GLAZED SIRLOIN WITH LEEKS

Glazed Sirloin With Leeks image

This is based on a recipe from the Jenny Craig "Simple Pleasures" cookbook. I made it tonight and both my husband and I thoroughly enjoyed it. We served the grilled steak and leeks with grilled peaches. The peach sauce was great with the entire meal, bringing out a different flavor in each item. Enjoy!

Roast Pork Loin with Shiitake and Leek Compote image

Categories     Mushroom     Roast     Sauté     Low Cal     Pork Tenderloin     Leek     Red Wine     Winter     Healthy     Gourmet

Number Of Ingredients 9

1 large leek (white and pale green parts only)
a 1-pound center-cut boneless pork loin
1 tablespoon plus 1 teaspoon chopped fresh parsley leaves
1 teaspoon unsalted butter or olive oil
1/2 pound fresh shiitake mushrooms, stems discarded and caps cut into 1/2-inch slices
1/2 teaspoon salt
1/2 cup dry red wine
1/2 cup beef broth
Garnish: fresh parsley sprigs

Steps:

  • Cut leek crosswise into 1/2-inch slices and in a bowl soak in water to cover, agitating occasionally to dislodge any sand, 5 minutes. Lift leek out of water and drain in a colander.
  • Trim any fat from pork. Season pork with salt and pepper and pat with 1 tablespoon chopped parsley. In a 10-inch oven-proof non-stick or cast-iron skillet heat butter or oil over moderately high heat until hot but not smoking and brown pork loin, turning it. Transfer pork to a plate.
  • Preheat oven to 425°F.
  • In fat remaining in skillet cook mushrooms and leek with salt over moderately high heat, stirring occasionally, until liquid mushrooms give off is evaporated, about 5 minutes. Add wine and broth and bring to a boil. Put pork on vegetables in skillet and roast in middle of oven 40 minutes, or until a thermometer inserted in center of pork registers 160°F.
  • Transfer pork to a cutting board and let stand 10 minutes. If vegetable compote is too liquid, cook over high heat, stirring occasionally, until almost all liquid is evaporated. Stir remaining teaspoon chopped parsley into compote.
  • Slice pork thin and serve, garnished with parsley, with compote.

BUTTERNUT SQUASH & LEEKS

Butternut Squash & Leeks image

I found the basic recipe in a magazine, don't know which one. This is a tasty recipe, and really quite simple. The hardest part is the peeling of the squash.

Provided by ala-kat

Categories     < 60 Mins

Time 1h

Yield 6 serving(s)

Number Of Ingredients 7

1 (2 1/2 lb) butternut squash, peeled, seeded & cubed
4 large leeks, white and light green parts
4 leaves fresh rosemary (substitute sage or any of your favorite holiday herb)
coarse salt
coarse black pepper
1/4 cup olive oil
roasted pecan pieces, for a twist

Steps:

  • Preheat oven to 400.
  • Original recipe called for 400 - I think, like the one reviewer mentioned - may be too high. Maybe 375? Another thought is to maybe add the leeks a little into the cookiing -- the squash is definatly going to take longer to cook. Just some tweaking going on here. thanks for looking, and cooking!
  • In a large bowl, mix the squash, leeks, herb, salt, pepper, olive oil and pecans (if your are using them) together.
  • Place on a cookie sheet (may take 2) and cook for appx 1/2 hour.
  • This is some really good stuff!
  • Cook time is 1/2 hour, prep time is going to vary - the squash does take time, but well worth it.
  • Edit to add that after peeling, seeding and halving/quartering the squash, put it in the microwave for 2 to 3 minutes. This will help with dicing of the squash and help even out the cooking time with the leeks.

ROASTED SALMON WITH LEEKS

Roasted Salmon With Leeks image

This is from Irishabroad.com. Their intro to the recipe is "Leeks, a popular member of the onion family, are one of the oldest Irish vegetables and combine well with everything from potatoes to fish. Because of their distinctive flavor, leeks have been used most often as a flavoring, but more and more they're turning up on their own, often as a kind of bedding or nest for meat or fish fillets.

Time 45m

Yield 4 serving(s)

Number Of Ingredients 10

3 large leeks, white part only, thoroughly washed and cut into 1/4-inch slices
2 tablespoons water
1 tablespoon olive oil
1 teaspoon finely shredded lemon zest
2 teaspoons chopped fresh dill
4 salmon steaks, about 1/2 pound each
1/4 teaspoon ground pepper
2 tablespoons lemon juice
lemon wedge (for garnish)
fresh dill (for garnish)

Steps:

  • Preheat oven to 425°F In an ovenproof casserole dish large enough to hold all 4 steaks, combine leeks, water, olive oil, and lemon zest. Cover with aluminum foil and bake 20 minutes, stirring once half way through. Remove from oven, push leeks aside, and add steaks to the dish.
  • Spoon leeks evenly over the fish, season with salt, pepper, and lemon juice. Return to oven and bake, uncovered, until salmon is opaque, about 10 to12 minutes. To serve, divide the leeks onto four plates and top with the salmon steak.

SIMMERED LEEKS

Simmered Leeks image

This is my favorite way to prepare leeks. You can eat it by itself or use as a topping for steak, chicken, or fish, and you can also add sliced mushrooms! Either way, it's a delicious addition to dinner. (The companion recipe to this one is recipe #100417 - or you can add cabbage to this recipe to combine them!)

Time 20m

Yield 2-4 serving(s)

Number Of Ingredients 5

2 1/2 lbs leeks
1/2 teaspoon salt, to taste
1/4 teaspoon fresh ground pepper, to taste
2 tablespoons butter
1 cup low sodium chicken broth or 1 cup vegetable broth, for vegetarian style

Steps:

  • Carefully clean leeks; cut off the stemmy bottoms and the dark green leaves, so you end up with with white and light green parts only (dirt can get in between the leaves, so wash them out well).
  • Cut leeks lengthwise in quarters, then into about 1-inch squares.
  • Heat oil in heavy wide saucepan or saute pan; add leeks, salt, pepper, and stir over low heat for 5 minutes.
  • Add broth and bring to boil, cover and simmer over medium-low heat, stirring often, for about 10 to 15 minutes or until leeks are tender.
  • Raise heat to medium, uncover and let juices reduce to about half.
  • Be careful not to let burn.
  • Taste and adjust seasoning, serve hot.
  • Makes about 2-4 servings, depending on what you're using them for.

  • Preheat oven to 350º and bring a large pot of salted water to a boil. Toast pine nuts on a rimmed baking sheet, tossing halfway through, until golden brown, 5–7 minutes. Let cool. Leave oven on.
  • Trim root end of leeks (leave as intact as possible so they don’t break apart while cooking) and cook in boiling water until meltingly tender (a paring knife should go all the way through with no resistance), 15–20 minutes. Transfer to paper towels to drain; let cool.
  • While leeks are cooking, cook chiles, orange peel, honey, ¾ cup vinegar, and a pinch of salt in a small saucepan over medium-high heat, stirring often, until reduced by one-third, about 5 minutes.
  • Cut leeks in half lengthwise and transfer to a baking dish; season lightly with salt. Pour warm vinegar mixture over leeks. Bake, uncovered, until sauce is reduced to a glaze and leeks have slightly darkened, 25–30 minutes.
