HERB-CRUSTED BEEF TENDERLOIN

Steps:
- Line a baking sheet with aluminum foil; set an ovenproof wire rack inside baking sheet. Pat beef dry. Place on wire rack; let stand at room temperature 1 hour.
- Preheat oven to 375ºF. Stir together mustard and mayonnaise in a small bowl. Combine breadcrumbs, rosemary, thyme, salt, pepper, and garlic powder in a medium bowl; stir in oil. Brush mustard mixture evenly all over beef. Carefully press breadcrumb mixture all over beef to fully coat.
- Bake in preheated oven until a thermometer inserted into thickest portion of beef registers 120ºF, 45 to 50 minutes. Remove from oven; rest 30 minutes. (The beef will continue to cook as it rests.) Cut beef into ¾ to 1-inch-thick slices, and serve.
HERBED AND SPICED ROASTED BEEF TENDERLOIN

- In a food processor, combine rosemary, thyme, bay leaves, garlic, shallot, orange zest, salt, pepper, nutmeg, and cloves. Run machine while adding oil; process until smooth. Spread mixture evenly over all sides of tenderloins. Place beef in a large glass baking dish. Cover with foil, and refrigerate for at least 6 hours.
- Preheat oven to 400 degrees F (200 degrees C). Place tenderloins on a rack in a large roasting pan.
- Roast beef in preheated oven until meat thermometer registers 140 degrees when inserted into center of beef, about 35 minutes. Remove from oven, and cover loosely with foil; let stand for 10 minutes. Slice beef, and serve.

GARLIC HERB BUTTER BEEF TENDERLOIN ROAST
This Garlic Herb Butter Beef Tenderloin Roast recipe makes a delectable, melt-in-your-mouth cut of meat that is practically tender enough to cut with a butter knife.

- Remove the beef tenderloin roast from the fridge and let it sit at room temperature for 1 hour before roasting. Trim the silver skin (a thin, white layer that should be removed before cooking) and tie the beef tenderloin. If one end is more tapered than the other, bend it under the roast and secure it when tying so the roast is an even thickness throughout.
- Preheat oven to 450 degrees F. Pat the beef tenderloin dry and season by sprinkling with salt and pepper on all sides. Prepare the garlic herb butter by combining the butter, garlic, rosemary, thyme, oregano, salt, and pepper in a bowl and mashing with a fork. Divide in half, setting part of the garlic herb butter aside in a separate bowl for after the roast is done cooking.
- Heat a large cast iron skillet or heavy pan over medium-high heat. Add the olive oil. When the oil is hot, place the roast into the skillet and let it sear on each of three sides for 2-3 minutes. Turn the roast over with tongs to the final side, then turn off the heat and rub the beef tenderloin all over with half of the garlic herb butter mixture.
- Transfer the beef tenderloin to the oven in the skillet it was seared in, or place in a roasting pan first if you don't have an oven-safe skillet.
- Cook for 25-35 minutes, depending on the size of your roast, until an oven-safe meat thermometer inserted into the thickest part of the tenderloin registers between 135 and 140 degrees F for medium doneness. The temperature of the meat will continue to rise another 5 degrees after it is removed from the oven while it is resting before slicing.
- While the meat cooks, combine all of the ingredients for the horseradish sauce in a bowl and keep in the refrigerator until ready to serve.
- Remove the beef tenderloin roast from the oven and slather with the reserved garlic herb butter mixture, then let the meat rest 10 minutes before slicing.
- Serve with horseradish sauce, if desired.

