Real Hungarian Goulash (No Tomato Paste Here) image

It's hard to find a real Hungarian recipe for goulash. This is the real thing. Real goulash has no tomato paste or beans. Eat with a slice of rustic bread. Dip bread in sauce and clean the plate with the bread at the end. Can be eaten with spaetzle.

2 tablespoons lard
2 large onions, finely sliced
2 pounds beef chuck, cut into 1-inch cubes
2 tablespoons Hungarian paprika
1 cup water, or as needed
salt and ground black pepper to taste

Steps:

  • Melt lard in a large pot over medium heat. Cook and stir onions in hot lard until soft and translucent, 5 to 8 minutes.
  • Stir beef and paprika into onions. Reduce heat to low and simmer for 1 hour, stirring occasionally. Add 1 cup water and simmer, adding more water if moisture gets too low, until meat falls apart and onion sauce is thick, about 1 hour more. Season with salt and pepper to taste.

3 medium onions, chopped
2 medium carrots, chopped
2 medium green peppers, chopped
3 pounds beef stew meat
3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided
2 tablespoons olive oil
1-1/2 cups reduced-sodium beef broth
1/4 cup all-purpose flour
3 tablespoons paprika
2 tablespoons tomato paste
1 teaspoon caraway seeds
1 garlic clove, minced
Dash sugar
12 cups uncooked whole wheat egg noodles
1 cup reduced-fat sour cream

Steps:

  • Place the onions, carrots and green peppers in a 5-qt. slow cooker. Sprinkle meat with 1/2 teaspoon salt and 1/2 teaspoon pepper. In a large skillet, brown meat in oil in batches. Transfer to slow cooker., Add broth to skillet, stirring to loosen browned bits from pan. Combine the flour, paprika, tomato paste, caraway seeds, garlic, sugar and remaining salt and pepper; stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour over meat. Cover and cook on low for 7-9 hours or until meat is tender., Cook noodles according to package directions. Stir sour cream into slow cooker. Drain noodles; serve with goulash.

2 tablespoons all-purpose flour
3 tablespoons olive oil (divided)
4 medium sweet onions (sliced and separated into rings)
8 ounces baby portobello mushrooms (or cremini mushrooms, brushed clean and cut in half)
1 head garlic (about 12 cloves, peeled, large cloves cut in half)
1/2 cup sweet red wine
1 3/4 cups beef broth
1 (4-ounce) jar diced roasted red peppers
1/4 cup sweet Hungarian paprika
1 cup sour cream
4 cups cooked buttered noodles
A handful of chopped fresh parsley

2 pounds lean ground beef
2 large yellow onions, chopped
3 cloves garlic, chopped
3 cups water
2 (15 ounce) cans tomato sauce
2 (14.5 ounce) cans diced tomatoes
3 tablespoons soy sauce
2 tablespoons dried Italian herb seasoning
3 bay leaves
1 tablespoon seasoned salt, or to taste
2 cups uncooked elbow macaroni

Steps:

  • Cook and stir the ground beef in a large Dutch oven over medium-high heat, breaking the meat up as it cooks, until the meat is no longer pink and has started to brown, about 10 minutes. Skim off excess fat, and stir in the onions and garlic. Cook and stir the meat mixture until the onions are translucent, about 10 more minutes.
  • Stir water, tomato sauce, diced tomatoes, soy sauce, Italian seasoning, bay leaves, and seasoned salt into the meat mixture and bring to a boil over medium heat. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally.
  • Stir macaroni into the mixture, cover, and simmer over low heat until the pasta is tender, about 25 minutes, stirring occasionally. Remove from heat, discard bay leaves, and serve.

A spicy way to dress up stew beef. My mom made this when we were kids, and we loved it. It is spicy while not mouth-burning! Can be made with cheaper cuts of beef, and comes out very tender. If it gets too thick, add a little water while it's cooking. Garnish with sour cream.

