GOAT CHEESE CHEESECAKES WITH A GINGERSNAP CRUST AND TUILES



Goat Cheese Cheesecakes with a Gingersnap Crust and Tuiles image

6 tablespoons unsalted butter, melted, plus extra for the pan
2 cups gingersnap crumbs
1/4 cup granulated sugar
Pinch salt
Two 8-ounce packages cream cheese, at room temperature
One 12-ounce log fresh goat cheese
12 ounces creme fraiche or sour cream
4 large eggs
1 cup granulated sugar
2 teaspoons vanilla extract
1/2 cup light brown sugar
1/4 cup light corn syrup
4 tablespoons unsalted butter, at room temperature
Pinch salt
1 egg
1/3 cup all-purpose flour
1/2 cup blanched slivered almonds, chopped
Peach, Blueberry and Ginger Chutney:
1/2 cup blueberries
1/2 cup diced peaches, skin removed
Crystalized ginger
1/4 cup granulated sugar
1 tablespoon white vinegar

Steps:

  • For the crust: Butter four 3-inch ring molds and set on a parchment-lined baking sheet.
  • In a large mixing bowl, stir together the gingersnap crumbs, melted butter, granulated sugar and salt. Press the crumb mixture into the bottom and halfway up the sides of the prepared ring molds.
  • For the filling: Preheat the oven to 350 degrees F. In a stand mixer fitted with the paddle attachment, beat the cream cheese and goat cheese until light and fluffy. Add the creme fraiche and beat to combine. Add the eggs, one at a time, beating after each addition until thoroughly combined. Beat in the sugar and vanilla until just combined.
  • Pour the filling into the prepared crusts. Bake until set, 15 to 20 minutes, rotating the baking sheet halfway through. If the cheesecakes start to color, tent the baking sheet with aluminum foil.
  • Remove the cheesecakes from the oven and let cool completely before serving, about 1 hour. (For best results, refrigerate overnight to ensure a proper set.)
  • For the tuiles: Beat the brown sugar, corn syrup, butter and salt together with an electric mixer until light and fluffy. Add the egg; beat until smooth. Mix in the flour until combined. Gently fold in the almonds. Refrigerate for 30 minutes.
  • Line two baking sheets with silicone baking mats. Drop heaping teaspoonfuls of the cookie dough, spaced about 3 inches apart, onto the mats. Bake until golden and crisp, about 8 minutes. Let cool slightly. When just cool enough to touch, lift the tuiles off the baking mat with a small offset spatula and gently wrap them around a rolling pin to form a curved shape. Leave on the rolling pin until set, less than a minute. Carefully remove the tuiles from the rolling pin and place on a plate. (Makes about 10 tuiles.)
  • For the chutney: In a small saucepan, combine the blueberries, peaches, ginger, sugar, vinegar, and water to cover. Bring to a boil over high heat, stirring often. Reduce the heat and simmer until thickened, 30 to 40 minutes.
  • To serve, unmold the cheesecakes onto serving plates, spoon some chutney on top and arrange a tuile on the side.

2 cups vanilla wafer crumbs, such as Nilla
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
2 grates of fresh nutmeg
Pinch kosher salt
Two 8-ounce packages cream cheese, at room temperature
One 12-ounce log goat cheese
1 1/2 cups sour cream sour cream
4 large eggs
1 1/2 cups sugar
2 teaspoons vanilla extract

Steps:

  • For the crust: Butter a 9-inch springform pan. In a large mixing bowl, combine the butter, wafer crumbs, sugar, cinnamon, ginger, nutmeg and salt. Stir together until well combined and homogenous. Use your fingers to press the crumb mixture onto the bottom of the pan and about halfway up the sides. Reserve.
  • For the filling: Preheat the oven to 350 degrees. In an electric mixer with a paddle attachment, beat the cream cheese and goat cheese together until light and fluffy. Add the sour cream and continue beating until combined. Add the sugar and vanilla and begin to beat. Add the eggs one at a time, beating in each until thoroughly mixed before adding the next one.
  • To assemble: Pour the filling into the prepared crust. Place on a baking sheet and bake for 30 minutes. Rotate the baking sheet and bake until the filling is set, another 25 to 30 minutes. If the filling starts to color, tent the pan with aluminum foil. Remove the cake from the oven and let cool completely before the serving (it continues to set as it cools).
  • The cake will continue to set as it cools, but it's best served after it has been refrigerated overnight and has really firmed up.

