Golden Jam image

This golden jam condiment gets its name from yellow squash, lemons, and ginger that are simmered until sticky.

Yield Makes about 5 8-ounce glasses

Number Of Ingredients 5

4 pounds very young yellow squash
6 cups sugar
juice of 3 large lemons
grated rind of 3 large lemons
4 teaspoons powdered ginger

Steps:

  • Scrub the squash and cut off the ends. Grind the squash in a meat grinder, using the coarsest blade, mix with the sugar, and leave overnight. The next day, transfer the squash, sugar and accumulated juices to a large pot. Add remaining ingredients, and cook over low heat for about 1 hour, until a thermometer registers 220° or until squash is translucent and the juices thickened. Pour into hot, sterilized jelly glasses, and cover with a thin layer of melted paraffin. When the paraffin has hardened, cover the glasses and store.

900g fruit (blackberries, plums, raspberries or strawberries), prepared weight
900g golden granulated sugar
knob of butter

Steps:

  • Put the fruit into a preserving pan or large heavy-based saucepan. For blackberries, add 50ml of water and 1½ tbsp of lemon juice; for plums (halved and stoned), use 150ml of water; for strawberries, add 3 tbsp of lemon juice (no water); and for raspberries, add nothing. Bring to the boil.
  • Lower the heat. For blackberries, simmer for 15 minutes; for plums, simmer for 30-40 minutes; for raspberries, simmer for 2 minutes; for strawberries, simmer for 5 minutes. The fruit should be soft.
  • Tip in the sugar, stir over a very low heat until the sugar has completely dissolved. Raise the heat, bring to a full rolling boil, then rapidly boil blackberries for 10-12 minutes, plums for 10 minutes, raspberries for 5 minutes or strawberries for 20-25 minutes - don't stir though - until the setting point of 105C is reached.
  • Remove from the heat, skim off any excess scum, then stir a knob of butter across the surface (this helps to dissolve any remaining scum). Leave for about 15 mins so the fruit can settle. Pour into sterilised jars, label and seal.

3 pounds fresh red, black, or white currants, washed well, stems removed
3 cups sugar

Steps:

  • In a large saucepan, combine currants with 1/3 cup water. Cook over medium-high heat, stirring frequently, until fruit has broken down and released its juices, about 8 minutes. Mash the fruit mixture with a potato masher or the back of a wooden spoon. Strain through a fine sieve into a large measuring cup, pressing on the solids to extract as much juice as possible. You should have about 4 cups juice. Discard solids.
  • Place a small plate in the freezer. Return juice to clean saucepan; add sugar. Bring to a boil over medium-high heat. Reduce heat to a simmer; cook, stirring occasionally, about 20 minutes. When teaspoon of jelly placed on chilled plate ripples if pushed with your finger, it is ready.
  • Remove jelly from heat, and skim off any foam from surface. Ladle jelly into sterilized canning jars; wipe rims with a dishtowel. Seal tightly.
  • Meanwhile, bring a stockpot of water to a boil over high heat. Using tongs, carefully place filled jars in boiling water, letting them sit 10 minutes. Remove; let cool. If center of jar lids give when pushed with finger, jars have not sealed properly. Jelly in sealed jars will keep up to 1 year. After opening, jelly will keep up to 2 months in the refrigerator.

  • Wash the grapes, remove any stalks, and place in a large heavy-based pan on a low heat. Cook gently for 10 minutes.
  • Mix the caster sugar and brown sugar together, then add half to the grapes in the pan. Continue to cook, stirring, for another 10 minutes. Mash the softened grapes with a potato masher to squash them.
  • Add the remaining sugar, stir well, and bring to the boil. Simmer for around 25-30 minutes until you reach the setting point (see notes) - remember that this jam may only ever achieve a soft set.
  • Remove from the heat and leave to stand for around 10 minutes, then gently stir in any bubbles. Carefully transfer the jam into the sterilised jars, screw on the lids and leave to cool. The jam will be extremely hot so it may take a few hours before the jars are fully cooled.
