MANGO CHUTNEY (BEST EVER!)



Mango Chutney (BEST EVER!) image

Delicious as sweet and spicy spread or dipping sauce and wonderful added to your curry sauces!

Number Of Ingredients 15

1 tablespoon cooking oil ((neutral tasting))
2 teaspoons fresh ginger (, finely minced)
2 cloves garlic (, finely minced)
1 red chili (, sliced (optional: remove seeds and membrane for less heat))
2 teaspoons whole nigella seeds
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon turmeric
1/4 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
4-5 large mangoes ((about 250-300 grams each), peeled and diced)
2 cups white granulated sugar
1 cup white vinegar

Steps:

  • Heat the oil over medium-high in a medium stock pot. Saute the ginger, garlic and red chilies for a minute. Add the spices and saute for another minute. Add the diced mangoes, sugar, salt, and vinegar and stir to combine. Bring it to a rapid boil and reduce to medium-low. Steady simmer for 1 hour. Remove from heat and allow it to cool. If you prefer smaller chunks, use a potato masher to mash the mixture to the desired consistency.
  • For storage, chutney will keep for a while because of the high acidity content. A conservative time frame would be up to 2 months in the fridge (in a sealed jar) or for several months in the freezer. Canning Instructions (for even longer shelf-life): Pour the hot mixture directly into sterilized jars and process in a water bath for 10 minutes. Let sit undisturbed for 24 hours, then store in a dark, cool place. Will keep for at least a year.This makes roughly 2 1/2 pints of mango chutney.

4 firm mangoes, totalling 1.4 kg (3lb)
350 g (12oz) light muscovado sugar
Large pinch cumin seeds
4 cardamom pods, split open
1 tsp. ground turmeric
1 whole clove
5 cm (2in) piece fresh root ginger, peeled and finely grated
400 ml (14fl oz) distilled malt vinegar
3 g large garlic cloves
1 large onion, finely chopped

Steps:

  • Peel the mangoes with a vegetable peeler. Cut all the flesh away from the stone, then chop into bite-sized chunks and put into a large bowl. Stir in the sugar, cover and leave to marinate overnight.
  • Put the mixture into a large pan, then add the other ingredients. Bring to the boil, reduce the heat and simmer gently for about 1½hr, stirring occasionally, until the mango is translucent and most of the excess liquid has evaporated.
  • Remove the pan from the heat and leave the chutney to cool for 10min. Ladle it into sterilised jars, top with a waxed disc and seal while hot.
  • Now, just assemble Arrange the labelled jars of chutney in a small wicker basket lined with coloured tissue paper.

When my two fig trees are in season, I struggle to cope with the amount of fruit they produce..........a rather nice problem I have to admit! We eat figs fresh with nearly every meal; I make jams, conserves and also bottle the fruit in liquor. However, this is one of my favourite ways of using some of my fresh figs, and this chutney is just amazing when served with the cheese board or with cold meats and charcuterie. Ginger has a natural affinity with fresh figs and gives this chutney an extra layer of flavour. This chutney does not keep as long as some other fruit chutneys, but that never seems to be a problem, as we eat most of it quite quickly and I always have numerous requests from family and friends for a pot or two when I make it! This intense chutney really captures the fruit's rich sweetness perfectly and is capable of turning a simple toasted sandwich into something rather special.......it's great with all types of cheese.

850 g fresh figs, chopped
400 g dried figs, chopped
3 large red onions, finely chopped
3 medium bramley apples
40 g fresh gingerroot, cut into fine matchsticks
2 teaspoons ground allspice
1 pinch dried chili pepper flakes
2 teaspoons finely grated lemon zest
700 g demerara sugar
2 teaspoons salt
800 ml red wine vinegar
2 teaspoons fresh ground black pepper

Steps:

  • Combine all the ingredients in a large saucepan. Bring to the boil, reduce the heat, and simmer, covered, for 30 minutes.
  • Uncover the pan and continue simmering for about an hour and a half, stirring often, until the chutney is reduced, thick and richly flavoured. If the chutney becomes too dry, add a splash of water. Taste and correct the seasoning, adding brown sugar, vinegar, or chilli flakes as needed. (Sometimes, depending on the water in the figs, this chutney can take over 2 hours to reduce.).
  • Spoon into sterilised jars and seal. The chutney will keep for up to 8 or 9 months, unopened, in a cool, dark place. Once opened, refrigerate and use within 4 weeks.