HERB CRUSTED BEEF TENDERLOIN

- Preheat the oven to 400 degrees F.
- Tie the beef with butcher's string and rub with the olive oil. Combine the rosemary, parsley, thyme, and garlic and pat the mixture on the beef. Season the beef with salt and pepper.
- Over high heat sear the beef in an ovenproof skillet, turning to brown on all sides, about 5 minutes. Place the skillet directly into the oven and roast the beef for 20 to 25 minutes. Let the beef rest for 10 minutes before removing the string and slicing.
- Preheat the oven to 375 degrees F.
- Line the bottom and sides of an 8 by 8 by 2-inch baking pan with parchment paper. Rub the parchment paper with butter and a little bit of the garlic. Lay the potatoes in overlapping rows to cover the bottom of the parchment paper. Sprinkle with some of the cheese and garlic. Repeat the layering process until all the potatoes, cheese and garlic have been used.
- Whisk together the eggs, cream, salt, pepper, and nutmeg. Pour the egg mixture over the potatoes. Press down on the potatoes to distribute the egg mixture. Cover the dish with parchment paper and bake for 1 1/2 hours. (Remove the parchment paper from the top for the last 20 minutes to brown the top).
- Allow the flan to rest for at least 15 minutes before turning out of the pan and cutting into serving sizes. This dish is best made a day ahead, then portioned and reheated in 400 degree F oven for 10 to 15 minutes.
- In a medium pot heat the olive oil over medium-high heat, add the onions, and cook for 7 minutes until soft, stirring frequently. Stir in the sugar and salt, and cook for a further 7 minutes. Add the port and vinegar, and bring to a boil. Reduce the heat to medium-low and simmer for 30 minutes or until thickened. Stir in the thyme. LOBSTER STUFFED BEEF TENDERLOIN AND BEARNAISE SAUCE
watching food tv tonight this recipe looked so delicious- i just bought a whole tenderloin today at the Italian market in south Philly, but i had them cut it into fillets for me. I plan to be back there next week, and will have to try this for our holiday party.

- Preheat the oven to 400°F.
- Set up a large steamer.
- Place the lobster tails in the steamer and steam until just cooked through, about 6 minutes.
- Remove the lobster tails from the steamer.
- Cut along the underside of the shell and remove the tail meat whole.
- Set aside.
- In a large skillet, heat 1 teaspoon of the oil over medium-high heat.
- Add the pancetta and cook, stirring, until crisp and the fat is rendered, about 5 minutes.
- Remove with a slotted spoon.
- Drain off all but 2 teaspoons of fat from the pan.
- Add the shallots and celery and cook, stirring, until soft, about 2 minutes.
- Add the garlic and cook, stirring, for 30 seconds.
- Add the mushrooms and a pinch each of salt and pepper, and cook until the mushrooms give off their liquid, 3 to 4 minutes.
- Add the green onions and stir.
- Add the wine, increase the heat, and cook until it has nearly all evaporated, 1 to 2 minutes.
- Add the parsley and stir.
- Remove from the heat, stir in the cooked pancetta, and let cool.
- Spread the butterflied beef, cut side up, flat on a surface.
- Spread the pancetta-vegetable mixture in a line across the meat, about 2 inches from the top, leaving a 1/2-inch border on the sides.
- Lay the lobster tails on top of the mixture, going across the beef.
- Pull the top flap over the lobster tails and roll the meat over the stuffing, jellyroll fashion, and tuck in the ends.
- Tie with kitchen twine every 2 inches.
- Place in a large heavy roasting pan, rub on all sides with the remaining 2 teaspoons olive oil, and season lightly with salt and pepper.
- Place over medium-high heat and sear the meat on all sides, about 6 minutes.
- Place in the oven and roast to desired temperature, 30 to 35 minutes for medium-rare.
- Transfer to a cutting board.
- Tent and let rest for 10 minutes before carving.
- while beef is resting make the Bearnaise sauce:.
- In a small saucepan, combine the shallots, tarragon, white wine, and vermouth.
- Bring to a boil and cook until reduced to 2 tablespoons.
- Remove from the heat, strain, and cool.
- In the top of a double boiler, or in a metal bowl fitted over a pot of barely simmering water, whisk the egg yolks and reduced wine until ribbons start to form.
- Whisking constantly, drizzle in the melted butter a bit at a time until all the butter is added and the mixture is thick.
- Remove from the heat.
- Whisk in the lemon juice, chopped tarragon, salt, and pepper.
- Adjust the seasoning, to taste.
- Cover to keep warm until ready to serve.
- To serve, place in a decorative bowl with a small sauce ladle.
- Remove the kitchen twine and slice thickly.
- Place on a platter, and drizzle with the Bearnaise Sauce.
- Serve immediately.
