1 cup sugar
1/2 cup butter
3 eggs
2 cups finely ground graham crackers (about 28 squares)
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
1/2 cup brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
2 tablespoons butter
1/2 cup walnuts, chopped

Steps:

  • in a large mixing bowl cream granulated sugar with 1/2 c butter, mix in eggs 1 at a time mixing well after each beat for about 5 mins by hand (2 mins on high with electric mixer).
  • mix together crumbs, baking powder and salt then add to the creamed mixture alternating with milk; set aside.
  • combine brown sugar, flour and cinnamoncut in 2 tbl butter till crumbly, stir in nuts.
  • sprinkle 1/2 crumbly mixture in to an 8 by 1 1/2" microwave safe dish then 1/2 of batter and repeat.
  • microwave 10 mins ( if your microwave dosn,t have a turn table you will need to turn the dish 1/4 of the way every 2 mins).
  • the surface will appear moist let it cool in the dish.
  • to serve invert it on a plate cut in to peices and top with ice cream.

A very moist, delicious cake. My Gram gave me this recipe. I think of her every time I make it. Enjoy!

2 c flour
1 c graham cracker crumbs
1 c brown sugar
1/2 c sugar
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1 c butter, softened
1 c orange juice
3 eggs
1 c chopped walnuts
FROSTING
1 (8 ounce) package cream cheese, softened
1/4 c caramel ice cream topping
1/4 c butter, softened
3 - 1/2 c confectioners' sugar

Steps:

  • 1. Preheat oven to 350 degrees F. Spray a 9x13 pan with a nonstick baking spray; set aside.
  • 2. In large mixing bowl, place all ingredients except for nuts, cream cheese, ice cream topping, 1/4 cup butter, and powdered sugar. Mix until combined, then beat 2 minutes on medium speed. Stir in chopped walnuts and pour into prepared pan.
  • 3. Bake for 25-35 minutes until cake is dark golden brown and set. Cool completely on wire rack.
  • 4. Frosting: When cake is cool, combine cream cheese with caramel ice cream topping and butter; beat well. Add 1-1/2 cups powdered sugar. Beat well and add remaining powdered sugar until frosting is soft and spoonable. Frost cooled cake; store in refrigerator.
  • 5. This cake is wonderful without the frosting, served with a dollop of whipped cream.

2 cups graham cracker crumbs
¾ cup ground pecans
½ cup cake flour
2 teaspoons baking powder
¼ teaspoon salt
1 cup unsalted butter, softened
1 cup packed light brown sugar
3 egg yolks, room temperature
2 teaspoons vanilla extract
1 cup milk, lukewarm
3 egg whites, room temperature
¼ cup white sugar
2 tablespoons white sugar
1 ½ cups unsalted butter, softened
½ cup packed dark brown sugar
½ cup heavy whipping cream
¾ cup confectioners' sugar
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and line with parchment two 9 inch round pans.
  • Combine the crumbs, 1/2 cup pecans, flour, baking powder, and salt.
  • In a large bowl, cream the butter and the light brown sugar until fluffy. Slowly beat in the egg yolks, one at a time. Stir in the vanilla. Alternately add the milk and the crumb mixture while beating on low.
  • Beat the egg whites in a bowl until foamy. Add the sugar slowly, and beat to soft peaks. Fold into the crumb batter, and pour into the pans.
  • Bake for 25 minutes, or until a tester comes out clean. Cool in the pans on a rack about 10 minutes, then invert and cool completely.
  • To Make Frosting: In a saucepan over medium heat, melt the 2 tablespoon sugar until it turns golden. Remove from heat, and add 4 tablespoons of the butter; swirl. Whisk in the dark brown sugar, and place back on the heat. Bring to a boil, stirring all the time. Add the cream, and bring back to a boil. Boil 1 minute, and remove caramel from heat.
  • Place the confectioners' sugar in a large bowl, and mixing on medium speed, slowly drizzle in the caramel. Beat until the bottom of the bowl is just barely warm, about 5 minutes. Add the remaining 1 1/4 cups butter, 1 tablespoon at a time. Beat until smooth, and chill frosting until ready to ice the cake. Frost the cake, and press the pecans into the sides.

1 package white cake mix (regular size)
2 tablespoons sugar
1-1/2 cups water
2 large egg whites

1 pint heavy whipping cream or 1 carton (12 ounces) frozen whipped topping, thawed

Steps:

  • Set aside 2 tablespoons graham cracker crumbs. In a large bowl, beat the remaining crumbs, cake mix, sugar, water, egg whites and oil for 2 minutes. , Pour into two greased and floured 9-in. layer pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let stand a few minutes before removing from pans to wire racks to cool completely. , Cut each cake horizontally into two layers. Place bottom layer on a serving plate. Spread whipped cream between layers and frost entire cake. Sprinkle reserved graham cracker crumbs on top. Refrigerate until serving time.

I had some freshly picked pears and graham flour to use up and I combined them into this not-too-sweet, whole grain cake. The graham flour adds really nice nutty, honeyed notes, but if you can't find it, you can use whole wheat flour.

3 ½ tablespoons unsalted butter, cut into pieces
¼ cup dark brown sugar
3 pears - peeled, cored, and sliced
1 ½ cups graham flour
1 cup all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon kosher salt
½ teaspoon ground cinnamon
½ cup unsalted butter, at room temperature
½ cup packed dark brown sugar
¼ cup grapeseed oil
2 tablespoons honey
3 large eggs
1 teaspoon vanilla extract
1 cup whole milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch pan with 2-inch sides and line the bottom with a round of parchment paper.
  • Add butter pieces to the pan. Place in the preheating oven until melted. Sprinkle brown sugar on top. Arrange sliced pears in a circular pattern over the butter and brown sugar. Set aside.
  • Whisk graham flour, all-purpose flour, baking powder, baking soda, ginger, salt, and cinnamon together in a medium bowl.
  • Combine butter, brown sugar, oil, and honey in a stand mixer fitted with the paddle attachment. Beat on medium speed for 2 minutes, scraping the sides of the bowl as necessary. Add eggs and vanilla extract; beat for 1 minute. Add flour mixture in 3 additions, alternating with milk; beat briefly after each addition.
  • Pour batter carefully over the pears. Smooth the top.
  • Bake in the preheated oven until golden brown and a toothpick inserted into the center comes out clean, about 25 minutes. Cool cake for 10 minutes. Invert onto a wire rack and peel off parchment paper. Allow to cool completely.

  • Turn off cooker. If possible remove crockery liner from cooker; cool, covered, up to 1 hour on a wire rack before serving.
