
- Slice butter into 1/4-inch slices.
- In a small saucepan, heat orange juice, sugar and orange rind, on low temperature stirring often for 5 minutes.
- Increase heat and bring to boil.
- The mixture will thicken and become syrupy.
- Whisk the mixture and add the butter, piece by piece.
- When thoroughly blended, remove from heat and stir in Grand Marnier. Serve immediately.

HOMEMADE GRAND MARNIER
From Classic Liqueurs, by Cheryl Long and Heather Kibbey: Grand Orange-Cognac Liqueur. I modified it to make it a little more chef friendly.

Steps:
- Place zest and sugar in a small bowl. Mash together with the back of a wooden spoon or a muddle. Continue until sugar is absorbed into zest.
- Place in a container with a tight seal, preferably glass. Add cognac, stir and seal.
- Allow to age in a cool, dark place 2 to 3 months. Shake monthly.
- After initial aging, strain and filter. Stir with a wooden spoon to combine. Cap and age 3 months more before serving.
- Note: Seville oranges produce the authentic taste but any type of orange peel/zest may be used with good results.
