Quick and easy home fries made from scratch. I'm using boiled potatoes, but you could use raw potatoes if you allow a bit more cooking time. Perfect side for breakfast.

3-4 small Potatoes, boiled
1 small Onion
1/2 teaspoon Garlic Powder
1/4 teaspoon Black Pepper
1/4 teaspoon Salt
1/4 cup Ketchup

Steps:

  • Cut the boiled and cooled potatoes into cubes.
  • Slice the onion.
  • Place skillet over Medium heat and let warm up.
  • Add bacon grease or oil.
  • Add the onions.
  • Add the cubed potatoes.
  • Add garlic powder.
  • Add black pepper.
  • Add salt.
  • Stir together well.
  • Stir and cook until onions are translucent and potatoes are browned.
  • Add the ketchup.
  • Stir and let cook and brown about two more minutes.
  • Serve warm
  • Enjoy!

LOADED HOME FRIES

Number Of Ingredients 10

4 medium yellow onions, thinly sliced
Olive oil
Kosher salt and freshly ground black pepper
12 to 14 medium red bliss potatoes, scrubbed and dried
8 large cloves garlic, halved
1 large red bell pepper, large dice
1/4 teaspoon crushed red pepper flakes
1/2 cup finely grated Parmesan
1 tablespoon red wine vinegar
1 1/2 cups shredded Cheddar

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook the onions, potatoes and garlic: In a large bowl, toss the onions in 2 tablespoons oil, season generously with salt and pepper and spread on one side of a sheet pan. In the same bowl, toss the potatoes in 1 tablespoon oil, season generously with salt and pepper and spread on the other side of the sheet pan. Toss the garlic in the same bowl with a little oil, season with salt and pepper and add to the sheet pan. Bake in the center of the oven until completely tender when pierced with the tip of a knife, about 40 minutes. Set aside to let cool.
  • Cook the peppers: In a large cast-iron skillet over medium heat, heat 3 tablespoons oil until hot. Add the peppers with a generous pinch of salt and cook over medium heat until tender and slightly browned, 5 to 8 minutes.
  • Cook the home fries: Add the onions and garlic to the peppers and stir to combine. "Crush" and break the potatoes into pieces with your hands or the bottom of a pan and add them and any juices from the pan to the peppers and onions. Season with salt and red pepper flakes. Cook the potato mixture over medium-high heat until the bottom is browned, 2 to 3 minutes, then flip and cook for another 2 to 3 minutes.
  • Stir in the Parmesan and vinegar. Top with the Cheddar. Place the skillet in the oven and bake until the cheese is browned, 8 to 10 minutes. Season with salt just before serving.

- 6 large potatoes boiled
- 1 small- med oion cut juliane style. 1 red bell pepper cut juliane style.
- 1 green bell pepper cut julianne style. 1 small jar of seet pimentoes.
- paprika.
- emerrils essence. or lowry seasoning or big boy seasoning.[u used to be able to buy thier big boy seasoning at the register when u checked out

Steps:

  • cut boiled potatoes into 1-1 1/2 inch cubes. [hint do ur veg prep the nite before faster the next da and put in air tight container] don't cut real small they will perish fast if u do and don't over cook.
  • now place ur potatoes in large mixing bowl and cover leberaaly with spices then put on the griddle [or in foil pan to place in oven. either way is good]
  • throw all prepped veggies ontop the potatoes use a little oil u want to preserve the looks of ur veggies. with a small pancake flipper stir the viggies and potatoes together really well
  • cook til prepped veggies r tender[ or u may place in oven for about 30-40 mins covered with foil this helps to keep it from drying out. if u do the oven pre-heat to 350]
  • if u wish and like it spicy that early in the am u may use a little chilli powder and a little garlic powser and a little cajun spice. i used to be able to handle these spices that early in the am not any more. do these spices ""to taste""

GARLIC HOME FRIES

2 pounds large red bliss or Yukon gold potatoes, peeled and cut into 1/2-inch
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
1/2 onion, chopped
1/2 teaspoon paprika
1 clove garlic
1/4 cup fresh parsley
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the potatoes, cover and cook over medium-high heat until just tender, about 6 minutes; drain.
  • Heat the butter and olive oil in a large cast-iron skillet over medium heat; add the potatoes and spread into a single layer. Cook, undisturbed, until they start browning on the bottom, about 5 minutes. Add the onion and sprinkle with the paprika; flip the potatoes and cook 5 more minutes. Stir once, then continue cooking until the potatoes are mostly golden brown, about 5 more minutes.
  • Meanwhile, roughly chop the garlic, pile the parsley on top and sprinkle with 1 teaspoon salt. Chop and mash together until finely minced. When the potatoes are done, add the garlic mixture to the skillet and toss to coat; cook until heated through, about 2 minutes. Season with salt and pepper.

