Amazing Ginger-Garlic Steak Marinade image

This marinade tenderizes the steaks and makes them absolutely delicious. You won't need steak sauce for this one! I will sometimes use it on a big London broil which I'll slice against the grain. The result is tender and really delicious. I never measure anything for this. It's hard to mess up. Prep time doesn't include time marinating in the fridge.

4 steaks, any cut
1/2 cup soy sauce
1/4 cup rice vinegar
2 tablespoons garlic powder
1 teaspoon ground ginger or 1 tablespoon fresh ginger, minced
1 teaspoon toasted sesame oil
1 teaspoon Worcestershire sauce
1 teaspoon black pepper

Steps:

  • Throw all ingredients in a Ziplock bag with your steaks.
  • Refrigerate overnight (tastes best), or for at least two hours.
  • Cook your steaks however you want.
  • Some people will probably scream unsanitary, but I like to boil down the marinade until it thickens in the same pan I cook my steaks in, and serve it as a pan sauce. I'm not dead yet!

STEAK WITH GINGER BUTTER SAUCE

3 sweet potatoes (about 1 1/2 pounds)
3 tablespoons vegetable oil
4 ounces shishito peppers
Kosher salt and freshly ground pepper
1 tablespoon low-sodium soy sauce
2 teaspoons rice vinegar
2 boneless center-cut top sirloin steaks (1 inch thick; about 1 1/2 pounds)
4 tablespoons unsalted butter, sliced
4 teaspoons minced fresh ginger
Toasted sesame seeds, for topping

Steps:

  • Prick the sweet potatoes a few times with a fork. Microwave, turning halfway through, until almost tender, about 8 minutes. Let cool slightly, then cut into bite-size pieces.
  • Heat 2 tablespoons vegetable oil in a large nonstick skillet over medium-high heat. Add the shishito peppers and season with salt and pepper. Cook, turning occasionally, until browned and starting to soften, 2 to 4 minutes. Remove to a plate with tongs. Add the sweet potatoes to the skillet; season with salt and pepper. Cook, stirring occasionally, until browned and tender, 6 to 8 minutes. Return the peppers to the skillet to heat through, about 30 seconds.
  • Meanwhile, mix the soy sauce, vinegar and 1 tablespoon water in a small bowl. Season the steaks all over with salt and pepper. Heat the remaining 1 tablespoon vegetable oil in a separate large skillet over medium-high heat. Add the steaks; cook until browned, 4 minutes per side for medium rare. Remove to a cutting board.
  • Place the empty skillet over medium heat and add 1 tablespoon butter and the ginger. Cook until the ginger sizzles, about 30 seconds. Remove from the heat and add the soy sauce mixture. Whisk in the remaining 3 tablespoons butter, 1 tablespoon at a time, until smooth.
  • Slice the steaks and divide among plates, along with the vegetables. Spoon the sauce over the meat. Top with sesame seeds.

Number Of Ingredients 8

5kg boneless gammon joint (smoked or unsmoked depending on your preference)
2l ginger beer
1 onion , quartered
2 clementines or satsumas, halved horizontally, plus a few to decorate the plate, if you like
20 cloves
3 bay leaves , plus a few to decorate the plate, if you like
2 tbsp English mustard
4 tbsp ginger syrup , plus 3-4 balls stem ginger from the same jar, thinly sliced

Steps:

  • Put the gammon in a deep saucepan (if tied, leave it as is). Pour over the ginger beer and add the onion, clementine halves, 5 cloves and 3 bay leaves. Top up the saucepan with enough water to just cover the gammon. Bring to a gentle bubble, cover with foil and cook for 2 hrs, topping up with more water while cooking if you need to.
  • Remove the ham from its cooking liquid using large tongs and leave to cool for 10 mins until cool enough to handle.
  • Heat oven to 200C/180C fan/gas 6. Carefully cut off the rind, leaving a thin layer of fat on the ham. Score a diamond pattern all over the fat. Put the gammon in a roasting tin. Mix the mustard and ginger syrup, then paint about half of the mixture over the ham. Stuff the stem ginger slices into the crevices of the scored fat and stud with the remaining cloves.
  • Bake for 20 mins, then paint with the remaining glaze. Bake for 1 hr more until burnished and bronzed. Cover with foil during cooking if the glaze starts to catch. Cut some clementines into thick slices and roast them while you glaze the ham, then use to decorate the plate, if you like. Serve the ham warm or cold. Will keep in the fridge for five days.

