Gluten-Free Fudge Crinkles image

Make everyone feel welcome by baking traditional holiday cookies customized for alternative diets. These fudgy gluten free chocolate crinkles are easy to make since they start with a mix.

1 box (15 oz) Betty Crocker™ Gluten Free devil's food cake mix
1 box (4-serving size) gluten free chocolate instant pudding and pie filling mix
1/2 cup butter, melted
1 egg
1/4 cup water
1 teaspoon gluten free vanilla
Sugar

Steps:

  • Heat oven to 350°F. In large bowl, mix dry cake mix and dry pudding mix. Add melted butter, egg, water and vanilla; stir until soft dough forms.
  • Shape dough into 1 1/4-inch balls; roll in sugar. On ungreased cookie sheets, place balls about 2 inches apart; flatten slightly.
  • Bake 8 to 10 minutes or until set. Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes. Store tightly covered.

This is a gluten free recipe that requires no refrigeration of the dough. It is made from soy and buckwheat flour. Despite the name having wheat in it, there is actually no gluten in buckwheat flour. I adapted this recipe from a traditional molasses crinkle recipe. They are raised version of the gluten free cookies. Hope you enjoy!

1/2 cup butter
1/4 cup white sugar
1 cup firmly packed brown sugar
1 egg
1/2 cup molasses
1 1/4 cups soy flour
1 cup buckwheat flour
2 tablespoons xanthan gum
2 teaspoons baking soda
1/4 teaspoon salt
2 teaspoons ground cinnamon
3/4 teaspoon ground cloves
2 teaspoons ground ginger
granulated sugar (for topping the cookie)

Steps:

  • Preheat the oven to 350 degrees.
  • Mix all the dry ingredients together and remove all lumps.
  • Mix in the butter, egg and molasses.
  • Shape the dough into balls and drop onto the cookie sheet.
  • Bake for around 15 minutes and remove the cookies from the cookie sheet immediately.

1/2 cup butter, softened
1 cup sugar
1 teaspoon vanilla extract
2 large eggs, room temperature
2 cups superfine almond flour
1/2 cup baking cocoa
1/4 cup coconut flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1/4 cup confectioners' sugar

Steps:

  • Preheat the oven to 350°. In a large bowl, cream butter, sugar, and vanilla until light and fluffy, 5-7 minutes. Beat in eggs, 1 at a time. In another bowl, whisk almond flour, baking cocoa, coconut flour, baking soda, and salt; gradually beat into creamed mixture., Shape dough into 1-in. balls. Roll in confectioners' sugar. Place 2 in. apart on parchment-lined baking sheets. Bake until set, 8-10 minutes. Remove to wire racks to cool.

  • Place 1 cup of chocolate chips in a microwavable bowl. Microwave for 45 seconds, stir. Heat in 15 second increments, stirring in between, until the chocolate is completely smooth. Let cool for about 10 minutes.
  • Using electric mixer, beat whites in large bowl to soft peaks. Gradually beat in ½ cup powdered sugar. Continue beating until mixture resembles soft marshmallow creme.
  • Whisk 1 cup powdered sugar, cocoa, cornstarch, and salt in separate bowl. On low speed, beat the dry ingredients into the egg white meringue. Once it is fully incorporated, add the lukewarm chocolate and ½ cup chocolate chips. Dough will become very stiff. If your dough seems loose at all, I recommend refrigerating the dough for at least a half hour to help it firm up before rolling into balls.
