SIMPLE FRUIT JUICE GRANITA



Simple Fruit Juice Granita image

This is a very simple treat that can be used with your favorite fruit juices to make many different variations. My favorite variation has banana in it. It brings a bit of creaminess to the icy treat. The small bottles of prepackaged juice in the produce section are the perfect amount of juice for this recipe--just pick a flavor! Don't let the mixture freeze completely before you scrape. The secret is to scrape as it freezes.

½ cup white sugar
½ cup water
1 (15.2 ounce) bottle berry juice blend (such as Bolthouse® Blue Goodness®)

Steps:

  • Mix sugar and water together in a glass, microwave-safe, 8x8-inch dish. Microwave on high for 2 minutes. Mix with a fork until all sugar is dissolved. Stir in juice.
  • Freeze for 1 hour. Scrape mixture with a fork. Return to the freezer in increments of 30 minutes, scraping with a fork to create small granules after each one. The granita is ready when it resembles icy sand, about 3 hours total.

This is from Arnott's, a tasty little snack or lunchbox treat. Uses Fruit medley which is a mixture of dried apple, apricot, sultanas & raisins.

Number Of Ingredients 8

1 (250 g) packet arnott's granita biscuits, crushed
1 (375 g) packet mixed fruit (fruit medley)
1 cup desiccated coconut
2 cups rice bubbles
1 (395 g) can sweetened condensed milk
75 g butter, chopped
2 tablespoons golden syrup
1 cup shredded coconut, to roll

Steps:

  • In a bowl, combine biscuits, fruit, desiccated coconut and rice bubbles.
  • In a saucepan add condensed milk, butter and golden syrup and heat over medium heat for a couple of minutes, stirring constantlly, until butter melts then cook, stirring, for a further 3 minutes. Pour onto dry ingredients and stir until combined. Let cool slightly.
  • When mixture cools, roll spoonfuls into balls and toss in shredded coconut until coated. Place onto a tray and refrigerate for 30 minutes or until firm.

300 g dried mixed fruit (called fruit medley in Australia)
150 g dried apricots
1 1/2 tablespoons reduced-fat coconut milk
1/2 cup desiccated coconut

Steps:

  • Place the fruit medley, dried apricots and coconut milk in a food processor and process until the mixture comes together.
  • Add a small amount extra cocnut milk if needed for a rollable consistency.
  • Shape into balls and roll in the coconut. Refrigerate until firm.

Every time that I serve these snacks I get requests for the recipe, so I finally wrote it up to share. I make the balls bigger than the original recipe called for. For nutrition info, one serving is two balls. I don't recall where I found this recipe, if you know I will be happy to acknowledge the source.

1 cup roasted pistachios
1 cup dried cherries
1/2 cup dried apricot
1/2 cup golden raisin
1/2 cup pitted dates
1 tablespoon orange juice
2 tablespoons creme de cassis

Steps:

  • Roast the pistachios in a preheated 250 degree oven in a single layer on a baking sheet for 8 to 10 minutes, rolling the nuts every few minutes.
  • Let the pistachios cool completely.
  • Chop the pistachios using pulse mode of a food processor, until fine but not powdery.
  • Divide pistachios in half and set aside.
  • Dice apricots and dates then toss in a large bowl with the other dried fruits to make it easier to grind together uniformly.
  • Put the dried fruits through a grinder using a medium grind.
  • Combine 1/2 of the pistachios into the mixture.
  • Add the orange juice and Cassis and combine by hand until evenly distributed.
  • Shape the mixture into 1" balls and roll the balls in the remaining pistachios.

My mom and I make these raw fruit balls all the time and they are absolutely delicious. We use raw almonds, cashews and macadamias as our nutty blend. But you could use any nuts that tickle your festive fancy. Just know that each nut mix will yield a treat of a different personality. Roll out these vegan treats. They make great snacks in school or work lunch boxes; great power snacks for a long work out; or a great little bite to put beside a cup of herbal tea. These will last in a sealed glass container in the fridge for weeks. But they never do!

1/2 cup organic pitted chopped dates
1/2 cup dried chopped apricot

2 drops of natural almond essence
1/2 teaspoon cinnamon

Steps:

  • Mix the coconut and cinnamon in a small bowl and set aside for rolling.
  • Put all other ingredients in a food processor, and slowly add in the orange juice if it doesn't bind together completely.
  • Roll into small balls and coat with the coconut mixture.

Healthy little treats for people with sweet tooths. I've made these during the holiday season to bring to functions and was enjoyed by all. I'm really finicky on getting all the dried fruit the same size so it took me a little longer then 20 mins to put this recipe together.

1/2 cup dried apricot, finely chopped
1/2 cup dried dates, finely chopped
1/2 cup sultana, finely chopped
1 teaspoon cinnamon
1 tablespoon condensed milk
1/2 cup desiccated coconut

Steps:

  • Finely chopped sultanas, dates and apricots and place them in a mixing bowl. Mix well.
  • Add cinnamon and mix well.
  • Add enough condensed milk (roughly a tablespoon) to make it sticky so the fruit sticks together more easily.
  • Place a teaspoon of mixture in palm of hand and mould/squish/squeezing mixture into a small ball.
  • Place desiccated coconut on plate and roll balls in desiccated coconut, coating the whole ball.
  • Store in refrigerator until your ready to use.
  • Enjoy.

1 cup flaked coconut

Steps:

  • In a food processor, finely chop dates, figs, prunes/apricots and raisins.
  • In a medium bowl, mix chopped fruit with nuts and seeds.
  • Stir in lemon juice.
  • Shape into 1/2-1" balls.
  • Roll in coconut.
  • Dry in your dehydrator at 135º for 4 to 6 hours, or until crisp on the outside.

1 cup Simple Syrup with Flavoring Ideas

Steps:

  • Combine all ingredients in a deep-sided metal pan, and place in freezer, uncovered, until it is nearly set, at least 4 hours, whisking mixture every hour.
  • Remove mixture from freezer, and scrape surface with the tines of a fork until it is the texture of shaved ice. (Mixture can be frozen overnight without whisking; remove from freezer in the morning, and let sit at room temperature about 10 minutes to allow it to slightly soften before scraping with a fork.) Serve.
