2 slices white sandwich bread (, crusts removed, chopped into small cubes (Note 1))
1 onion (, small (brown, white or yellow))
300g / 10 oz ground beef (mince)
300g / 10 oz ground pork (mince) (, or sub with more beef (Note 2))
1 egg
1/4 tsp ground nutmeg (, preferably freshly grated)
1/4 tsp All Spice powder ((Note 3))
1/4 tsp black pepper
3/4 tsp salt
1 tbsp oil
40g / 3 tbsp butter (, unsalted)
3 tbsp flour
2 cups beef broth/stock ((salt reduced), or sub with chicken)
1/2 cup heavy / thickened cream ((Note 4))

Steps:

  • Grate onion using a standard box grater (see video).
  • Scrape onion and juices into bowl. Add bread and mix well - onion juice should make bread soggy (if not, add a tiny splash of milk). Set aside to soak for 1 minute.
  • Add remaining Meatball ingredients EXCEPT oil. Mix well.
  • Using a tablespoon measure and measure out a heaped tablespoon (or use ice cream scooper which is what I do), dollop on work surface. Repeat with remaining mixture: 25 - 30 meatballs. Then roll into shape.

1 lb lean ground beef ((10%-15% fat))
1 lb ground pork
1 small onion (grated on star side of box grater)
2 garlic cloves (minced)
1 large egg
1/3 cup panko crumbs
1/4 cup whole milk
½ tsp salt
¼ tsp ground black pepper
¼ tsp ground allspice
¼ tsp ground nutmeg
2 Tbsp olive oil ((cooking oil), or as needed)
4 Tbsp unsalted butter
3 cups regular beef broth
1 cup heavy whipping cream
3 Tbsp all-purpose flour
½ tsp Dijon mustard
salt and pepper, to taste

Steps:

  • In a bowl combine the panko crumbs with milk. Add remaining ingredients for the meatballs and mix well. Shape into 24 meatballs.
  • Add 2 Tbsp oil to a large skillet over medium heat. Once hot, cook meatballs in 2 batches until golden brown and cooked through (6-7 minutes), turning as needed. Add more oil as needed. Remove from the skillet and cover to keep warm.
  • In the same skillet, melt the butter. Quickly whisk in the flour and cook until golden.
  • Stir in the broth, heavy whipping cream, Dijon and season with salt and pepper to taste. Bring the sauce to a simmer and cook it thickens.
  • Add back the meatballs and toss in the gravy sauce. Cook until meatballs are heated through.

This recipe was one of my mother's favorites, and now my family enjoys it as well. The beauty of this recipe is that the meatballs need not be browned. The gingersnaps are what gives the gravy its rich taste. I have, at times, substituted fresh ground turkey for the beef, and it works just as well.

1 large egg, beaten
3/4 cup soft bread crumbs
1-3/4 cups water, divided
1/4 cup chopped onion
1/2 teaspoon salt
Dash pepper
1 pound lean ground beef (90% lean)
2 beef bouillon cubes
1/3 cup packed brown sugar
1/4 cup raisins
2-1/2 teaspoons lemon juice
1/2 cup coarsely crushed gingersnaps (about 10 cookies)
Cooked noodles

Steps:

  • Combine the egg, bread crumbs, 1/4 cup water, onion, salt and pepper; crumble beef over mixture and mix well. Shape into 2-1/2-in. balls., In a large skillet, bring remaining water to a boil. Add bouillon, brown sugar, raisins, lemon juice and gingersnaps. Stir until thoroughly combined. Add meatballs to skillet. Simmer, uncovered, for 20 minutes or until meat is no longer pink. Stir occasionally. Serve with noodles.

1 medium onion, chopped
1-1/2 cups dry bread crumbs
1 teaspoon salt
2 pounds ground beef
2 tablespoons canola oil
SAUCE:
3-1/2 cups tomato juice
1 cup packed brown sugar
10 gingersnaps, finely crushed
1/4 cup white vinegar
1 teaspoon onion salt

Steps:

  • In a large bowl, combine the eggs, onion, bread crumbs and salt. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. , In a large skillet, brown meatballs in batches in oil. Transfer to a greased 13-in. x 9-in. baking dish., In a large saucepan, combine the sauce ingredients. Bring to a boil over medium heat, stirring until cookie crumbs are dissolved. Pour over meatballs. , Bake, uncovered, at 350° for 40-45 minutes or until meat is no longer pink.

