2 teaspoons grated fresh ginger
1 teaspoon minced garlic
1/2 lb bay scallop, patted dry-lightly seasoned with salt and pepper
1/2 lb medium shrimp, cleaned and peeled lightly seasoned with
salt and pepper
1 red bell pepper, seeded and cut into thin strips
1 small onion, thinly sliced
1 teaspoon sugar
4 cups snow peas, strings removed and cut in half on the diagonal (1/2 lb.)
1 1/2 teaspoons dark sesame oil (to taste)
1/2 cup toasted sliced almonds
soy sauce
fresh cilantro

Steps:

  • In a large nonstick skillet, heat 1 tablespoon oil over medium high heat.
  • Add ginger, garlic, scallops & shrimp and sauté just until firm and opaque in the center, 2-3 minutes.
  • Transfer to a plate.
  • Cook onions, peppers, sugar and snow peas in 1 tablespoon olive oil till tender crisp.
  • Add scallops and shrimp back to pan for 2 more minutes.
  • Season with sesame oil and soy sauce.
  • Plate over jasmine rice and top with toasted almonds.
  • Garnish with Cilantro.

2 tablespoons reduced-sodium soy sauce
2/3 cup water
4 teaspoons canola oil, divided

  • Mix cornstarch, soy sauce and water. In a large nonstick skillet, heat 2 teaspoons oil over medium-high heat; stir-fry scallops until firm and opaque, 1-2 minutes. Remove from pan., In same pan, heat remaining oil over medium-high heat; stir-fry snow peas, leeks and ginger until peas are just crisp-tender, 4-6 minutes. Stir cornstarch mixture; add to pan. 2 lb shrimp
1 lb sea scallop
1 teaspoon lemon juice
1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon pepper

1 ½ tablespoons cajun seasoning, or old bay
1 teaspoon white wine vinegar
½ cup sugar
6 tablespoons butter
2 chicken bouillon cubes
1 tablespoon garlic, minced
1 cup water
2 tablespoons milk
½ cup sugar snap peas

Steps:

  • Prepare marinade and marinate shrimp and scallops in the fridge for 3-4 hours.
  • Mix together skillet ingredients (except milk and snow peas) in a wide skillet on medium-high. Then, add shrimp and cook in sauce for 3 minutes per side. let rest 3 min each side then flip in sauce
  • Add snow peas and milk and let simmer. Remove from heat and let sit for 5 minutes.
  • Cook again on low heat until sauce thickens and reduces down.
  • Serve plain or alongside steamed rice.

⅓ cup chicken broth
2 teaspoons rice wine

In 2005, Julia Moskin wrote an excellent article about woks, the best sort for American kitchens (a 14-inch heavy-gauge carbon-steel wok with a flat bottom) and how to season it. This recipe, adapted from Grace Young's book, "The Breath of a Wok," ran alongside it. It is simple, fresh and fast. It cooks in under 5 minutes, so start your pot of rice as you clean the shrimp and chop the ginger, garlic and scallions.

1 tablespoon plus 1/4 teaspoon salt
1 pound large shrimp, peeled and deveined
1/3 cup chicken broth
2 teaspoons rice wine or dry sherry
1 1/2 teaspoons soy sauce
1 1/2 teaspoons cornstarch
3/4 teaspoon sugar
1/8 teaspoon ground white pepper
1 tablespoon plus 2 teaspoons vegetable oil
2 tablespoons minced garlic
1 teaspoon minced ginger
6 ounces snow peas, strings removed, washed and dried
1 scallion, chopped

Steps:

