SUMMER GREEN PEA SALAD



Summer Green Pea Salad image

Yield 6 servings (about 5 1/2 cups)

Number Of Ingredients 10

4 cups shelled fresh young green peas
3 tablespoons garlic-flavored olive oil
2 tablespoons balsamic vinegar
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1/4 cup chopped red onion
2 tablespoons chopped scallions
3 tablespoons chopped fresh basil leaves
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Bring a large saucepan of salted water to a boil. Add the peas and simmer for 2 to 3 minutes or until just tender. Drain the peas and transfer them to a large bowl. Add the oil and vinegar, and toss to thoroughly coat the peas. Set them aside to cool to room temperature. When you are ready to serve the salad, gently stir in the bell peppers, red onion, scallions, basil, salt, and pepper. Serve immediately.;

CRISPY EGGPLANT AND CHICKPEAS



Crispy Eggplant and Chickpeas image

1 medium eggplant
Kosher salt
Oil, for frying
2 tablespoons garam masala
2 teaspoons ground cumin
2 teaspoons granulated garlic
One 15-ounce can chickpeas, rinsed, drained and dried

Steps:

  • Slice the eggplant into 1/4-inch rounds. Slice the rounds into quarters, so that you have wedge-shaped eggplant pieces. Lay the slices on a sheet pan covered in paper towels. Sprinkle the eggplant with salt and let sit while you are preparing the chickpeas.
  • Heat some oil, coming about halfway up the side of a large cast-iron skillet over medium-high heat, until the oil is 350 degrees F. Line a baking sheet with a cooling rack and paper towels.
  • Mix the garam masala, cumin, granulated garlic and 1/2 teaspoon salt in a small bowl. Sprinkle 1 teaspoon of the mixture over the chickpeas and toss until coated. Carefully lower the chickpeas into the oil using a slotted spoon. Fry, stirring frequently, until they are deep brown and crispy, 5 to 6 minutes. Remove the chickpeas to the paper towel-lined baking sheet. Sprinkle with another tablespoon of the spice mixture and some salt.
  • Transfer the eggplant slices to a dry paper towel and dab until very dry. Sprinkle the eggplant on both sides with the remaining spice mixture. Add the eggplant to the oil in batches, only adding a few at a time. Fry the eggplant, flipping and turning frequently until they are a deep golden brown and crispy on the edges, 5 to 6 minutes.
  • Serve the eggplant chips and crispy chickpeas warm or at room temperature.

EGGPLANT WITH POMEGRANATE SAUCE



Eggplant with Pomegranate Sauce image

1 1/2 pounds long, slender Japanese eggplants
Olive oil
Pomegranate Sauce
2 tablespoons pomegranate molasses
1 tablespoon fresh lemon juice
1 small clove garlic, peeled and crushed to a puree with 1/2 teaspoon salt
1/4 teaspoon sugar
1 1/2 tablespoons olive oil
1/2 teaspoon sea salt
2 to 3 tablespoons shredded fresh mint, preferably spearmint
1 tablespoon chopped flat-leaf parsley
2 tablespoons fresh pomegranate seeds (optional)

Steps:

  • Start the preparation the day before serving. Preheat the oven to 425 degrees. Lightly coat a baking sheet with olive oil.
  • Remove the stem end from each eggplant. Slice the eggplants on the bias into 1/2-inch thick ovals. Spread the slices on the baking sheet in a single layer and brush with olive oil. Bake the eggplants 12 minutes on each side, or until golden brown. Using a spatula, transfer the slices, overlapping slightly, to a shallow serving dish.
  • In a small bowl, combine the pomegranate molasses, lemon juice, garlic, sugar, olive oil, and salt; blend well. Drizzle the sauce over the eggplant. Top with the mint, parsley and pomegranate seeds. Cover with plastic wrap and let stand until ready to serve. Can be refrigerated overnight, but is best served at room temperature.