Our traditional holiday meal is sauerbraten and gravy, butter-sauteed homemade egg noodles, potato balls, sweet and sour red cabbage, and freshly cooked apples. A lot of work, but worth it once a year! This is a quick recipe to enjoy the sauerbraten flavor without waiting 5 days for a beef roast to marinate. And you'll have plenty of gravy to spoon over your buttered egg noodles and potatoes.

1 pound lean ground beef
½ cup minced onion
⅓ cup gingersnap cookie crumbs
¼ cup water
½ teaspoon salt
¼ teaspoon ground black pepper
2 cups beef broth
½ cup gingersnap cookie crumbs
2 tablespoons gingersnap cookie crumbs, or more as needed
½ cup apple cider vinegar
1 tablespoon white sugar, or more to taste
3 tablespoons raisins

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and place a baking rack on top. Spray the rack with cooking spray.
  • Combine ground beef, onion, gingersnap crumbs, water, salt, and pepper in a medium bowl. Shape into 24 meatballs using a tablespoon-sized cookie scoop. Place the meatballs on the prepared baking rack.
  • Bake in the preheated oven until a meat thermometer inserted into the center of a meatball reads 160 degrees F (71 degrees C), 18 to 20 minutes.
  • While the meatballs are baking, whisk beef broth, 1/2 cup plus 2 tablespoons gingersnap crumbs, vinegar, and sugar together in a medium saucepan. Cook over medium heat, stirring occasionally, until gravy thickens, 5 to 10 minutes. Add more gingersnap crumbs for a thicker gravy, or some water for a thinner consistency.
  • Stir cooked meatballs and raisins into the gravy. Cover and simmer until flavors combine, about 10 minutes.

The unusual and very tasty sauce for these meatballs contains crushed gingersnaps. This is a scaled down adaptation of a recipe that I found in one of my Taste Of Home magazines. I think it is good served with macaroni and cheese and a crisp salad.

vegetable oil

Steps:

  • Combine the first five ingredients.
  • Shape into meatballs any size you choose.
  • Brown the meatballs in a little vegetable oil.

SWEDISH MEATBALLS (KOTTBULLAR)

A genuine, and one of the most quoted Swedish recipes for meatballs. With a few variations, it is found in almost every Swedish cookbook. This variety of meatballs is always served hot, with cream sauce and mashed potatoes, in contrary to the small ones served cold that one finds on the Smorgasbord. At Christmas, some Swedes like a little "Christmas touch" and add a little allspice and ginger. If you're really ambitious, you'll buy whole meat and grind it yourself. It makes a great difference!

7 ounces ground veal
3 1/2 ounces ground pork
1 egg
1/2 cup water
1/2 cup heavy cream

2 small boiled potatoes, cold and mashed

1/4 teaspoon epice riche (optional)
allspice (only at Christmas)
ginger (only at Christmas)
4 -5 tablespoons butter

Steps:

  • Fry the onion light yellow in a little butter.
  • Soak the breadcrumbs in the liquid.
  • Mix everything well and add spices to taste.
  • Make 1- to 1 1/2-inch meatballs with the help of two wet spoons.
  • Put them on a plate coated with a little flour and fry them slowly on all sides in lots of butter (putting the meatballs in the freezer for a while before frying makes them firmer).
  • Place the meatballs on a hot plate, fry the flour in the remaining fat and pour in the stock and the cream.
  • Boil for a few minutes.
  • Add soy, salt and pepper to taste and pour the hot sauce over the meatballs.
  • Serve hot with mashed potates, pickled cucumber and preserved lingonberry or cranberry.

400g lean pork mince
1 egg, beaten
1 small onion, finely chopped or grated
85g fresh white breadcrumbs
1 tbsp finely chopped dill, plus extra to serve
1tbsp each olive oil and butter
2 tbsp plain flour
400ml hot beef stock (from a cube is fine)

Steps:

  • In a bowl, mix the mince with the egg, onion, breadcrumbs, dill and seasoning. Form into small meatballs about the size of walnuts - you should get about 20.
  • Heat the olive oil in a large non-stick frying pan and brown the meatballs. You may have to do this in 2 batches. Remove from pan, melt the butter, then sprinkle over the flour and stir well. Cook for 2 mins, then slowly whisk in the stock. Keep whisking until it is a thick gravy, then return the meatballs to the pan and heat through. Sprinkle with dill and serve with cranberry jelly, greens and mash.
