CREAMY GOAT CHEESE, BACON AND DATE DIP



Creamy Goat Cheese, Bacon and Date Dip image

This appetizer is like a bacon-wrapped date in dip form - and every bit as luxe, sweet and simultaneously smoky as that sounds. Here, as you swipe crusty bread through the smooth cheese, you'll gather chunks of bacon and a bit of date, toffee-like from a quick fry in the meaty fat. You could embellish further, with nuts, chile or honey, or you could sip Champagne and dig in just as merrily - with friends hovering nearby for their turn.

10 ounces goat cheese, at room temperature
4 ounces cream cheese, at room temperature
2 tablespoons freshly squeezed lemon juice
Salt and pepper
5 ounces thick-cut bacon, cut in 1/2-inch thick
10 Medjool dates, pitted and cut into quarters lengthwise, or roughly chopped
Honey, red-pepper flakes, black pepper, flaky salt, toasted sliced almonds or chopped pistachios, for garnish (optional)
Crusty bread, grainy crackers, endive or fennel, for serving

Steps:

  • Heat oven to 400 degrees. In a medium bowl, stir together the goat cheese, cream cheese, lemon juice and a pinch each of salt and pepper. Transfer to a 1-quart baking dish or ovenproof skillet, and spread into an even layer. Bake until warmed through and bubbling, about 20 to 25 minutes.
  • Meanwhile, cook the bacon in a medium skillet over medium-low heat, stirring occasionally, until golden and crisp, about 10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, then add the dates to the bacon fat in the skillet, and cook, stirring occasionally, until the insides are warm and the outsides blister, about 1 minute.
  • Top the baked cheese with the dates and bacon, and garnish as you wish. Serve at once.

8 slices bacon (I find that thin bacon works better)
16 dates
4 ounces goat cheese
toothpicks

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Slice the dates lengthwise on one side to create an opening. Remove the pit.
  • Using a spoon, stuff a small amount of goat cheese into the cavity of each date and press the sides together to close.
  • Cut the bacon slices in half. Wrap each date with a slice of bacon and secure with a toothpick.
  • Arrange evenly on a baking sheet with raised edges (otherwise grease will get everywhere) and bake for 10 minutes. Remove the dates and use the toothpick to turn each one so it's laying on its side. Bake for another 5-8 minutes, until browned to your liking, and turn the dates to the other side and repeat. Remove from the oven, place on a paper towel lined plate, and let stand for 5 minutes before serving.

4 slices applewood-smoked bacon
16 Medjool dates
3 ounces fresh goat cheese

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil; set a rack over the baking sheet.
  • Lay the bacon out on the rack. Transfer to the oven and bake until cooked but not crispy, 12 to 15 minutes. Let the bacon cool for about 5 minutes before cutting into 1/2-inch pieces.
  • Lower the oven to 350 degrees F. Remove the rack from the baking sheet; replace the aluminum with parchment paper.
  • Cut a lengthwise slit in the dates, just long enough to remove the pits. Carefully remove the pits. Fill each date with a scant teaspoon of the goat cheese. Carefully insert a piece of bacon into the cheese in each date. Bake the stuffed dates for about 15 minutes. Serve warm.

six 18-by 14-inch sheets of phyllo, stacked between 2 sheets of wax paper and covered with a dampened kitchen towel
3/4 stick (6 tablespoons) unsalted butter, melted
4 tablespoons sesame seeds, toasted lightly
10 ounces mild goat cheese, softened (about 1 cup)
26 pitted dates, cut crosswise into thirds
8 slices of crisp-cooked bacon, crumbled
2 tablespoons minced scallion

Steps:

  • Preheat the oven to 400°F. On a work surface arrange a 20-inch-long sheet of wax paper with a long side facing you. Put 1 sheet of the phyllo on the wax paper, brush it with some of the butter, and sprinkle it with about 2 teaspoons of the sesame seeds. On this, layer, brush, and sprinkle 1 more sheet of the phyllo in the same manner and lay a third sheet of phyllo on top. Spread 1/2 cup of the goat cheese along the pastry in a 1-inch strip about 2 inches above the near long side, leaving a 2-inch border at each end. Arrange half the date pieces on the cheese and sprinkle them with half the bacon, half the scallion, and 2 teaspoons of the remaining sesame seeds. Using the wax paper as a guide, lift the bottom 2 inches of the pastry over the filling, fold in the ends, and roll up the strudel tightly. Transfer the strudel carefully, seam side down, to a lightly buttered baking sheet and brush it with some of the remaining butter. Make another strudel with the remaining ingredients in the same manner.
  • Bake the 2 strudels in the lower third of the oven for 15 to 20 minutes, or until they are golden, and let them cool to warm on the baking sheet on a rack. The strudels may be made 1 day in advance and kept covered loosely and chilled. Reheat the strudels in a preheated 357°F. oven for 10 minutes. Serve the strudels warm, cut into 1-inch pieces with a serrated knife.

1 package (8 ounces) pistachios, shelled
2 tablespoons lemon juice
2 garlic cloves, halved

1 package (5.3 ounces) fresh goat cheese, crumbled
1/4 cup olive oil
1-1/2 pounds ground beef
1 package (8 ounces) pitted dates, chopped
6 brioche hamburger buns, split
1 medium red onion, sliced
1/2 pound maple-flavored bacon strips, cooked

Steps:

  • Place 2 cups spinach, pistachios, lemon juice, garlic, pepper flakes, salt and pepper in a food processor; pulse until chopped. Add goat cheese; process until blended. Continue processing while gradually adding oil in a steady stream to reach a spreadable consistency. Refrigerate until serving., Meanwhile, in a large bowl, combine beef and dates, mixing lightly but thoroughly. Shape into six 1/2-in.-thick patties. Place burgers on an oiled grill rack or in a greased 15x10x1-in. pan. Grill, covered, over medium heat or broil 4-5 in. from heat until a thermometer reads 160°, 4-5 minutes per side. Grill buns, cut sides down, over medium heat until toasted., Top bun bottoms with remaining spinach, burgers, red onion and bacon. Spread 4 teaspoons goat cheese mixture over cut side of each bun top; place on burger. Cover and refrigerate remaining goat cheese mixture; save for another use.
