  • Cornstarch. Cornstarch has a texture similar to that of xanthan gum. It’s highly absorbent, making it a great thickener in stews and gravies. Though it’s naturally gluten-free, some products may be contaminated with this protein.
  • Unflavored gelatin. Gelatin helps firm up many dishes because it’s derived from animal collagen, a jelly-like protein that provides structure to connective tissues (11).
