GINGER SUGAR COOKIES

2 1/4 cups all-purpose flour, plus more for dusting
3/4 teaspoon ground ginger
3/4 teaspoon baking powder
1/4 teaspoon salt
2 sticks unsalted butter, at room temperature
3/4 cup granulated sugar
1 large egg
1 1-pound box confectioners¿ sugar
2 tablespoons meringue powder
5 to 6 tablespoons water
Assorted food coloring (optional)
Nonpareils, for decorating

Steps:

  • Make the cookies: Sift together the flour, ginger, baking powder and salt in a medium bowl. Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 5 minutes. Add the egg and beat until combined. Reduce the mixer speed to low; add the flour mixture in 2 batches and beat until just incorporated. Divide the dough between 2 sheets of plastic wrap; shape each into a disk. Wrap and refrigerate until firm, at least 4 hours.
  • Line 2 baking sheets with parchment paper. Working with 1 piece at a time, lightly flour the dough and roll out until 1/8 inch thick. Cut out shapes with a 3-inch cookie cutter and arrange 1 inch apart on the baking sheets. Refrigerate the cutouts 30 minutes.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Bake, switching the pans halfway through, until the cookies are light golden around the edges, 15 to 18 minutes. Let cool 5 minutes on the baking sheets; transfer to racks to cool completely.
  • Make the icing: Whisk the confectioners¿ sugar and meringue powder in a large bowl. Add 5 tablespoons water; beat with a mixer on medium-high speed until soft peaks form, adding up to 1 more tablespoon water as needed. Tint with food coloring, if desired. Spread or pipe on the cookies. Sprinkle with nonpareils. Let set, about 1 hour.

Plain sugar cookies, no matter how well they are made, are a bit boring to me. You may think I have gone off the rails by adding curry powder to cookies, but along with the ground and candied ginger, the combo really wakes up a classic American cookie. Give these a shot!

10 tablespoons (1 1/4 sticks) cold unsalted butter, diced (140 grams)
1 large egg
Seeds from 1 vanilla bean
1 1/2 cups plus 1 tablespoon all-purpose flour (208 grams)
3/4 cup confectioners' sugar (90 grams)
1 1/2 teaspoons ground ginger (3 grams)
1 teaspoon mild curry powder (2 grams)
1/2 teaspoon kosher salt (2 grams)
Demerara sugar, for rolling
2 large egg yolks, beaten
Maldon sea salt, for sprinkling
24 one-inch slices crystallized ginger, halved crosswise

Steps:

  • In the bowl of a standing mixer fitted with the paddle attachment, beat the butter on medium-low speed for about 5 minutes, until a thick, smooth paste forms. Add the egg and vanilla seeds and mix until combined.
  • Meanwhile, in a separate bowl, sift together the flour, confectioners' sugar, ginger, and curry powder; sprinkle the kosher salt over the top. With the mixer on low speed, slowly add the dry ingredients to the butter and mix until just combined.
  • Divide the dough between 2 sheets of parchment and form into long thin logs, about 1 1/2 inches in diameter. Fold the paper over the dough roll and use a pastry scraper to tighten the dough log. Use your hands to smooth and form the dough into as perfect a cylinder as you can. Refrigerate until firm.
  • When ready to bake, preheat the oven to 350°F. Line 2 baking sheets with silicone baking mats or parchment paper.
  • Using 2 hands, roll the dough logs firmly on a work surface to round out any edges. Sprinkle the Demerara sugar onto another baking sheet. Unwrap the dough and, using a pastry brush, brush the surface with beaten egg yolk. Roll the dough in the sugar and slice it with a sharp knife into 1/4-inch-thick slices. Brush the surface of each cookie with beaten yolk, sprinkle a few flakes of Maldon salt on top, and press a piece of crystallized ginger into the center of each cookie.
  • Space the cookies about 1 inch apart on the lined baking sheets and bake for 15 to 16 minutes, rotating the pans halfway through, until the edges are just beginning to turn golden. Cool in the pan for 10 minutes before transferring to a rack to cool completely. Store in an airtight container for up to 5 days.

3/4 cup all-purpose flour, plus more for surface
1/4 teaspoon baking soda
Pinch of salt
2 ounces (4 tablespoons) unsalted butter, softened
6 tablespoons granulated sugar
2 tablespoons light-brown sugar
1 1/2 teaspoons finely grated ginger
1 large egg yolk
Sanding sugar, for sprinkling

Steps:

  • Sift flour, baking soda, and salt into a medium bowl. Cream butter and sugars with a mixer until pale and fluffy. Beat in ginger, then yolk.
  • Reduce speed to low, and add flour mixture gradually, beating until just combined. Wrap in plastic, and refrigerate for 1 hour (or up to 2 days).
  • Preheat oven to 350 degrees. Turn out dough onto lightly floured parchment. Roll out until 1/4 inch thick, and cut out cookies using a 1 3/4-inch heart-shaped cutter. Transfer to parchment-lined baking sheets. Brush each cookie with a damp pastry brush, then sprinkle with sanding sugar. Refrigerate for 15 minutes.
  • Bake until cookies are set and light gold around edges, 10 to 12 minutes. Let cool on sheets on wire racks for 5 minutes. Transfer cookies to racks, and let cool. Cookies will keep, covered, for up to 3 days.

1 cup brown sugar, packed
3/4 cup butter, softened
1 teaspoon vanilla
1 egg
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 cup crystallized ginger, finely chopped
2 tablespoons sugar

Steps:

  • Heat oven to 375°F.
  • Beat brown sugar, butter, vanilla and egg in large bowl with electric mixer on medium speed.
  • Stir in flour, baking soda and gingers.
  • Shape dough by rounded teaspoonfuls into 1 inch balls.
  • Place about 2 inches apart on ungreased cookie sheet.
  • Flatten to 1/2 inch thickness with greased bottom of glass dipped in sugar.
  • Bake 8-10 minutes or until edges are set.
  • Remove from cookie sheet to wire rack; cool.
  • Optional: Dip half of each cookie in a thin vanilla glaze or melted white chocolate. Let stand on waxed paper until coating sets.