SPLIT PEAS WITH HONEY-SWEETENED EGGPLANT



Split Peas with Honey-Sweetened Eggplant image

For split pea purée
1 large red onion, finely chopped (2 cups)
2/3 cup extra-virgin olive oil (preferably Greek)
1 lb yellow split peas (2 1/4 cups), picked over, rinsed well, and drained
6 cups water
1 Turkish or 1/2 California bay leaf
2 teaspoons salt
1/4 cup fresh lemon juice
For eggplant compote
1/2 lb eggplant, cut into 1/2-inch cubes (3 1/2 cups)
1 1/4 teaspoons salt
2 large tomatoes
6 tablespoons extra-virgin olive oil (preferably Greek) plus additional for drizzling
2 medium onions, coarsely chopped
2 garlic cloves, minced
1 teaspoon mild honey
1 tablespoon drained bottled small capers (in brine), rinsed
2 tablespoons thinly sliced fresh basil or chopped fresh oregano
1/4 teaspoon black pepper
1 to 2 tablespoons balsamic or Greek raisin vinegar

Steps:

  • Make purée:
  • Cook onion in 1/3 cup oil in a 4- to 5-quart heavy pot over moderately low heat, stirring occasionally, until softened, about 8 minutes. Add split peas and stir until well coated, then stir in water and bay leaf. Increase heat to moderately high and bring to a boil, then reduce heat and slowly simmer, partially covered, stirring occasionally, until mixture is soupy, about 1 hour. Stir in salt and continue to cook, stirring more frequently as purée thickens, until water is absorbed and mixture is the consistency of creamy mashed potatoes, 30 minutes to 1 hour more. Remove from heat and stir in lemon juice and remaining 1/3 cup oil, then cool to room temperature, pot covered with a kitchen towel. (Purée will thicken as it cools.) Discard bay leaf.
  • Make eggplant compote while split peas simmer:
  • Toss eggplant with 3/4 teaspoon salt in a colander set over a bowl. Place a plate or bowl directly on top of eggplant to weight it down and let drain 1 hour. Rinse eggplant (discarding liquid) and pat dry.
  • Cut a shallow X in bottom of each tomato with a paring knife and blanch tomatoes in a 2- to 3-quart saucepan of boiling water 10 seconds. Transfer tomatoes with a slotted spoon to a cutting board and, when cool enough to handle, peel, beginning from scored end, with knife. Halve tomatoes crosswise and seed, then cut into 1-inch pieces.
  • Heat 3 tablespoons oil in a 12-inch heavy nonstick skillet over moderately high heat until hot but not smoking, then add eggplant and sauté, stirring occasionally, until just golden, transferring to a plate. Reduce heat to low, then add remaining 3 tablespoons oil and onions to skillet and cook, stirring occasionally, until softened and golden, 15 to 20 minutes. Add garlic and cook, stirring, 2 minutes. Stir in honey until incorporated. Add eggplant, tomatoes, capers, basil, pepper, and remaining 1/2 teaspoon salt, then gently simmer, stirring occasionally, 5 minutes. Stir in vinegar (to taste) and remove from heat. Transfer to a bowl and cool to room temperature, uncovered.
  • Serve purée topped with eggplant and drizzled with olive oil.

I make one that is very similar, but with zucchini. This year I have a large crop of eggplant, so I had to find a way to use it up!

8 cups eggplants, peeled and cubed (about 2 lbs)
2 1/2 cups saltine crackers, crushed
1 1/2 cups half-and-half cream (I use fat-free)
1 1/2 cups sharp cheddar cheese, shredded (6 oz)
1/4 cup celery, chopped
1 (4 ounce) jar diced pimentos, drained
3 tablespoons unsalted butter, melted
1 1/2 teaspoons salt
1/2 teaspoon black pepper, freshly ground

Steps:

  • Cook the eggplant in boiling salted water to cover for 10 minutes or until tender. Drain well and set aside.
  • Combine the cracker crumbs and the remaining ingredients in a large bowl; stir well. Add the eggplant and stir gently to combine.
  • Pour the eggplant mixture into a lightly greased 13 x 9 x 2 inch baking dish.
  • Bake, uncovered, at 350 degrees for 45 minutes or until golden.
