don't have time to slave over the stove for a quick healthy vegetbale side dish that happens to come out of a can; glory has a healthier version of their now famous canned goods. i personally don't like too many canned food veggies, however i've cooked these a few times and they were great, when i was in a pinch.

1 can(s) glory lower sodium turnip greens
3 slice turkey bacon
1 small onion, chopped
1 small garlic, chopped
1 tsp canola oil

Steps:

  • 1. put oil in a heated pan. fry up turkey bacon or turkey sausage. add chopped onion and chopped garlic to bacon. sautee for 2 minutes or so. add greens and simmer for a few minutes...these are quick and easy...these greens are healthy and tasty!!!

1/3 cup slivered almonds
1/3 cup shelled pistachios
1/3 cup sunflower seeds (without shells)
1/3 cup walnuts halves
Pinch of sea salt
2 cups baby spinach
1 bunch Swiss chard, ribs removed and sliced thin (about 3 cups)
1 bunch collard greens, ribs removed and sliced thin (about 3 cups)
1 bundle lacinato kale, ribs removed and sliced thin (about 3 cups)
1/3 cup canned chickpeas, rinsed
1/3 cup canned kidney beans, rinsed
6 ounces crumbled feta cheese
1/2 cup fresh raspberries
1 cup olive oil
1/2 cup raspberry vinegar or red wine vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
Splash of water
Kosher salt and freshly ground black pepper

Steps:

  • For the salad: Add the almonds, pistachios, sunflower seeds and walnuts to a dry skillet and toast over medium heat until they brown slightly, 2 to 3 minutes. Remove the pan from the heat. Sprinkle with sea salt.
  • For the dressing: Add the raspberries to a mason jar. Using the back of a wooden spoon, smash the berries. Add the olive oil, vinegar, honey, Dijon, water and some salt and pepper. Secure the lid and shake.
  • Add the spinach, chard, collard greens and kale to a salad bowl. Toss with 3 to 4 tablespoons of the dressing. Top with the chickpeas, kidney beans and feta and toss before serving. Refrigerate the remaining dressing.

8 cups assorted greens (red-leaf lettuce, arugula, frisée, endive, etc.)
1/2 cup torn fresh basil leaves
6 ripe plum tomatoes, cut into eighths
1 small red onion, thinly slivered
1 red pepper, cut into 1/4-inch dice
1 hothouse cucumber, peeled, halved lengthwise and cut into 1/2-inch dice
1/2 cup pitted black olives, halved
Salt and freshly ground black pepper
1/3 cup of your favorite vinaigrette

Steps:

  • 1. Rinse greens; dry well. Tear or cut into bite-sized pieces. Wrap well and keep in the crisper until needed.
  • 2. Place greens in a large salad bowl along with basil leaves, vegetables and olives. Season with salt and pepper to taste, then toss with vinaigrette. Serve immediately.