1 fully cooked boneless ham (4 to 5 pounds)
3/4 to 1 cup water
1/4 cup orange marmalade
1/4 cup prepared mustard
1/4 teaspoon ground ginger

Steps:

  • Place ham in a shallow roasting pan; add water to pan. Bake, uncovered, at 325° for 1 hour. , In a small bowl, combine the marmalade, mustard and ginger. Brush some over the ham. Bake 1 hour longer or until a thermometer reads 140°, brushing occasionally with glaze.

1 to 1 1/2 pounds boneless top blade, sirloin or rib-eye, cut into 2 or 4 steaks 3/4 inch thick or less
1 1/2 tablespoons butter
1 tablespoon minced ginger
2 tablespoons soy sauce

Steps:

  • Heat a large, heavy skillet over medium-high heat until it begins to smoke. Add the steaks, and cook until nicely browned, 1 or 2 minutes. Turn, and brown the second side, another minute or two. Remove the skillet from the heat and the steaks to a plate.
  • When the skillet has cooled enough so that no smoke is rising, return it to medium heat. Add butter, and when it melts, add ginger. About 30 seconds later, add soy sauce and stir to blend. Return steaks to the skillet, along with any accumulated juices. Turn heat to medium, and cook the steaks a total of 4 minutes, turning 3 or 4 times. (If pan juices dry out, add a couple of tablespoons of water.) At this point, they will be medium-rare; cook a little longer if you like, and serve, with pan juices spooned over.

You may think you don't have the time to marinate meat before grilling it, but it's time-consuming only if you think a marinade has to tenderize. As far as I'm concerned, there are only two goals in marinating: to add flavor and to promote browning and crispness. Neither of these requires long soaking, although dunking the meat while the grill heats contributes to a slightly greater penetration of flavor. This marinade of soy sauce, ginger, garlic, honey and lime is ideal for steak, but it works beautifully with any tender meats like burgers, boneless chicken, tuna and swordfish, all of which can be turned in the sauce before putting them on the grill. Longer-cooking meats, like bone-in chicken, should be cooked within 10 minutes of doneness before basting with the sauce.

Steps:

  • Start a charcoal or wood fire or heat a gas grill; the fire should be hot and the rack no more than 4 inches from the heat source. Mix together the first 6 ingredients; taste and add more of anything you like. Turn the steak in the sauce once or twice, then let sit in the sauce until the grill is hot.
  • Turn the steak one more time, then place on the grill; spoon any remaining sauce over it. For rare meat, grill about 3 minutes a side for steaks less than an inch thick. For larger or more done steak, increase the time slightly.

1/2 cup drained canned apricot halves
1/2 cup stone-ground mustard
1/3 cup packed brown sugar

1/2 teaspoon coarsely ground pepper

Steps:

  • Preheat oven to 325°. Place ham on a rack in a shallow roasting pan. Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern. 1 cup white wine
2 1/2 tablespoons Dijon mustard
2 tablespoons molasses
1 pinch cayenne pepper
2 cups ginger ale
2 tablespoons honey

Steps:

  • Preheat oven to 300 degrees F.
  • Place ham on a rack in a roasting pan.
  • In a saucepan combine wine, mustard, molasses, and cayenne pepper. Bring to simmering. Simmer, uncovered for 6 minutes.
  • Stir in ginger ale.
  • Pour glaze over ham.
  • Bake 1 hour (I usually cover loosely with foil, afraid of drying it out).
