BASIL BURGERS WITH SUN-DRIED TOMATO MAYONNAISE



Basil Burgers with Sun-Dried Tomato Mayonnaise image

I often end up with a bumper crop of herbs-and here's one of my favorite basil recipes. These burgers feature great Italian flavor. The gooey, cheesy centers and scrumptious topping are irresistible. -Virginia Kochis, Springfield, Virginia

1/4 cup sun-dried tomatoes (not packed in oil)
1 cup boiling water
1 cup fat-free mayonnaise
2 teaspoons Worcestershire sauce
1/4 cup fresh basil leaves, coarsely chopped
2 teaspoons Italian seasoning
2 garlic cloves, minced
1/2 teaspoon pepper
1/4 teaspoon salt
1-1/2 pounds lean ground beef (90% lean)
3/4 cup shredded part-skim mozzarella cheese
6 whole wheat hamburger buns, split
Additional fresh basil leaves, optional

Steps:

  • In a small bowl, combine tomatoes and water. Let stand for 5 minutes; drain. In a food processor, combine mayonnaise and tomatoes; cover and process until blended. Chill until serving., In a large bowl, combine the Worcestershire sauce, basil, Italian seasoning, garlic, pepper and salt. Crumble beef over mixture and mix well. Shape into 12 thin patties. Place 2 tablespoons cheese on six patties; top with remaining patties and press edges firmly to seal., On a greased grill, cook burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on buns with mayonnaise mixture and, if desired, additional basil.

1 (8 ounce) package monterey jack cheese
2 lbs ground beef
1/2 cup barbecue sauce, divided
red onion, sliced (optional)
tomatoes, sliced (optional)
1 leaf lettuce (optional)

Steps:

  • Cut cheese into 16- 18 thin slices.
  • In a bowl, combine ground beef and 1/4 C of the barbecue sauce.
  • Mix until well combined.
  • Divide the mixture into 8 or 10 equal amounts.
  • Shape into patties.
  • Place slices of cheese on the patties then place patties together so the cheese is in the center and pinch the edges shut. You should have 4 - 5 patties.
  • These burgers can be cooked on the grill, under the broiler, baked or pan-fried.
  • Once your burgers are done top with cheese.
  • Serve on toasted hamburger buns with your choice of condiments and the remaining barbecue sauce.

When my daughter was little she would always ask me to make"those big, gooey messy burgers" (most of us call them sloppy joes) however the tangy sweet flavor always gets huge reviews & recipe requests. I make on stove top then put in the crockpot and I never have any leftovers, my husband, co workers and family often request me to make these, I hope you enjoy them as much as we do.

1 lb hamburger
chopped onion (taste preference)
1 teaspoon celery salt
1 cup Heinz ketchup (No subsitutes)
2 teaspoons prepared mustard
3 tablespoons lemon juice
1/4 cup brown sugar

Steps:

  • Brown hamburger and onion. Drain well. Add other ingredients, simmer 15 minutes, put on hamburger buns and enjoy:).

  • For the buns: Preheat oven to 325ºF, lightly butter muffin cups (a mini-muffin pan with 24 [1/8-cup] cups is recommended). Whisk together all dry ingredients. Whisk egg whites into dry ingredients until combined. Add oil in a slow stream, whisking constantly. Divide batter among muffin cups. Bake until pale golden and springy to the touch, 20 to 25 minutes. Cool in pan for 5 minutes. Remove buns and cool completely on a rack.
  • For the tomato filling: Cut a shallow X in the bottom of each fresh tomato. Blanch in a saucepan of boiling water 30 seconds, then transfer to an ice bath. When cool, peel and seed tomatoes. Cut into 1/4 inch dice. Stir diced tomatoes together with sun-dried tomatoes, shallot, vinegar, and season with salt and pepper.
  • Halve each bun horizontally, then fill sandwich with 1 teaspoon tomato filling, a basil leaf, and 1 teaspoon cheese filling. Buns can be baked 1 day ahead and kept in an airtight container at room temperature. Tomato and goat-cheese fillings can be made 1 day ahead and chilled.
