CHAMPAGNE PUNCH WITH GINGER, LEMON, AND SAGE



Champagne Punch with Ginger, Lemon, and Sage image

This sparkling punch, with its aromatic mixture of sage, lemon, and ginger, is refreshing and light enough to drink all night.

Number Of Ingredients 14

For the ice ring:
1 lemon, thinly sliced
3-4 sprigs sage
For the punch:
8 strips lemon zest (from 1 lemon)
1/2 large bunch of sage
1/2 cup sugar
1 1/4 cups fresh lemon juice
2 cups gin
2 cups ginger liqueur, such as Canton
6 cups unflavored sparkling water
2 bottles chilled sparkling wine
Special Equipment
A Bundt or tube pan; a large (about 6-quart) punch bowl or mixing bowl

Steps:

  • Make the ice ring: Arrange lemon slices and sage in bottom of Bundt pan and fill with cold water, leaving about 1" of space at the top. Freeze until set, at least 6 hours and up to overnight.
  • Make the punch: Muddle lemon zest, sage, and sugar in a measuring cup with a pour spout until sugar starts to turn green. Add 2 cups warm water and stir until sugar is dissolved, then let sit 10 minutes to infuse.
  • Stir in lemon juice, then strain through a fine-mesh sieve into a large punch bowl. Stir in gin and ginger liqueur.
  • Just before serving, dip bottom of Bundt pan into a bowl of hot water. Place a plate over mold, invert ice ring onto plate, then transfer to punch bowl. Pour in sparkling water and wine and stir gently.
  • Do Ahead
  • Punch, without sparkling water and wine, can be made 2 days ahead; transfer to an airtight container and chill.

We found this recipe in Jerry Thomas's 1862 How to Mix Drinks or the Bon Vivant's Companion, in a recipe for a single serving. It called for Holland gin-or genever, as we know it today-and was probably a very popular drink. The back story is that when planning our first End of Prohibition party we were searching for punch recipes that could be served in teacups. So we started going through books and shot a few ideas back and forth until we found papa Jerry's recipe. We replaced the genever with Plymouth gin, and with a few more tweaks we got it perfect. The decorative ice block adds a great visual effect.

Decorative ice block
6 navel oranges, cut into quarter-wheels
6 lemons, cut into half-wheels
3 limes, cut into wheels
1 pint fresh raspberries
1 pineapple, cut into 1-inch cubes
1 (750 ml) bottle Plymouth gin
1 3/4 cups freshly squeezed lemon juice
1 1/4 cups simple syrup
1/2 cup orgeat or almond syrup
1 cup Massenez crème de framboise
3 cups water
1 (750 ml) bottle Perrier-Jouët Grand Brut champagne

Steps:

  • Prepare the decorative ice block, allowing a few hours for freezing.
  • Combine all the fruits in a large punch bowl. Add the gin, juice, syrups, crème de framboise, and water. Refrigerate for at least 4 to 5 hours. Just before serving, add the champagne and the decorative ice block.

FRENCH 75 PUNCH

The French 75 is a classic cocktail usually made with cognac, though gin is sometimes substituted, and that's the spirit I call for in this recipe. It typically isn't served as a punch but works quite well in this format. Serve this fresh, fragrant variation at any occasion that calls for toasting, like a brunch or a bridal or baby shower. A simple chunk of ice, such as one frozen in a loaf pan or bowl will suffice, but for a special, decorative touch, consider freezing orange wheels inside the ice.

16 ounces (2 cups) gin (preferably a London dry gin, such as Tanqueray)
8 ounces (1 cup) freshly squeezed lemon juice
6 ounces (3/4 cup) simple syrup
1/2 teaspoon orange bitters
32 ounces (4 cups) dry Champagne or other sparkling dry white wine, chilled
1 large ice block or two smaller blocks
8 orange wheels, for garnish

Steps:

  • In a punch bowl, combine the gin, lemon juice, simple syrup, and bitters and stir until thoroughly blended.
  • Just before serving, pour in the Champagne and stir gently. Add the ice and garnish with the orange wheels.
  • To serve, ladle into punch glasses.

Sent to me from Real Simple, love this site. A big batch cocktail that's finished with a sparkling splash. The beverage has just a few ingredients, but is very well balanced. The mint, lime, and lemon are a great pairing for floral, bracing champagne. And the gin packs a pleasant slightly bitter punch. We won't tell anyone if you decide to use your favorite Prosecco or other sparkling wine instead of true champagne. You can make the mint simple syrup up to a week ahead of time and refrigerate it in an airtight container. A couple hours before you serve it, stir the gin and citrus juices together with the mint syrup. Top the punch with champagne and garnishes at the very last minute.

2 cups firmly packed torn mint leaves, plus sprigs for serving
1/4 cup granulated sugar
1/2 cup gin
1/4 cup fresh lime juice, plus lime wheels for serving
2 tablespoons fresh lemon juice
750 ml champagne

Steps:

  • Combine mint leaves, 1½ cups water, and sugar in a medium saucepan. Bring to a simmer and cook, stirring often, until sugar is dissolved, about 4 minutes. Cover pan, remove from heat, and steep 10 to 15 minutes. Pour mixture through a fine-mesh strainer, discarding solids, and let cool completely.
  • Stir together gin, lime juice, lemon juice, and mint syrup in a punch bowl. Top with champagne. Serve punch over ice, garnished with mint sprigs and lime wheels.
