SNOWMAN CUPCAKES

Box cake mix becomes an extra-special wintry dessert with the help of some marshmallows, chocolate and peppermint candy.

1 box white cake mix (plus ingredients needed to make the cake according to the box instructions)
2 sticks (8 ounces) unsalted butter, at room temperature
4 cups confectioners' sugar (from a 1-pound box)
Pinch fine salt
2 teaspoons vanilla extract
2 tablespoons milk
1 ounce (about 1/4 cup) semisweet chocolate chips
12 regular-sized marshmallows
12 chocolate-covered peppermint candies, such as York Peppermint Patties

Steps:

  • Position a rack in the middle of the oven and preheat to 350 degrees F. Line a 12-cup standard muffin tin with cupcake liners.
  • Prepare the cake mix according to the package directions. Divide the batter evenly among the prepared muffin cups. Bake until done according to the directions.
  • Cool the cupcakes on a rack in the tin for 10 minutes, then remove them from the tin. Cool on the rack completely before decorating.
  • Meanwhile, combine the butter, sugar and salt in the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl if using a handheld electric mixer). Mix on low speed until mostly incorporated. Add the vanilla, increase the speed to medium-high and mix until smooth. Adjust the consistency with milk as desired. Fit a large pastry bag with a 1/3-inch diameter plain round tip or snip the tip of a large resealable plastic bag to make a 1/3-inch diameter hole, and fill the bag with icing. When the cupcakes are cool, hold the bag vertically with the tip pointing down at the center of each cupcake, and pipe a mound of icing onto each cupcake without lifting or moving the bag, so that the icing spreads to the edges, then finally lift the bag to form a mound on top.
  • Fit a small pastry bag with a small plain pastry tip, or use a small resealable plastic bag. Place the chocolate chips in a microwave-safe bowl; microwave, stirring every 20 seconds, until just melted. Transfer the chocolate to the prepared bag. If using the plastic bag, snip the very tip off so you can pipe the desired size. Pipe two dots for eyes on one flat side of each marshmallow, and a row of five dots for a smile. Pipe a little bit of frosting on top of the marshmallow head to glue the peppermint patty on top. Place a dot of chocolate on top of the patty hat to form a button. Place each decorated marshmallow "head" on the center of each mound of icing. Pipe 3 chocolate dots under the head to form buttons. Pipe two arms coming out of the snowman shoulders.

2 packages (16 ounces each) pound cake mix
1 cup shortening
1 cup butter, softened
8 cups confectioners' sugar
2 teaspoons vanilla extract
4 to 6 tablespoons milk
3-1/2 cups sweetened shredded coconut (about 10 ounces)
2 brown M&M's
3 green M&M's
1 large orange gumdrops
4-1/2 teaspoons miniature chocolate chips
1 chocolate wafer
6 pieces red shoestring licorice, divided
1 large green gumdrop
2 red M&M'S
Two 10-ounce custard cups

Steps:

  • Prepare cake mixes according to package directions. Pour batter into two greased 1-qt. ovenproof bowls, two greased 10-oz. custard cups and one greased muffin cup., In a 350° oven, bake muffin cup for 18-20 minutes, custard cups for 45-50 minutes and bowls for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing cakes from pans to wire racks to cool completely. , For frosting, cream the shortening and butter in a bowl. Beat in the confectioners' sugar, vanilla and enough milk to achieve spreading consistency., Head and body: Use serrated knife to level the cakes. , For the body, place one large round cake flat side up on the 8-in. serving plate. Frost the top of the cake. Place the remaining large cake on top with the flat side down and edges even. Frost the top and sides., For the head, place one custard cup cake with flat side up on top of body. Frost the top of the cake. Place the remaining custard cup cake on top with the flat side down and edges even. Frost the top and sides. Set aside 1/4 cup of frosting for hat., Press coconut over the top and sides of snowman, reserving some to sprinkle on plate later. Press two brown M&M's onto face for the eyes and three green M&M'S onto body for the buttons., Use your fingers to shape the orange gumdrop into a carrot shape. Press wide end onto face for the nose., Hat: Place reserved frosting in a bowl. Melt chocolate chips. Stir melted chips into frosting until blended. Frost top of wafer. With top of cupcake down, place cupcake on top of frosted wafer. Frost cupcake with remaining frosting. Place hat on snowman's head., Wrap two licorice pieces around hat just above brim and trim as needed., Flatten green gumdrop between waxed paper. Using sharp knife, cut a holly leaf shape from gumdrop and place on hat brim. Place two red M&M'S on brim next to holly leaf for the berries., Finishing: Press the ends of two licorice pieces together to create one long piece. Repeat with remaining two pieces of licorice. Tie long licorice pieces around neck for scarf. , Sprinkle plate with reserved coconut.

