Steps:

  • In a pitcher combine the sake and ginger ale. Pour into martini glasses and garnish with sugar flowers.

2 to 3 maraschino cherries plus 1 1/2 ounces (3 tablespoons) cherry juice
2 to 3 ounces (4 to 6 tablespoons) ginger beer
1 lime wedge

Steps:

  • Fill a Collins glass with ice, pour in the limeade and cherry juice and top with the ginger beer. Garnish with the maraschino cherries and a lime wedge.

1 cup unsweetened pomegranate juice
1/2 cup plus 1 tablespoon granulated sugar
1 teaspoon fresh lemon juice
1 ounce white tequila
1/2 ounce orange liqueur
Juice of 1 lime plus 1 lime slice, for serving
1/2 cup good-quality ginger ale

Steps:

  • For the grenadine syrup: In a small saucepan over medium heat, stir together the pomegranate juice and sugar. Bring to a simmer and cook, stirring occasionally, until thick enough to coat the back of a spoon, about 25 minutes. Remove from the heat and stir in the lemon juice. Let cool. (Makes about 3/4 cup; extra syrup can be stored in an airtight jar in the refrigerator for up to 2 weeks.)
  • For the spritzer: Add the tequila, orange liqueur, lime juice and 2 tablespoons grenadine syrup in a rocks glass and mix until combined. Fill with crushed ice. Add the ginger ale, drop in a lime slice and serve.

  • Fill four glasses with ice; add 1/3 cup Pinot Noir and 1/3 cup ginger ale to each glass. Add 1 1/2 teaspoons cherry-flavored liqueur to each glass. Stir to combine and serve with rosemary sprigs, if desired.

A little sweet, lightly sour and a touch briny: This spritz is inspired by the salty lemonade found in Vietnam as a way to beat the heat. Without ice and ginger beer, this mix keeps well in the fridge, so consider making a large batch to help get you through the summer. If adding ginger kombucha, bear in mind that, though most brands are not legally considered alcoholic by the Alcohol and Tobacco Tax and Trade Bureau, they do contain trace amounts (up to 0.5 percent). If you're strictly abstaining, opt for something like non-alcoholic ginger beer or ginger ale.

few handfuls of crushed ice
½ tsp sugar syrup
1 lemon wedge, plus 1 slice to garnish
150ml golden ale
150ml prosecco
75ml ginger beer

Steps:

  • Fill a tall glass or chalice with a few handfuls of crushed ice, then tip in the sugar syrup. Squeeze the lemon wedge over the glass to express the oils and drop it in. Pour in the golden ale and prosecco, and stir to combine.
  • Top up the drink with the ginger beer. Make a small cut in the lemon slice and secure it onto the rim of the glass to garnish.
