HOMEMADE GRANOLA WITH GINGER
This delicious homemade granola has loads of nuts for protein and is made with maple syrup.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Mix rolled and quick-cooking oats, pecans, walnuts, almonds, and pepitas together and spread out on a sheet pan.
- Bake in the preheated oven for 10 minutes. Remove from the oven and transfer to a large mixing bowl. Reduce oven temperature to 225 degrees F (110 degrees C).
- Mix maple syrup, coconut oil, crystallized ginger, turmeric, ground ginger, cinnamon, salt, cardamom, and pepper together in a smaller bowl and pour over the oats and nuts. Mix thoroughly, then pour mixture back onto the baking sheet.
- Bake in the oven for 30 minutes. Turn oven off and leave granola in for 1 hour.
- Remove from the oven and let cool to room temperature, about 30 minutes.

CRUNCHY GRANOLA
This stuff is addicting! I don't remember where I got the recipe, but I have been making this since I was a teenager. The measurements for the oats and coconut are just guidelines; you can adjust it to your liking or what you have on hand. Let me know how you like it.

Steps:
- Preheat oven to 325 degrees F. In a large bowl, mix together the ingredients for Oat Mixture.
- In a small to medium bowl, separately mix together the first 4 ingredients for Oil Mixture.
- Add Oil Mixture (not the honey yet) to the Oat Mixture; blend well.
- Then add in the honey. Mix well.
- Spread thinly and evenly on cookie sheets (for ease of preparation, use rimmed cookie sheets).
- Bake at 325 d F for 30 minutes, stirring occasionally until golden (stir @ every 12-15 minutes).
- After baking, remove from oven and let granola cool on cookie sheets.
- Remove granola from cooled pans and it's ready to eat, or store covered for about 2 weeks.
- Makes a nice food gift.
- Yield is approximate & depends on amounts used.
QUICK 'N' CRUNCHY GRANOLA
Granola is my family's favorite cereal but we rarely buy it from the store because it's so expensive. So I decided to try and make my own. We will never buy granola from the store again! This is so easy and delicious; everyone should try it! Some of my family members mix in raisins or almonds just before eating (no need to bake them.) But remember you MUST STIR the granola after it bakes for 10 minutes. I didn't read the recipe carefully and burnt my first batch. Enjoy.;)

- Melt butter in microwave.
- Heat honey in microwave for 45 seconds. Combine all ingredients in a large bowl.
- Pour into a 15 x 10 baking pan and spread evenly.
- Bake at 350 for 20 minutes, stirring after the first 10 minutes.
- Cool completely.
- Store in an air tight container for up to one week.
LEMON GINGER GRANOLA
A little bit sweet, a little bit fresh and invigorating. Adapted from a higher-fat recipe (this cuts the fat in half with no loss in flavor). It is a somewhat "dry" granola, due to the low amount of oil. Add more fruit juice to make it "clump up" when baking.

- Preheat oven to 250°F.
- In a large bowl or small vat combine the oats, germ, nuts, and brown sugar.
- In a separate bowl, combine honey, oil, lemon stuff, powdered/grated ginger, and salt.
- Combine both mixtures- tossing very very well (for 3-5 minutes) to distribute the goo evenly and pour onto as many sheet pans as you can find.
- Bake for 90 minutes, stirring every 15 minutes to achieve an even color.
- About halfway through the process your kitchen and house will start to smell heavenly and your mouth will be watering.
- While the granola is baking, chop the candied ginger down to "raisin" size or smaller- this is a pain as it is very sticky, and it doesn't work well in the food processor, unfortunately.
- Remove granola from oven and transfer into a large bowl.
- Add candied ginger and mix until evenly distributed.
- Makes a whole boatload.
- Keeps- probably a month, but it won't take you that long to eat it, will it?

- Line 2 cookie sheets with parchment paper.
- Combine brown sugar and water in a 4 cup microwave proof cup.
- Microwave on high 5 minutes until sugar is completely dissolved.
- Remove from microwave and stir in vanilla and salt.
- In large mixing bowl, mix oats, nuts, and brown sugar mixture.
- Mix thoroughly.
- Spread onto cookie sheets and bake 45 minutes-1 hour until golden brown.
- When granola has cooled completely, add fruits if you wish and store in airtight container.

CRUNCHY SPICE GRANOLA
The best source that I know of for most of the ingredients in this recipe is Whole Foods Market, but you should be able to find them in other health food stores or better supermarkets. You can be fairly flexible about the amount of nuts and dried fruits, but remember, they provide most of the good flavor; the more fruits and nuts you include, the better it tastes, the more rolled oat, the cheaper it is to make. This recipe makes a real big batch, but it can be halved if desired. It keeps well. This can be a very expensive recipe, but I still think it is worth it !!! A little goes a long way!

- Anything else that might look good to you.
- Additional quantities of any of the above.
- Combine first nine ingredients, honey through salt, in a medium saucepan.
- Simmer over low heat for about 10-15 minutes, stirring occasionally.
- Taste, and adjust spices if desired; if your spices are old, you might have to add a little more.
- Preheat oven to 175 degrees F.
- Combine next six ingredients, oats through walnuts, plus half of the dried coconut and half of mixed dried fruit in a very large oven-proof bowl.
- Toss thoroughly with warm honey mixture.
- Bake for about 45 minutes, stirring ever 15 minutes.
- Add remaining coconut and dried fruit, and bake another 30 minutes, stirring every 15 minutes.
- Remove from oven, test for dryness (mixture should be fairly dry; bake a little longer if it isnt.), allow to cool completely, and seal in plastic bags.
- Will keep for weeks at room temperature, months refrigerated (bring to room temperature before serving), and God only knows how long frozen.