This fun holiday brunch easily serves a crowd, using just a couple of tubes of refrigerated cinnamon rolls. After baking the dough, everyone can join in on decorating the giant snowman with store-bought frosting and colored icing gel. What better way to start the day than with this warm, friendly cinnamon-scented treat!

Nonstick cooking spray
Two 17.5-ounce tubes refrigerated large cinnamon rolls, such as Pillsbury Grands!
Two 16-ounce containers cream cheese or vanilla frosting
Black icing gel, such as Wilton Sparkle Gel
Green or red icing gel, such as Wilton Sparkle Gel
1 orange candy, such as a gum drop or an M&M

Steps:

  • Position an oven rack in the middle of the oven and preheat to 350 degrees. Lightly spray 2 rimmed baking sheets with nonstick spray.
  • Remove the cinnamon rolls from the tubes and place on a large cutting board or a clean work surface; reserve the icing from the tubes for serving. Unravel 3 rolls and coil them around 1 intact roll to create a very large cinnamon roll. This will be the base of the snowman. Place on the bottom half of one of the prepared baking sheets, with a short side of the sheet facing you.
  • Unravel 2 more cinnamon rolls and coil them around 1 intact roll. This will be the body. Place it on the baking sheet, adjoining the base of the snowman. Gently squeeze so they just adhere.
  • Unravel 1 more cinnamon roll and coil it around 1 intact roll. This will be the head of the snowman. Place it on the baking sheet, adjoining the top of the body. Bake until golden brown, puffed up and cooked through, 24 to 28 minutes.
  • Meanwhile, unravel the remaining cinnamon roll into a strip of dough. Cut crosswise into 5 equal pieces. Coil 3 of the pieces each to create 3 mini cinnamon rolls. These will be the buttons. Roll out each of the remaining 2 pieces to about 3 inches long. These will be the snowman arms. Transfer the buttons and snowman arms to the second prepared baking sheet.
  • When the snowman finishes baking, let it cool slightly on the baking sheet on a wire rack. Bake the second baking sheet until the buttons are cooked through and puffed up, 15 to 18 minutes. Let cool completely.
  • Once the snowman is cool enough to touch, transfer to a large cutting board or platter. Using a butter knife of small offset spatula, evenly spread 1 container of frosting all over the snowman, frosting the crevices and even the sides of the rolls, if you like. This will act as the crumb coat. Reserve 1/4 cup of the second container of frosting and spread the remaining all over the snowman, creating large swirls. Decorate the base and body of the snowman with the cooled cinnamon roll buttons. Spread 2 tablespoons of the reserved frosting all over each snowman arm and adhere the arms to the snowman body.
  • Use the black gel icing to pipe eyes and a smiling mouth. Use the green gel icing to pipe a scarf. Add the orange candy for the nose. Transfer the reserved icing to a small bowl and serve it on the side for dipping.

  • Beat three 8-ounce packages cream cheese and 1 stick butter (both at room temperature) with a mixer until creamy. Beat in 1 cup confectioners' sugar, 2 teaspoons vanilla and 1/2 teaspoon salt. Divide into 3 balls (large, medium and small) and wrap each in plastic wrap. Chill 2 hours, then roll in unsweetened shredded coconut and stack the snowman. Add brown mini M&M'S for the eyes, mouth and buttons, and red and green M&M'S for the nose and scarf (attach with icing, if necessary). Add pretzel arms. Serve with fruit or cookies.

  • Begin by making a flat incision on the bottom of each of the fruits, then scoop out the inside of the fruits and combine them in a bowl with the Chianti. Let stand for 1 hour. To make the snowman, stack the melon, apple, and orange. Mix the mascarpone with egg whites to create the icing for the snowman. Smear the fruit with mascarpone. Attach arms of snowman with toothpicks using cocoa sticks or cinnamon sticks and pistachios for eyes and buttons. To plate, placed soaked fruit in a wide bowl, then place snowman on top.
