LEMON-GINGER COOKIES WITH MINT

Steps:
- Preheat oven to 350 degrees, with racks in upper and lower thirds. In a medium bowl, whisk together flour, mint, ginger, lemon zest, and baking soda. In a large bowl, using an electric mixer, beat butter, granulated and brown sugars, vanilla, and egg yolk on medium until fluffy, about 8 minutes, scraping down bowl as needed. With mixer on low, gradually add flour mixture and beat just until combined.
- Place coarse sugar in a small bowl. Roll rounded teaspoons of dough into balls and gently roll in sugar to coat. Place, 2 inches apart, on two parchment-lined rimmed baking sheets. Bake until edges are slightly brown, 14 minutes, rotating sheets halfway through. Transfer cookies to wire racks to cool.

These are just what they say: big, soft, gingerbread cookies. They stay soft, too. My oldest son's favorite.

- Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
- In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

- Cream the shortening, sugar, egg, molasses and water. Mix in the flour, salt, ginger, nutmeg, cloves and cinnamon. Cover and chill for 1 hour.
- Preheat oven to 400 degrees F (205 degrees C).
- Drop teaspoonfuls of dough onto ungreased cookie sheets about 2 inches apart. Bake for about 8 minutes.

A lovely tea cookie. Contains powdered and crystallized ginger and fresh mint. I got the idea for these from another lovely tea cookie on the Epicurious website: orange shortbread with chocolate chips.

- Mix dry ingredients (except sugar) in medium mixing bowl.
- Cream butter, sugar, candied ginger and fresh mint in bowl of electric mixer.
- Add egg and mix until well combined.
- Add whipping cream and mix until well combined.
- Add flour mixture and mix slowly until it just holds together.
- Roll dough into a log and slice off rounds.
- Arrange rounds on parchment paper on cookie sheet, sprinkle each cookie with granulated sugar and bake at 350 degrees for approximately 14 minutes--just until the edges turn golden.

ULTIMATE GINGER COOKIE

- Preheat the oven to 350 degrees F. Line 2 sheet pans with parchment paper.
- In a large bowl, sift together the flour, baking soda, cinnamon, cloves, nutmeg, ginger, and salt and then combine the mixture with your hands. In the bowl of an electric mixer fitted with the paddle attachment, beat the brown sugar, oil, and molasses on medium speed for 5 minutes. Turn the mixer to low speed, add the egg, and beat for 1 minute. Scrape the bowl with a rubber spatula and beat for 1 more minute. With the mixer still on low, slowly add the dry ingredients to the bowl and mix on medium speed for 2 minutes. Add the crystallized ginger and mix until combined.
- Scoop the dough with 2 spoons or a small ice cream scoop. With your hands, roll each cookie into a 1 3/4-inch ball and then flatten them lightly with your fingers. Press both sides of each cookie in granulated sugar and place them on the sheet pans. Bake for exactly 13 minutes. The cookies will be crackled on the top and soft inside. Let the cookies cool on the sheets for 1 to 2 minutes, then transfer to wire racks to cool completely.
GINGER-MINT MOJITOS

- Juice the limes. You should wind up with about 1/4 cup of juice. Reserve the juiced halves.
- In a bowl, mash the lime halves, juice, rum, mint, sugar, and ginger with a spoon or masher of choice.
- Allow it to sit for about 20 minutes, and then strain into a bowl. Discard the solids.
- Fill 4 glasses with ice, 1/2 cup rum mixture and 1/2 cup club soda.

MINT COOKIE COOKIES
Steps:
- In a large mixing bowl, cream the butter, white and dark sugars. Beat in the egg, water and vanilla. In a separate bowl, sift together the flour, baking soda, and salt. Blend flour mixture into the butter mixture, and stir well. Wrap dough in waxed paper and chill at least 2 hours.
- Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets. Cover each thin mint with 1 tablespoon of dough. Place on cookie sheet and top with a pecan.
- Bake at 375 for 10 to 12 minutes. Let cool slightly on cookie sheet before removing to racks.

- In a large bowl, cream butter, cream cheese and sugars until light and fluffy, 5-7 minutes. Beat in eggs, milk and vanilla. In another bowl, whisk flour, baking soda and salt; gradually beat into butter mixture., Divide dough in half; shape each into a disk. Wrap in waxed paper and refrigerate 30 minutes or until firm enough to roll., Preheat oven to 400°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. CHRISTMAS GINGER MAN COOKIES
Found the recipe in an old cookie book and tweeked the recipe to my liking. My family ate them before I could even have time to arrange and take pictures! Next batch will be a solo act to be sure. Prep time does not include chill time.

Steps:
- Mix shortening, brown sugar & molasses together thoroughly and stir in the 1/2 cup cold water.
- Sift all the dry ingredients together and stir into the creamed sugar/shortening/molasses mixture.
- Dissolve the baking soda into the 3 TBS. water and stir into the cookie batter (make sure to mix well but not overbeat).
- Chill dough for 3 hours.
- Preheat oven to 350º.
- Break dough apart into fourths (for easier handling).
- Roll out on floured surface and cut out with your favorite Ginger Man cookie cutter.
- Transfer to lightly greased cookie sheet and decorate with raisins for the eyes & nose, ginger or cherries for the buttons.
- Bake 15-18 minutes (remember to leave plenty of room for they puff up!).
- Remove from cookie sheet and let cool on rack.
- Decorate with your favorite cookie frosting.