  • In a large bowl combine 2 cups cold water and 1 tablespoon salt, stirring until salt is dissolved. Add shrimp, and let stand five minutes. Rinse shrimp under cold running water, and set to dry on paper towels. With more towels, pat shrimp dry.
  • In a bowl, combine broth, wine, soy sauce, cornstarch, sugar and pepper.
  • Heat a wok over high heat. To test heat flick a few drops of water into wok. When water vaporizes within 2 seconds, wok is hot. Swirl in 1 tablespoon oil around sides of wok. Add shrimp, spreading them in a single layer, so they have contact with hot metal. Stir-fry for 2-3 minutes or just until pink, tossing them with a wok shovel or spatula. Add remaining 2 teaspoons oil, garlic and ginger, and stir-fry 5 seconds. Add snow peas and remaining 1/4 teaspoon salt, and stir-fry 1 minute more.
  • Stir cornstarch mixture, swirl it in around sides of wok, and bring to a boil. Stir-fry just until shrimp are cooked through and sauce has thickened, about 30 seconds more. Stir in scallions, and serve immediately.

Seared Sea Scallops With Ginger-Lime Butter image

Day-boat scallops, the kind that are dry-packed (never frozen or dosed with preservatives), are what you want for this decadent but very simple dish. The scallops are seared on cast iron, but gradually, for a crisp, well-browned surface that intensifies their natural sweetness. Ginger, lime and hot pepper enhance the rich meatiness of all fresh seafood, and here especially so. A roasted sweet potato and a pile of blanched bok choy complete this quintessentially elegant, fast-food meal.

Number Of Ingredients 10

4 baby sweet potatoes (or use 2 larger sweet potatoes)
4 to 6 large dry-packed fresh sea scallops, about 12 ounces
Salt and pepper
3 tablespoons unsalted butter, at room temperature
1 tablespoon grated peeled ginger
1 fresh hot red chile pepper, finely chopped
Zest and juice of 1 lime
Olive oil, for searing
8 ounces baby bok choy, washed, leaves separated and stems discarded (or use spinach or chard leaves)
2 tablespoons roughly chopped cilantro, for garnish (optional)

Steps:

  • Heat oven to 400 degrees. Wash sweet potatoes and wrap them tightly in foil. Roast until tender, 45 minutes to 1 hour. (If you are using larger sweet potatoes, they may require 15 minutes more in the oven.)
  • Using a paring knife, remove the small hard "foot" from the edge of each scallop. Pat scallops dry and season on both sides with salt and pepper.
  • Put on a medium pot of salted water to boil for the greens.
  • Meanwhile, make the ginger butter: Combine butter, ginger, chile and lime zest and juice and stir together until well incorporated. Season with salt to taste. Set aside.
  • Take a cast-iron skillet large enough to hold the scallops without crowding and place over medium-high heat. Add a film of olive oil. When the oil is nearly smoking, add the scallops in one layer and let them sizzle. Reduce heat to medium and continue to cook for at least 5 minutes. Use a small spatula to check the scallops as they brown, allowing them to color gradually. They should be quite crisp and well caramelized. Turn off heat and flip scallops. Leave in pan until firm to the touch.
  • While the scallops are cooking, blanch the bok choy: Cook it for 1 minute in the salted boiling water, then drain and blot on a kitchen towel. Keep warm.
  • Remove and place scallops, browned side up, onto warmed serving plates. Surround with the bok choy leaves and halved or sliced sweet potatoes.
  • Quickly warm the butter in the cast-iron pan and spoon over everything. Sprinkle with cilantro if desired.

1/4 cup honey
1/4 cup unseasoned rice vinegar
2 teaspoons fresh ginger, minced
2 teaspoons soy sauce
2 teaspoons chili paste
1 teaspoon oriental sesame oil
1 teaspoon orange zest
2 tablespoons fresh cilantro
2 tablespoons of fresh mint
2 -3 packages udan Asian noodles (may be hard to find, so 1 lb. linguine will work perfectly)
1/2 lb shrimp
1/2 lb scallops

Steps:

  • Combine all ingredients (except shrimp and scallops) and stir gently.
  • I generally will make the sauce the night before to allow the flavors to soak in together, but letting the sauce sit for an hour will do perfectly as well.
  • Cook shrimp and scallops in sauce for about 10 minutes.
  • Mix sauce with noodles and enjoy!
