Green Beans with Warm Raisin-Caper Dressing image

This quick side is a sweet-and-sour take on warm green bean salad and highlights the bright flavor and crisp-tender texture of this popular vegetable. Serve it at the holiday table this year; it will be a refreshing contrast to mashed potatoes and roast turkey.

1 pound green beans, trimmed
1/4 cup golden raisins
1 tablespoon sherry vinegar
1 teaspoon whole-grain mustard
3 tablespoons extra-virgin olive oil
1 tablespoon capers, chopped
Kosher salt and freshly ground pepper
3 tablespoons toasted pepitas

Steps:

  • Bring a pot of generously salted water to a boil. Working in batches, cook 1 pound green beans until crisp-tender, about 5 minutes per batch. Add raisins during the last 30 seconds of cooking. Drain and transfer to a platter.
  • In a bowl, whisk together vinegar, mustard, oil, and capers. Season to taste. Toss beans and raisins with dressing and pepitas; serve.

1 cup golden raisins
4 tablespoons sherry vinegar
3 teaspoons whole-grain mustard
5 teaspoons capers, plus 1 teaspoon caper brine
1 shallot, minced
2 teaspoons fresh lemon juice
1/4 teaspoon ground cumin
1/2 cup extra-virgin olive oil

Steps:

  • In a small pot, bring raisins,sherry vinegar, and 2 tablespoons waterto a boil. Remove from heat,cover, and let steep until cool.Add mustard, capers and brine,shallot, lemon juice, and cumin.Pulse in a food processor, addingoil in a thin stream. (Adjust consistencyby adding warm water1 tablespoon at a time.)

3 ounces golden raisins
4 1/2 tablespoons verjuice, preferably sweetened
3 ounces drained capers
1/4 cup olive oil

Steps:

  • Place raisins in a small pot and add verjuice. Cook over medium heat until reduced by half. Add capers and cook 2 minutes. Pour into a blender and puree, adding olive oil in a steady stream. Pass through fine-mesh sieve. Cool to room temperature. Serve over halibut or sea bass.
