1 cup unsweetened apple juice
2 tablespoons honey
4 teaspoons finely chopped crystallized ginger
4 teaspoons lemon juice
4 cups cantaloupe balls
1 cup sliced fresh strawberries
1 cup fresh blueberries
2 teaspoons chopped fresh mint leaves

Steps:

  • In a small saucepan, combine the apple juice, honey, ginger and lemon juice. Bring to a boil over medium-high heat. Cook and stir for 2 minutes or until mixture is reduced to 3/4 cup. Remove from the heat. Cool., In a serving bowl, combine the cantaloupe, strawberries, blueberries and mint. Drizzle with cooled apple juice mixture; gently toss to coat.

1 large European or seedless hothouse cucumber
1/2 cup plain yogurt
2 tablespoons minced fresh mint
1 clove garlic, minced
Salt and freshly ground pepper

Steps:

  • Cut the cucumber into thin slices and place them in a medium-sized glass salad bowl. Mix the remaining ingredients together and pour them over the cucumber slices. Cover with plastic wrap and chill for 1 hour. Serve chilled.

I needed an interesting way to serve fruit when I had 4 guests for dinner one night, and I looked at the lovely peppermint growing in my garden for inspiration. :) This salad gets much better with chilling, and really hits its peak the next day, making for luscious leftovers or an easy make ahead side.

1 pint strawberry
1 (20 ounce) can pineapple chunks
0.5 (11 ounce) can mandarin oranges
2 cups grapes
2 tablespoons honey
2 tablespoons of fresh mint

Steps:

  • Wash, trim and cut strawberries into bite sized pieces.
  • Drain canned fruit. Do not rinse.
  • Chop mint finely.
  • Mix everything together.

  • Makes 6 servings. Pulse mint and sugar in a food processor until finely ground. Sprinkle mint sugar over fruit in a large bowl and toss gently to combine. Let stand 5 minutes before serving.