⅓ cup vegetable oil
3 onions, sliced
2 tablespoons Hungarian sweet paprika
2 teaspoons salt
½ teaspoon ground black pepper
3 pounds beef stew meat, cut into 1 1/2 inch cubes
1 (6 ounce) can tomato paste
1 ½ cups water
1 clove garlic, minced
1 teaspoon salt

Steps:

  • Heat oil in a large pot or Dutch oven over medium heat. Cook onions in oil until soft, stirring frequently. Remove onions and set aside.
  • In a medium bowl, combine paprika, 2 teaspoons salt and pepper. Coat beef cubes in spice mixture, and cook in onion pot until brown on all sides. Return the onions to the pot, and pour in tomato paste, water, garlic and the remaining 1 teaspoon salt. Reduce heat to low, cover and simmer, stirring occasionally, 1 1/2 to 2 hours, or until meat is tender.

1 1/2 lbs boneless pot roast or 1 1/2 lbs chuck beef roast, cut into 1 1/2 inch pieces
2 cups beef broth
4 slices bacon
1 1/2 cups chopped onions (about 3 medium sized.)
1 tablespoon hungarian style sweet paprika
1 1/2 teaspoons salt
1/4 teaspoon ground pepper
1/8 teaspoon marjoram
1/4 cup chopped green pepper
3/4 cup dry white wine or 3/4 cup broth
1/2 cup water
1/4 cup all-purpose flour
1 tablespoon butter
1/2 teaspoon paprika
1 tablespoon water

Steps:

  • Cook bacon slowly in Dutch oven or 3 quart sauce pot until bacon is lightly browned. Remove bacon with slotted spoon and put aside for later.
  • Add onion to bacon fat and cook over medium heat until almost tender, remove onion and add to bacon set aside.
  • Add meat to bacon fat and slowly brown on all sides. Sprinkle paprika, salt pepper and majoram over browned meat.
  • Stir in bacon onion mixture with chopped green pepper.
  • Slowly pour in broth and wine and bring to boiling. Reduce heat and simmer 2 to 2 1/2 hours.
  • Remove meat with slotted spoon
  • To thicken cooking liquid, mix flour and water and add one half of the mixture to the pot. Bring to boiling. Gradually add remaining flour water mixture to attain desired consistency. Bring to boiling after each addition. After final additon cook 3-5 minutes longer.
  • Add 1 tablespoon melted butter blended with 1/2 teaspoons paprika and 1 T. water. add to liquid in pot. Add meat back to pot or pour sauce over meat.

1 lb boneless meat, cubed
1 tablespoon paprika

Steps:

  • Fry the meat in batches till brown.
  • Remove and set aside.
  • Fry the onion.When becomes tranparent add paprika and the other spices,f using.
  • After stirring a couple of times, add the tomato paste.
  • Stir and add the meat.
  • Add the salt either now or right before it's done.
  • Simmer covered until meat is tender. The meat juices generally are enough; however, if necessary, you can add a little water or stock to keep it from burning.

2 large onions, diced
2 pounds flank steak
⅛ teaspoon caraway seed
¼ teaspoon dried marjoram
1 clove garlic, minced
5 tablespoons paprika
2 cups water
4 large potatoes, peeled and cubed
salt and pepper to taste

Steps:

  • Melt butter in a large soup pot over medium high heat. Saute onions until soft, then add beef and brown. Stir in caraway seed, marjoram, garlic and paprika. Pour water over all, lower heat to low and simmer for 2 1/2 hours.
  • Add potatoes and cook until tender, another 45 minutes to 1 hour. Season with salt and pepper to taste and serve.

1 pinch caraway seeds
1 pound onion, sliced

1 (6 ounce) can tomato paste
1 (10.5 ounce) can beef consomme
1 (10 ounce) package broad egg noodles, cooked, rinsed, drained (Kosher for Passover)

Steps:

  • Melt butter in a large pot over medium heat. Add the stew meat, caraway seeds, onion and paprika. Cook and stir until the meat is browned, and the onions are translucent. Add the garlic and lemon zest, and cook for about a minute, then stir in the tomato paste and beef consomme, adding water if necessary to cover the meat. Cover, and simmer over medium-low heat for 1 1/2 hours.
  • Just before the meat is done cooking, bring a large pot of salted water to a boil. Add egg noodles, and cook until tender, about 8 minutes. Drain and serve the goulash spooned over the egg noodles.
