CRANBERRY COMPOTE RECIPE

Sweet with a citrusy edge, this cranberry compote is delicious paired with Roasted Turkey. Ginger gives just the right amount of spices. You can make it ahead and store it in the fridge for about a week, or tuck it into the freezer for up to 6 months. Just warm it up in a saucepan before serving.

12 ounces cranberries ((fresh or frozen))
1 tablespoon orange zest
1 cup orange juice
2 tablespoons orange-flavored liqueur ((such as Grand Marnier))
1 (1-inch knob) ginger
3/4 cup Grade A dark maple syrup
1/2 teaspoon ground coriander

Steps:

  • Place all the ingredients into a medium saucepan, and then turn the heat to medium-high. Bring to a boil, and then turn the heat down to medium. Simmer until the cranberries pop, and the sauce thickens - about 15 minutes. Pluck out the ginger with a spoon, and then serve the sauce.

6 medium Bosc pears
2 medium navel oranges, peeled and sectioned
1/3 cup raisins
1 cup water
3/4 cup packed brown sugar
Dash salt
3 tablespoons butter

Steps:

  • Place pears on their sides in a greased 13-in. x 9-in. baking dish; arrange oranges and raisins around pears. In a small bowl, combine the water, brown sugar and salt. Pour over fruit; dot with butter., Cover and bake at 325° for 55-65 minutes or until pears are tender, basting occasionally. Halve and core pears; top with fruit mixture.

5 medium apples, peeled and chopped
3 medium pears, chopped
1 medium orange, thinly sliced
1/2 cup dried cranberries
1/2 cup packed brown sugar
1/2 cup maple syrup
1/3 cup butter, cubed
2 tablespoons lemon juice
2 teaspoons ground cinnamon
1 teaspoon ground ginger
5 tablespoons orange juice, divided
4 teaspoons cornstarch
Sweetened whipped cream and toasted chopped pecans, optional

Steps:

  • In a 4- or 5-qt. slow cooker, combine the first 10 ingredients. Stir in 2 tablespoons orange juice. Cook, covered, on low 3-4 hours or until fruit is tender., In a small bowl, mix cornstarch and remaining orange juice until smooth; gradually stir into fruit mixture. Cook, covered, on high 15-20 minutes longer or until sauce is thickened. If desired, top with whipped cream and pecans., Freeze option: Freeze cooled compote in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little orange juice if necessary.

  • Combine all the ingredients in a 3-quart saucepan.
  • Cover and bring to a boil over high heat.
  • Lower the heat and simmer for 10 minutes.
  • Let cool completely and refrigerate 8-12 hours to thicken.

  • Preheat oven to 425 degrees F. Lightly coat a baking sheet with cooking spray; set aside. Combine berries and ginger in a small bowl; set aside.
  • In a medium bowl, stir together flour, sugar, baking powder and baking soda. Using a pastry blender, cut in butter (or margarine) until the mixture resembles coarse crumbs. Combine buttermilk and egg product (or egg). Add to the flour mixture all at once, stirring just until mixture is moistened. On a lightly floured surface, pat the dough to 1/2-inch thickness. Cut the dough with a floured 2-1/2-inch star-shaped or heart-shaped cookie cutter or a round biscuit cutter, rerolling scraps as necessary. Place shortcakes on the prepared baking sheet. Bake for 8 to 10 minutes or until golden. Cool the shortcakes slightly on a wire rack.
  • To serve, combine whipped topping and sour cream in a small bowl. Split shortcakes in half. Place bottoms on dessert plates. Divide the berry mixture among bottoms. Top each with some of the whipped topping mixture. Replace the shortcake tops.
