Steps:
- Macerate peaches: In a large bowl, combine peaches, brown sugar, sugar and cinnamon. Toss until the peaches are evenly coated in the sugar. Refrigerate for 30 minutes.
- Make whipped cream: In a large bowl, combine heavy cream, powdered sugar and vanilla. Beat mixture with a hand mixer until stiff peaks form.
- Assemble lasagna. In a 8" square baking pan, place graham crackers in an even layer. Spread an even layer of whipped cream over the graham crackers, top with macerated peaches then sprinkle some almonds on top. Repeat three more times. Chill in refrigerated until the graham crackers have softened, about 2 hours.
- Serve cold.
CHOCOLATE LASAGNA
I got this recipe from a family member and it has been a favorite since. It is so simple to make, but is definitely a crowd-pleaser! With the majority of the ingredients being fat-free, it is one that you make and not feel guilty about serving. My kids ask me to make it every time we go to any type of gathering, and when I bring it everyone says they love it.

- Whisk white chocolate pudding and skim milk together in a bowl until thickened and smooth; fold in 1 tub whipped topping.
- Line a 9x13-inch casserole dish with 1 layer of graham crackers. Spread 1/2 the pudding mixture over graham cracker layer. Repeat layering with graham crackers and remaining pudding mixture, ending with a layer of graham crackers. Spread 1 tub whipped topping over top graham cracker layer; sprinkle with candy bar pieces. Chill in refrigerator until set, 2 to 4 hours.

- Line the bottom of a 9 x 13" baking dish with whole graham crackers.
- Generously spread with some of the chocolate pudding.
- Place another layer of graham crackers on top of the chocolate pudding.
- Spread with some of the vanilla pudding.
- Continue alternating layers ending with pudding on top.
- Refrigerate.
- Graham crackers will soften as it sets.
- Garnish each serving with a dollop of whipped cream if desired.

This recipe came from the back of a saltine cracker box. It's an absolutely wonderful blend of flavors and makes a nutritious and satisfying side dish. My vegetable shy family ate it up. Nice as leftovers too!

- Cook and stir red pepper, onion, zucchini and italian seasoning in butter or margarine in large skillet until tender.
- Layer half each of the crackers, vegetable mixture and cheese in lightly greased 8x8x2-inch baking pan.
- Repeat layers, ending with cheese.
- Beat eggs and milk in bowl; pour evenly over cheese layer.
- Bake at 350 degrees for 30-35 minutes or until knife inserted in center comes out clean.

- Whisk together sugar, cornstarch and salt in a large saucepan. Slowly whisk in milk, then heat to a boil, whisking, over medium heat. Lower heat and continue to whisk till mixture thickens and large bubbles appear. Remove from heat and add butter and vanilla. Put custard into a large bowl, cover with plastic wrap and cool in fridge for about 2 hours.
- After about 2 hours, place one layer of chocolate graham crackers along bottom of your Lagostina Lasagnera (or a 9 x 13-inch baking dish). Use smaller pieces to fill open spaces.
- Whip 2 cups of cream with Whip-It until stiff peaks form. Fold about 1/3 of whipped cream into cooled custard. When well combined, fold the rest of the whipped cream into custard.
- Top graham crackers with half of the custard-whipped cream mixture. Layer with more graham crackers, then top with the rest of the filling. Place a 3rd layer of graham crackers over filling and refrigerate while making the chocolate topping.