PEA AND GOAT CHEESE STUFFED RAVIOLI



Pea and Goat Cheese Stuffed Ravioli image

3 3/4 cups all-purpose flour
4 large eggs plus 2 egg yolks
1/4 cup olive oil
2 tablespoons water
Kosher salt
3 cups frozen peas, thawed
2 cups goat cheese
1 cup grated Parmigiano-Reggiano, plus more for garnish
4 large eggs
Kosher salt
All-purpose flour, for dusting
Semolina flour, for dusting
1 1/2 cups chicken stock
2 sticks (1 cup) unsalted butter
Pea tendrils
Sugar snap peas
Chopped fresh mint

Steps:

  • For the dough: Mound the flour on a clean, dry work surface and make a big hole in the center of the pile. Crack the eggs into the hole along with the extra yolks, olive oil, water and some salt. Using a fork, beat the eggs. Incorporate the flour, a little at a time, into the egg mixture, being careful not to break the well (or the egg mixture will run everywhere). When enough flour is incorporated that you can handle the dough, use your hands to combine everything really well. (If the mixture is tight and dry, wet your hands a bit.) When the mixture is homogeneous, start kneading. Knead until the dough is smooth and supple, anywhere from 8 to15 minutes. Wrap the dough in plastic wrap and let it rest at room temperature for at least an hour.
  • For the ravioli: In a food processor, pulse the peas to make a coarse paste. Mix the pea paste, goat cheese, Parmigiano-Reggiano and eggs in a large bowl. Sprinkle with salt. Set aside.
  • With a rolling pin, roll out the dough into sheets about 1/4-inch thick and 12 inches long, using extra flour as needed to prevent sticking,. (Reserve the excess dough for another use.) Brush the bottom half of the pasta sheets lightly with water.
  • Fill a disposable pastry bag (or a resealable bag with one corner snipped) with the pea mixture. Pipe 1-inch balls of filling onto the pasta about 1 1/2-inches apart on the bottom half of the pasta sheets. Fold the top half of the pasta sheets over the filling so the top edges meet the bottom edges. Use your index fingers to press around the filling and seal the edges shut. Use a fluted ring cutter or fluted pasta roller to cut out the ravioli. Place the ravioli on a semolina-dusted baking sheet.
  • Bring a large pot of well-salted water to a boil. Heat the chicken stock and butter in a large saucepan over medium heat; season with salt.
  • Add the ravioli to the boiling water and cook until they float to the top, 4 to 5 minutes. Transfer the ravioli to the sauce and cook, shaking the pan frequently, until the sauce begins to thicken and cling to the pasta, a few minutes. (If the sauce seems too thick, add a bit more stock.) Place five ravioli on each serving plate, spoon a little extra sauce on top and garnish with pea tendrils, sugar snap peas and mint. Sprinkle with Parmigiano-Reggiano.

This is a wonderful cheesecake. If you have never used goat cheese your in for a true treat. Chef Burrell's Recipe #471465 is her suggestion for topping this cheesecake but feel free to use any fruit topping that you like best or a caramel sauce, Recipe #459229, Recipe #459213 or..............well, you get the idea, anything you'd like or no topping at all if your a purist. This cheesecake is a star no matter how you top it.

Add the eggs, 1 at a time, beating after each egg is added, until thoroughly combined. Beat in the sugar and vanilla until just combined.
  • Pour the filling into the prepared crust. Put on a baking sheet in the preheated oven and bake for 55 to 60 minutes. Rotate the baking sheet halfway through the cooking process. If the cheesecake starts to color, tent the springform pan with aluminum foil.
  • Remove the cheesecake from the oven and let it cool completely before serving, as it continues to set as it cools. It is best to refrigerate overnight before serving. Cut the cake into wedges and serve with Vanilla Pineapple Compote if desired.
