GLUTEN FREE TOLL HOUSE CHOCOLATE CHIP MIMICRY
This is the end result of my long quest for a gluten free chocolate chip cookie that tastes and looks as good as Mom's. It's based on the actual Tollhouse Cookie recipe. :)

Steps:
- Preheat your oven to 375 degrees F.
- In the workbowl of your mixer, combine butter and sugars and vanilla and mix on low until combined (about 2 minutes). Add egg and combine.
- In another bowl, measure out your flours, baking soda, xanthan gum and salt. With mixer on low, slowly integrate the dry goods into the wet.
- When all the dry goods are integrated, add the chips and nuts and mix just long enough to combine.
- Spoon out by the tablespoon onto a baking sheet and bake for 12 minutes. Let rest for about 10 minutes on the sheet for the middles to set.

TOLL HOUSE CHOCOLATE CHIP COOKIES
In the 1930s, Ruth Wakefield, the inventor of the chocolate chip cookie, ran the Toll House Inn, a popular restaurant in eastern Massachusetts, with her husband. Using an ice pick, Wakefield broke a semisweet chocolate bar into little bits, mixed them into brown-sugar dough, and the chocolate chip cookie was born. In 1939, she sold Nestlé the rights to reproduce her recipe on its packages (reportedly for only $1) and was hired to write recipes for the company, which supposedly supplied her with free chocolate for life. This recipe is very close to Mrs. Wakefield's original (hers called for a teaspoon of hot water and 1/2-teaspoon-sized cookies), and the one you'll still find on the back of every yellow bag of Nestlé chocolate chips.

Steps:
- Heat oven to 375. Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixing bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chips and nuts, if using. Drop by rounded tablespoon onto ungreased baking sheets.
- Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

- Preheat oven to 375°F. Line 3 large cookie sheets with parchment paper (I use 13" x 18" half sheet pans with a raised edge.) Set aside.
- In a medium bowl, stir together the gluten free flour, baking powder, xanthan gum and salt. Set aside.
- In a large bowl, cream the butter and both sugars together using a hand mixer or wooden spoon. Add the egg and vanilla. Mix well. Stir in the dry ingredients. Then mix in 3/4 cup of the chocolate chips.
- At this point, you have two choices. Option 1: If you're in a hurry and don't care about having perfect looking cookies, then you can go ahead and spoon mounds of cookie dough on prepared pans to make 30 cookies. They will not spread much as they're gluten free, so when you bake them this way, they will look sort of like drop biscuits.Option 2: Refrigerate the cookie dough for about an hour. Then shape dough into 30 balls and place on prepared pans. Flatten slightly with the palm of your hand.
