DINER MEATLOAF

Steps:
- Heat the oven to 350°F. In a large bowl, break up the beef into small pieces, using a fork or spoon.
- Peel and finely chop the garlic. Peel the onion, and chop enough of the onion into small pieces to measure 3 tablespoons. Wrap remaining piece of onion, and refrigerate for another use. Add the garlic and onion to the beef.
- Tear the bread into small pieces and add to beef mixture.
- Add the milk, Worcestershire sauce, sage, salt, mustard, pepper and egg to the beef mixture. Mix with a fork, large spoon or your hands until the ingredients are well mixed.
- Place the beef mixture in an ungreased baking pan. Shape the mixture into an 8x4-inch loaf in the pan, then spread the ketchup over the top.
- Bake uncovered 50 to 60 minutes until meat and juices are no longer pink or until a meat thermometer inserted in the center of the loaf reads 160°F and center of loaf is no longer pink*. Let the loaf stand 5 minutes so it will be easier to remove from the pan. Remove loaf from pan and cut into slices.

- Preheat oven to 350 degrees F. Line a 2-quart rectangular baking dish with foil; set aside. In a large bowl, combine milk and egg. Stir in bread crumbs, green onion, Worcestershire sauce, thyme, salt, and pepper. Add ground beef; mix well. Shape meat mixture into an 8x5-inch rectangle in the prepared baking dish.
- Bake for 50 minutes. Spoon off fat. Meanwhile, in a small bowl, combine ketchup, vinegar, and garlic. Spread over top of meat loaf. Bake about 10 minutes more or until meat is done (160 degrees F).
- Let stand for 10 minutes before serving. Spoon off any fat. Cut into slices.

- First, in a large bowl combine eggs and milk then stir in breadcrumbs. Next add onion parsley, salt, sage, and 1/8 teaspoon pepper. Mix them together a few times then add in the beef and mix well. I suggest using your hands, and this is how I was taught, it mixes faster and better than using a spoon of any kind.
- Shape your meatloaf into a 'loaf' shape if not using a bread pan, though I suggest you do, or use the mini loaf pan I mentioned above. Then go ahead and bake in a 350-degree oven for 50 minutes. Then make sure to spoon off excess fat.
- Mix together the ketchup, sugar, and dry mustard, mix it well then spread over the top of the meatloaf.
- Then return to the oven for 10-15 minutes. This makes about six servings.

When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
- In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
- Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
- In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

- Preheat oven to 375 degrees.
- In a large bowl, combine beef, pork, beef broth, onion, 1-2 tablespoons Worcestershire sauce, bread crumbs, egg, garlic, olive oil, salt, pepper and oregano.
- Don't overmix, but combine it well (hands work the best).
- Transfer meat to a shallow baking pan and shape into a loaf about 5 inches wide.
- Bake for about 1 hour and 15 minutes.
- While meatloaf is baking, combine ketchup, brown sugar and 1 tablespoon Worcestershire sauce in a small saucepan.
- Bring to a boil, stirring occasionally. Pour or spoon over the meatloaf (after the 1 hour, 15 minute baking time). Bake for about 15 more minutes, until temperature reaches 160 degrees in the center of the meatloaf.
- Let meatloaf rest 5-10 minutes in baking pan, then remove to a serving platter.
- The drippings from the pan are obscene over mashed potatoes.
- I've made this with all the beef/pork combo, all beef and even buffalo and beef combined. It's always outrageous (we think). Also,it is better with the beef broth, rather than the milk.

Steps:
- Preheat oven to 375°F.
- In a large bowl, beat egg and milk with a fork until well-combined.
- (If your ground beef has been previously frozen and defrosted, use slightly less milk.).
- Tear bread into small pieces, and add to the bowl with salt, pepper, worcestershire sauce, and mustard, mix well.
- Add ground beef, onion and parsley; mix with hands until all liquid in absorbed and ingredients are well distributed. Mixture will be quite loose.
- Place meat mixture in a shallow casserole about 9 or 10 inches square and shape into a small, rectangular loaf.
- Spread ketchup over top of meat, and bake for 45 minutes.
- Remove from oven and let rest 5 minutes before slicing and serving.
