GRILLED GLAZED SALMON

Grilled Glazed Salmon image

This is by far, my favorite company meal. We eat this salmon very often. It is so tender and delicious. Everyone I have served it to has always loved it - even children. Don't be afraid of the cayenne pepper - this is not a spicy dish. The original version of this recipe actually called for more cayenne (3/4 tsp.) which you are welcome to try if you like it a bit more spicy. The salmon called for in this recipe is a whole side of a fish - do not cut up until after it is cooked. The skin acts as a moisture protector on the grill and also helps hold the fish together- it can be removed after cooking, if you prefer. Adapted from a similar recipe in Quick Cooking magazine.

Time 30m

Yield 6-8 serving(s)

Number Of Ingredients 8

1 1/2 cups brown sugar, packed
4 tablespoons butter or 4 tablespoons margarine, melted
6 tablespoons lemon juice
2 1/4 teaspoons dried dill weed
1/2 teaspoon cayenne pepper, to taste
2 -3 lbs salmon fillets, skin on,deboned
lemon-pepper seasoning, to taste
sea salt, to taste

Steps:

  • In a small bowl, combine brown sugar, melted butter, lemon juice, dill, and cayenne pepper, mixing well.
  • Pour 1/2 cup of this sauce into a small saucepan- once the fish is in its final 5 minutes of cooking time, heat this until warm and pour over cooked fish.
  • Set aside the remaining unheated sauce to use for basting the fish as you grill.
  • Place the salmon, skin side down, on a large platter and season with lemon pepper seasoning and sea salt to taste.
  • Note: If your lemon-pepper seasoning already contains salt, then don't add the extra salt.
  • Lightly brush grill grates with some oil and heat grill to medium.
  • Carefully slide salmon off of the platter and onto the grill, skin side down, using a large metal spatula to help.
  • Cover grill and cook fish, undisturbed, for 5 minutes exactly.
  • Baste liberally with the reserved basting sauce, re-cover, and cook another 10-15 minutes- basting every 5 minutes.
  • Use up all of the basting sauce (Don't forgot to heat up the 1/2 cup reserved sauce from before).
  • Fish is ready when it begins to flake and is starting to appear as if milk is seeping out.
  • Carefullly remove to a fresh, clean platter and pour the 1/2 cup sauce you had simmering on the stove over the top of the fish.

NUWAVE OVEN ROASTED PEPPERS NUWAVE/FLAVORWAVE OVENS

Nuwave Oven Roasted Peppers Nuwave/Flavorwave Ovens image

This is from Cook Eat share: from Carolyn S. Weddington. My recipe for roasting small quantities of peppers is simple and quick. We enjoy these roasted peppers in sandwiches, salads and casseroles.

Provided by Starfire aka Wendy

Categories     Peppers

Time 20m

Yield 5 serving(s)

Number Of Ingredients 2

2 -3 medium-to-large fresh sweet bell peppers
vegetable oil

Steps:

  • Wash, core and halve peppers
  • Remove pepper seeds and pith
  • Arrange pepper halves in shallow baking pan skin side up, quartering pepper(s) if necessary to fit one layer in pan
  • Lightly brush or spray oil on skin side of pepper halves, for easier pepper skin removal after roasting
  • Place baking pan on 4" rack
  • Cook on High power 15 minutes
  • (Pepper skins should blister and blacken in spots)
  • Remove NuWave cover; use tongs to rearrange peppers skin side up in pan as necessary to ensure even roasting
  • Re-cover and cook on High power additional 10 minutes or until pepper skins are fairly evenly roasted
  • Leave peppers in pan in covered NuWave Oven about 30 minutes or until cool enough to handle (This step steams the peppers, completing the cooking process. Alternatively, using tongs immediately transfer roasted peppers to bowl and cover bowl with plastic wrap until cool enough to handle)
  • Lay peppers on cutting board and slip off skins, scraping off any remaining skin with paring knife (Pepper skins remove easier while still warm, rather than chilled)
  • Leave peppers halved, quartered or slice in strips to use as desired
  • To freeze prepared peppers after skin removal, wrap cooled portions in plastic wrap, or separate layers with wax paper Place portions in a quart-size freezer bag or other freezer container
  • Label bag or container and freeze.
