EASY GLAZED PORK CHOPS RECIPE BY TASTY

Easy Glazed Pork Chops Recipe by Tasty image

Here's what you need: thick-cut pork chops, paprika, cayenne pepper, garlic powder, black pepper, salt, brown sugar, olive oil

Provided by Tasty

Categories     Dinner

Yield 4 servings

Number Of Ingredients 8

4 thick-cut pork chops
½ teaspoon paprika
½ teaspoon cayenne pepper
½ teaspoon garlic powder
½ teaspoon black pepper
½ teaspoon salt
4 tablespoons brown sugar
olive oil, for frying

Steps:

  • In a bowl, combine your spices (paprika, cayenne pepper, garlic powder, black pepper, and salt).
  • Rub the pork chops in the spices generously.
  • Heat olive oil in an oven-safe skillet over medium/high heat. When the oil is hot, add the pork chops. Cook for about 3-5 minutes on each side or until they have a nice caramelized brownness to them. Once you feel that they are looking browned, add a Tablespoon of brown sugar to each pork chop. Turn each pork chop over, so both sides get some melted brown sugar. (Don't add the brown sugar too early or else the sugar will burn and smoke up the room.)
  • Bake at 350˚F (175˚C) for 15 minutes, making sure the pork chops are cooked through.
  • Before serving, pour the glaze that's formed in the pan over the chops. Serve with your vegetables of choice.
  • Enjoy!

DOUBLE-CUT PORK CHOPS WITH GARLIC BUTTER

Double-Cut Pork Chops with Garlic Butter image

Provided by Food Network Kitchen

Categories     main-dish

Time 9h40m

Yield 4 to 6 servings

Number Of Ingredients 16

1/2 cup kosher salt
1 tablespoon black peppercorns
1 cup sugar
4 sprigs rosemary
4 bay leaves
3 tablespoons plus 1 teaspoon juniper berries
5 tablespoons fennel seeds
1 head garlic, halved crosswise
4 double-cut bone-in pork rib chops (2 inches thick; about 5 pounds total)
Freshly ground pepper
1 head garlic
Extra-virgin olive oil, for drizzling and brushing
4 tablespoons unsalted butter, at room temperature
2 teaspoons chopped fresh rosemary
Juice of 1/2 lemon
Kosher salt

Steps:

  • Make the brine: Combine the salt, peppercorns, sugar, rosemary sprigs, bay leaves, 3 tablespoons each juniper berries and fennel seeds, the garlic and 2 cups water in a large saucepan. Bring to a boil, whisking occasionally, then remove from the heat. Transfer the brine to a large bowl and add 6 cups cold water; let cool completely. Submerge the pork chops in the brine, cover and refrigerate overnight.
  • Preheat a grill to medium. Make the roasted garlic butter: Cut off the top 1/4 inch of the garlic head and set it on a piece of foil. Drizzle with olive oil, then wrap in the foil and transfer to the grill. Cook until the garlic is softened, about 30 minutes; let cool. Meanwhile, remove the pork from the brine and pat dry with paper towels; set aside.
  • Squeeze the roasted garlic cloves from the skins into a food processor. Add the butter, rosemary, lemon juice and a pinch of salt and pulse until smooth. Transfer to a bowl and set aside.
  • Prepare the pork: Grind the remaining 1 teaspoon juniper berries and 2 tablespoons fennel seeds in a spice grinder or finely chop. Season the pork with the ground spices and salt and pepper. Lightly brush the grill grates with olive oil; transfer the pork to the grill. Cover and cook until marked, 15 minutes, rotating the pork 45 degrees halfway through to create a crosshatch pattern. Flip and repeat, cooking until an instant-read thermometer inserted into the center of the pork registers 145 degrees F.
  • Remove the pork chops from the grill and spread the roasted garlic butter on top. Let rest at least 10 minutes.

  • Stir the water, salt, and brown sugar until the salt dissolves, then pour over the ribeye pork chops. Brine the chops in the refrigerator for at least one hour, and up to eight hours. Right before lighting the grill, stir the glaze ingredients in a small bowl until smooth. (I use a Pyrex 2 cup measuring cup as my bowl – the handle is easier to grab when working over the grill.)
  • Set the grill for indirect high heat (450°F+): Prepare the grill for cooking with two zones – half the grill with direct high heat, and the other half with no heat – then brush the grill grate clean. On my Weber Summit, I turn all the burners to high, close the lid, and let the grill preheat for ten to fifteen minutes. Then I brush the grates clean with my grill brush, leave two burners on high, and turn the other burners off. (I want an internal grill temperature of 400°F or higher).
  • Sear the chops over direct high heat: Remove the chops from the brine and pat them dry with paper towels. Put the chops on the grill grate, directly over high heat. Sear the chops, flipping every minute or two, until they are browned and crusty on both sides, about 8 minutes. (If you are cooking on a gas grill, rotate the steaks 90 degrees after the second flip to get a diamond crosshatch pattern on the steaks. This doesn’t matter as much with a charcoal grill – charcoal will brown the steaks regardless of the grate direction.)
  • Indirect-roast the chops over indirect heat to 145°F: Move the chops to the indirect heat side of the grill, away from the fire, bone side down, and then brush with a coat of glaze. Close the lid and cook the chops; open the lid every five minutes, quickly brush the chops with another coat of glaze, and close the lid again. The chops are done when they reach an internal temperature of 145°F, about 20 minutes. Let the chops rest for at least 3 minutes, then serve.