GINGER MANGO CHUTNEY

1 (12-ounce) jar ginger preserves
1/8 teaspoon cayenne pepper
1 cup prepared chopped mango (available in the prepared produce fruit section)
1 pinch salt
1 (1-pint) mason jar

Steps:

  • Pop the mango, while still in the container, into the freezer for at least 2 hours.
  • While the mango is freezing, wash the mason jar and lid thoroughly.
  • In a small saucepan, over medium-low heat, add ginger preserves and cayenne pepper. Once the preserves begin to boil, turn off the heat and pull saucepan off to the side. Stir in frozen mango and salt. When the chutney is at room temperature, pour it into the jar and cover with a lid. Place in refrigerator.
  • Chutney will last up to 1 month in refrigerator.

2 teaspoons whole allspice
1 teaspoon whole black peppercorn
1 teaspoon black cardamom seed
4 cups apple cider vinegar
1 cup white balsamic vinegar
2 lbs fresh figs (firm between green and ripe, stems removed and chopped in 8ths)
1 sweet onion, finely chopped (Walla Walla or equivalent)
1 red bell pepper, diced
4 chili, diced
1 firm green mango, seeded and cubed
1 apple, cored removed and diced
1 cup raisins
1 lb light brown sugar
2 1/2 ounces crystallized ginger, chopped finely
3 tablespoons orange zest
2 cinnamon sticks
1 teaspoon dark n yellow mustard seeds
2 teaspoons salt

Steps:

  • Grind the whole allspice, whole black pepper, and black cardamom seeds. In a large saucepan over high heat, combine all the ingredients. Bring to a boil. Reduce heat and simmer until mixture has thickened to form thick syrup. Then simmer for 60 more minutes. Stirring often toward end of cooking to prevent burning.
  • Optional: Save 2 cups of chopped fruits and pepper to add halfway through cooking for a chunkier chutney.
  • Remove the cinnamon sticks and ladle into hot sterilized jars until 1/4 inch from the top.
  • Seal with lids and set the jars in a pot of hot water bath for 20 minutes.
  • Label and store in a cool dark place for 3 weeks at least for flavors to develop.
  • Makes 8-9 1/2 pint jars.

31⁄4 large ripe mangoes , about 1kg/ 2 1⁄4lb
2 tbsp sunflower oil
2 onions , halved and thinly sliced
thumb-sized piece fresh root ginger , peeled and cut into thin shreds
10 green cardamom pods
1 cinnamon stick
½ tsp cumin seed
½ tsp coriander seed , lightly crushed
¼ tsp black onion seeds (Nigella or Kalonji are good)
½ tsp ground turmeric
2 Bramley apples , about 500g/1lb 2oz, peeled, cored and chopped
1 large red chilli , deseeded and finely sliced
375ml white wine vinegar
400g golden caster sugar
1 tsp salt

Steps:

  • Cut each mango in half down the sides of the flat stone that runs through the centre of the fruit, so that you end up with 2 fleshy halves. Now take each mango half and cut into the flesh, making quite chunky diagonal pieces - take care not to cut through the skin. Turn each half inside out, then slice away the chunks of mango that stand proud from the skin. Cut the flesh from around the stones, trim off the skin and chop the flesh.
  • Heat the oil in a large, deep sauté pan, add the onion and fry for a few mins until starting to soften. Stir in the ginger and cook, stirring frequently, for about 8-10 mins until the onion is golden. Stir in all of the spices, except the turmeric, and fry until toasted.
  • Stir in the turmeric, add the apple and pour in 500ml water, then cover the pan and cook for 10 mins. Stir in the mango and chilli, then cover and cook for 20 mins more until the apple is pulpy and the mango is tender.
  • Pour in the vinegar, stir in the sugar and salt, then leave to simmer uncovered for 30 mins, stirring frequently (especially towards the end of the cooking time so that it doesn't stick) until the mixture is pulpy rather than watery. Spoon into sterilised jars.

4 lbs mature green mangoes
1 large onion
8 ounces green gingerroot, peeled
2 garlic cloves
3 lbs brown sugar
2 ounces yellow chilies
3 teaspoons salt
4 cups vinegar
2 lbs currants
2 lbs raisins

Steps:

  • Force mangoes, onion, gingerroot, and garlic through food chopper, using coarse blade.
  • Add remaining ingredients and let stand overnight.
  • Bring to boil and boil rapidly until thick.
  • Pour into hot sterilized pint jars, and seal.
  • Makes about 8 pints.
  • Enjoy!