SPICY CLASSIC HOME FRIES

2 1/2 pounds Yukon Gold potatoes, cut into 1/2 inch dice
Kosher salt
3 tablespoons canola oil
1 medium Spanish onion, diced
3 tablespoons unsalted butter
2 tablespoons ancho chile powder
Freshly ground black pepper
1/4 cup thinly sliced green onion
2 tablespoons finely chopped fresh cilantro

Steps:

  • Bring a large pot of water to a boil, add 2 tablespoons of salt and the potatoes, bring to a boil and cook, until just tender, about 8 minutes. Drain well in a colander.
  • Heat 1 tablespoon of oil in a large cast iron skillet over medium heat until it begins to shimmer, add the onion and cook, stirring a few times, until soft and lightly golden brown, about 5 minutes. Remove the onions to a plate.
  • Add the remaining oil and the butter to the pan, increase the heat to high and heat until the butter has melted and the oil is sizzling. Add the potatoes and chile powder and season with salt and pepper and immediately press down into an even layer on the bottom on the pan, using a wide metal spatula. Cook, pressing down occasionally and not turning, until the potatoes on the bottom are golden brown and crusty, about 5 minutes. Turn the potatoes over, press down again and cook until the potatoes on the bottom are golden brown, about 5 minutes longer. Stir in the onions, season with more salt and pepper, transfer to a shallow bowl or a platter and garnish with green onion and cilantro.

3 large russet potatoes, peeled and quartered
2 tablespoons olive oil
1 tablespoon butter
Salt and freshly ground black pepper to taste
¼ teaspoon paprika
cayenne pepper to taste
1 pinch garlic powder
1 pinch onion powder
1 tablespoon Chopped fresh chives

Steps:

  • Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
  • Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.
  • As potatoes brown, toss them and keep turning them every few minutes until they are crusty and crispy-edged and a rich reddish-brown color, 10 to 12 minutes. If potatoes seem to be cooking too quickly, reduce heat to medium. Serve topped with chopped chives.

The great thing about this recipe is that it can be cooked in just one skillet - and it eliminates the time-consuming task of blanching your potatoes first. Water, oil and salt are combined in one pan. Once the potatoes enter the skillet, the lid is added and the potatoes steam, cooking evenly and absorbing the flavors of the salt and oil. Once the lid comes off, the water evaporates yet the oil remains, so the potatoes pan-fry until crispy. The results? Crunchy home fries with pillowy centers. If cooking for a crowd, double or triple the recipe, but do cook in batches, to avoid crowding the pan.

1/3 cup vegetable oil
1/2 teaspoon kosher salt
1 medium Yukon Gold potato (about 7 ounces), cut into 1/2-inch cubes

Steps:

  • Add the oil, salt and 1/3 cup water to a medium cast-iron skillet; whisk to combine.
  • Add the potato cubes in an even layer. (It's very important to not crowd the pan.) Turn heat to medium, cover the skillet and cook the potatoes, undisturbed, for about 6 minutes.
  • Uncover, give them a toss or shake. Cook, uncovered and undisturbed, until the underside turns golden, then carefully flip. Repeat on all sides until the water evaporates and the potatoes are crispy all over and tender inside, about 9 minutes total.

These country-style home fries are a wonderful accompaniment to any breakfast, brunch or (in my family's case) breakfast for dinner. They turn out buttery and savory with a crispy brown outer coating. I like to serve these home fries when I make breakfast for dinner for my family. We enjoy them with a juicy, smokey ham steak cooked in my cast iron skillet with a side of baby peas. Yum!

2 tablespoons butter
3 large potatoes, diced, unpeeled (white or red)
1 medium onions, chopped or 1 cup chopped onion
1/2 teaspoon ground paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Place diced potatoes, onion, paprika, garlic powder, salt and black pepper in a medium mixing bowl. Toss to evenly coat the potatoes.
  • In a large, non-stick skillet over medium heat, melt butter.
  • Increase skillet heat to medium-high and add potato mixture. Toss to coat evenly with butter.
  • Cover skillet and cook for 10-12 minutes, turning and scraping the potatoes to prevent burning.
  • When potatoes are fork-tender, remove skillet cover.
  • With the back of your spatula, pat potatoes down into an even layer in skillet. Allow to fry untouched for 2 minutes. Then turn potatoes over and do the same for another 2 minutes. This will nicely brown and crisp the outside of the potatoes.
  • Serve immediately.
