Pies are the dessert I like best to prepare. This one's the favorite for family get-togethers, and it has been awarded blue ribbons at a couple of local fairs. -Theresa Brazil, Petaluma, California

6 cups sliced peeled Golden Delicious apples
3/4 cup plus 2 tablespoons apple juice, divided
3/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon apple pie spice
2 tablespoons cornstarch
1/4 teaspoon vanilla extract
CRUST:
2-1/2 cups all-purpose flour
1 teaspoon salt
1 cup cold butter
6 to 8 tablespoons ice water

Steps:

  • In a large saucepan, combine apples, 3/4 cup apple juice, sugar, cinnamon and apple pie spice; bring to a boil over medium heat, stirring occasionally. Combine cornstarch and remaining apple juice; add to saucepan. Return to a boil, stirring constantly. Cook and stir 1 minute more or until thickened. Remove from the heat. Stir in vanilla. Cool to room temperature, stirring occasionally. , For crust, combine flour and salt; cut in the butter until mixture is crumbly. Gradually add water, 1 tablespoon at a time, tossing with a fork until dough can be formed into a ball. Divide in 2 portions, making 1 piece slightly larger. On a lightly floured surface, roll out larger portion. , Line a 9-in. pie plate with bottom crust; trim even with edge of plate. Add filling. Roll out remaining dough to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in top., Bake at 400° for 40-45 minutes or until crust is golden brown and apples are tender. Cool on a wire rack.

2-1/2 cups all-purpose flour
1/2 teaspoon salt
1-1/4 cups cold lard
6 to 8 tablespoons cold 2% milk
FILLING:
2-1/2 cups sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
9 cups thinly sliced peeled tart apples (about 9 medium)
1 tablespoon bourbon, optional
2 tablespoons all-purpose flour
Dash salt
3 tablespoons cold butter, cubed
TOPPING:
1 tablespoon 2% milk
2 teaspoons coarse sugar

Steps:

  • In a large bowl, mix flour and salt; cut in lard until crumbly. Gradually add milk, tossing with a fork until dough holds together when pressed. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 1 hour or overnight., For filling, in a large bowl, mix sugar, cinnamon and ginger. Add apples and toss to coat. Cover; let stand 1 hour to allow apples to release juices, stirring occasionally., Drain apples, reserving syrup. Place syrup and, if desired, bourbon in a small saucepan; bring to a boil. Reduce heat; simmer, uncovered, 20-25 minutes or until mixture thickens slightly and turns a medium amber color. Remove from heat; cool completely., Preheat oven to 400°. Toss drained apples with flour and salt. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 10-in. cast-iron or other deep ovenproof skillet. Trim pastry even with rim. Add apple mixture. Pour cooled syrup over top; dot with butter., Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. Brush milk over pastry; sprinkle with coarse sugar. Place on a foil-lined baking sheet. Bake 20 minutes., Reduce oven setting to 350°. Bake 45-55 minutes longer or until crust is golden brown and filling is bubbly. Cool on a wire rack.

1 basic flaky pie pastry (9 1/2 inch deep dish uncooked and refrigerated)
7 cups peeled cored and thinly sliced golden delicious apples
1/3 cup granulated sugar, plus
1 tablespoon granulated sugar
1 lemon, juice of
1 lemon, zest of
1/4 teaspoon ground nutmeg
1 1/2 tablespoons cornstarch
1 cup all-purpose flour
1/2 cup rolled oats (old-fashioned or quick-cooking)
2/3 cup firmly packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup cold unsalted butter, cut into 1/4-inch pieces

Steps:

  • Combine apples, 1/3 cup sugar, lemon juice and zest in a large mixing bowl.
  • Mix well; set aside for 10 minutes.
  • Preheat oven to 400°.
  • In a smaller bowl, mix 1 tablespoon sugar, nutmeg, and cornstarch; add to apple mixture and stir well.
  • Turn the filling into the chilled pie shell; smooth filling with your hands to even out.
  • Place pie on the center rack in oven; bake 30 minutes.
  • Can make the crumb topping while pie is baking: Add flour, oats, brown sugar, cinnamon, and salt in the container of a food processor; pulse several times to mix.
  • Scatter the butter over the top; pulse repeatedly until mixture resembles fine crumbs.
  • Empty the crumbs into a large bowl and rub them together between your fingers until you have large, buttery crumbs; store in refrigerator until ready to use.
  • Remove pie from oven and lower temperature to 375°; carefully dump the crumbs in the center of the pie, spreading them over the surface with your hands.
  • Tamp them down lightly; return pie to oven, placing it so the part that faced the back of the oven now faces forward.
  • Place a foil-lined baking sheet onto the rack below to catch any spills.
  • Bake about 30-35 more minutes or until the top is dark golden brown and the juices bubble thickly at the edge.
  • May need to cover the pie with loosely tented foil during the last 15 minutes to prevent over-browning.

3 tablespoons water
4 teaspoons cornstarch
1 egg, beaten
3/4 cup half-and-half cream
3/4 cup sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
4 medium Red Delicious apples, peeled, sliced
Pastry for double-crust pie (9 inches)
2 tablespoons butter
1 tablespoon milk
1 tablespoon cinnamon-sugar

Steps:

  • In a small bowl, mix water and cornstarch until dissolved. Add egg, cream, sugar, cinnamon and nutmeg. Place apples in a large bowl; pour cream mixture over and stir to coat. Line a 9-in. pie pan with the bottom pastry. Pour apple mixture into crust; dot with butter. Top with remaining pastry; flute edges and cut slits in top. Brush with milk and sprinkle with cinnamon-sugar. Bake at 350° for 55 minutes or until golden brown.

  • Using the food processor add flour to the bowl along with butter and salt. Then turn the processor on for 30 seconds until the butter has been combined. Drizzle in the cold water until the dough has come together. Normally now you put the crust into the refrigerator to let the dough come together as it gets cold. I don't like when my dough is so cold I can't roll it and usually I am in a rush. If you can put the dough in the freezer for 15 to 20 minutes it will really help; if not simply take the dough and put a light dusting of flour onto the parchment paper and place the dough on top. Then dust flour on the top of the dough and put a second piece of parchment paper on top of the dough. With a rolling pin roll out your dough to a thin crust consistency. Take your pie dish or tart mold and carefully place your dough inside the mold by rolling your dough onto the rolling pin. Using a rolling pin, unroll the dough over the pie dish. Using your hands press down all the way around the mold
  • Slice apples place in a bowl thin sprinkle with brown sugar. Add vanilla, flour, and mix well with a wooden spoon. Fill pre-baked pie shell really full. Add the pie crust lattice by alternating the strips of the pie crust on top. Add cubes of butter in-between each open square. Sprinkle with sugar and bake at 375 for about 45-50 minutes or until apples are tender. Take out and allow to cool completely
