GODIVA FROZEN CHOCOLATE TURTLE PIE
Decadent and oh so delicious! From the Godiva web site. Freezing time varies, I let it freeze overnight.

Steps:
- MAKE THE CRUST:.
- In medium bowl, stir together wafer crumbs, pecans and butter with fork until mixture is well combined.
- Press mixture onto bottom & up sides of 9" glass pie plate.
- Freeze for 30 minutes or until firm.
- MAKE THE ICE CREAM FILLING:.
- Spread half of softened ice cream into prepared pie shell.
- Top with chopped chocolate candies and pecans.
- Spread with remaining ice cream.
- Cover pie with plastic wrap and freeze while preparing caramel layer.
- MAKE THE CARAMEL LAYER:
- In small, heavy saucepan over medium heat, stir together brown sugar, butter and corn syrup.
- Heat for 2-3 minutes, stirring constantly, until sugar is dissolved and mixture is boiling.
- Remove pan from heat and whisk in cream and vanilla until blended.
- Let mixture cool to room temperature.
- Spoon caramel mixture over ice cream layer in pie shell, covering it completely.
- Freeze pie for 20 minutes, until caramel layer is set.
- MAKE THE CHOCOLATE GLAZE:.
- Place chocolate in medium bowl.
- In heavy, medium saucepan, heat cream and corn syrup over medium heat until mixture comes to boil.
- Pour hot cream mixture over chocolate.
- Let stand for 30 seconds to melt chocolate.
- Gently whisk until smooth.
- Let cool for 5 minutes or until slightly thickened.
- Remove pie from freezer and pour glaze over top of caramel layer, covering it completely.
- Freeze pie until ready to serve.
- GARNISH THE PIE:.
- Beat cream, sugar and vanilla in chilled, medium bowl, using hand-held electric mixer to stiff peaks.
- Place whipped cream into pastry bag fitted with large star tip (such as Ateco #7).
- Pipe cream around top edge of pie.
- Garnish with chopped chocolate candies.
- Serve immediately.

When I serve this dessert to company, they often think it has ice cream in it. It does have a smooth texture like an ice cream pie. I've been making this recipe for years - it's a refreshing end to a meal anytime!

- Preheat oven to 325 degrees.
- In small heavy sauce pan over low heat, melt caramels with 1/3 cup sweetened condensed milk.
- Spread evenly on bottom of prepared pie crust.
- In a medium sauce pan over low heat, melt chocolate with the butter.
- In large bowl, beat eggs with remaining sweetened condensed milk, water, vanilla, and salt.
- Add chocolate mixture; Mix well.
- Pour into pie shell.
- Top with pecans.
- Bake 35-40 min, or until center is set.
- Cool. Serve with a big scoop of vanilla ice cream or whipped cream.

RILEY'S FROZEN TURTLE PIE
When I was a student, I used to work at a breakfast cafe called "Riley's" which was run by a married couple who had met at and graduated from The Culinary Institute. This is how they made their Turtle Pie, hence the name. (Plan ahead - while it only takes a few minutes to complete each step, there is freezing time between each part. The prep time given is approx including the total freezing time.) I had to guess on the measurements - I usually buy a container of each ingredient and just pour out the amounts as needed.

- Make sure your ice cream is softened enough so that you can spread it.
- Fill the graham cracker pie crust with the softened ice cream, leaving about 1/4-1/2 inch space at the top.
- Cover and freeze until solid.
- Cover the entire surface of the pie with an even layer of caramel sauce, then recover and let freeze until firm.
- Pour an even layer of chocolate sauce on top of the caramel.
- Sprinkle as many chopped nuts on top as you like; cover and return to freezer until firm.
- You can do all of the previous steps ahead and leave the pie in the freezer until needed.
- When you plan to serve the pie, set it out on the counter to soften up just enough so you can slice it into 6 servings.
- Set one slice onto a plate and using a spray can of whipped cream, cover the entire slice with whipped cream--piling it high like meringue.
- Sprinkle with additional chopped nuts, if desired.
- Stick a whole pecan half into each slice, and serve.
- NOTE: DO NOT use the squeeze bottle type of chocolate syrup, meant for making chocolate milk.
- It is too thin and will not harden up enough.
- Instead, look for the small cans of Hershey's chocolate syrup or any brand that comes in a thick, fudgey sauce form.

- Preheat the oven to 375°F (190°C). Grease a 9-inch springform pan with nonstick spray.
- Make the crust: Add the chocolate sandwich cookies and granulated sugar to a food processor and process into fine crumbs. Add the melted butter and pulse 4 times, or until the crumbs are moistened.
- Press the crust mixture evenly against the bottom and up the sides of the prepared pan, leaving ½ inch of space from the top of the pan.
- Bake for 10 minutes, until the crust begins to puff slightly. Remove from the oven and transfer to the refrigerator to chill for 25-30 minutes.
- Make the filling: In a small bowl, whisk together the hot water, cocoa powder, and vanilla until smooth.
- In a medium, microwavable-safe bowl, combine the chopped Godiva® Signature Collection Dark Chocolate Mini Bars and ¼ cup of heavy cream. Microwave in 30-second intervals until melted, 1 minute total. Whisk until smooth and fully combined.
- Add the cocoa mixture to the bowl of melted chocolate and whisk to combine.
- In a large bowl, whip the remaining 2¾ cups of heavy cream with an electric hand mixer on medium-high speed until stiff peaks form, 5 minutes. Transfer 1⅓ cups of whipped cream to a separate bowl and set aside.
- Add the granulated sugar and salt to the bowl with the remaining whipped cream and whip on low speed for 30 seconds, until fully combined. Using a rubber spatula, fold in the chocolate mixture, ⅓ at a time, until incorporated and smooth. With the hand mixer, beat once more for 30 seconds to stiffen.
- Remove the crust from the refrigerator and pour the filling evenly on top. Freeze for 1 hour, until the filling is firm.
- Meanwhile, add the powdered sugar to the reserved whipped cream and whip on low speed until smooth, 1 minute. Transfer the whipped cream to a piping bag fitted with an open star tip and refrigerate until ready to use.
- Remove the pie from the freezer and pipe 10 dollops of whipped cream around the edges. Place a square of Godiva® Signature Collection Dark Chocolate Mini Bar on each of the whipped cream dollops.

- Make the truffles:.
- Heat heavy cream, butter and sugar in medium saucepan over medium heat to a gentle boil. Remove from heat. Add chopped chocolate and let stand 30 seconds. Whisk until smooth. Stir in cognac.
- Place saucepan in bowl of ice water. Beat chocolate mixture until it thickens, holds its shape and is firm enough to pipe, using hand-held electric mixer at medium speed.
- Transfer ganache to pastry bag fitted with 1/2-inch plain tip (such as Ateco #6). Pipe 1-inch mounds onto baking sheet. Freeze truffles for 15 minutes or until just firm enough to shape.
- With hands dusted with confectioners' sugar, gently roll ganache into 1-inch balls. Refrigerate about 10 minutes or just until firm.
- Coat the truffles:.
- Roll one-third of the truffles in confectioners' sugar. Roll another third in cocoa powder. Then roll remaining truffles in chopped walnuts. Store truffles in airtight container in refrigerator up to 5 days.
- To serve:
- Remove truffles from refrigerator 30 minutes before serving. Place each truffle in a decorative petit four paper cup and arrange on serving plate.
