GHORAYBEH (LEBANESE SHORTBREAD COOKIES)
These are my all-time favorite cookies (and that's saying something) Light flavored, but buttery-rich, these cookies literally melt in your mouth. And, they're easy to make.

Steps:
- Mix butter, sugar, flour and baking powder and arak together.
- Work into a dough.
- Take a generous tablespoon of the dough and make it into a ball.
- Press down into a circle.
- Place on cookie sheet, and press your finger into the center of the dough to form a ring shape.
- Continue with the rest of the dough.
- (Traditionally, the dough is formed into short snakes, and formed into circles, and a shelled pistachio is placed at the join).
- Bake at 300 degrees for 10 minutes (do not brown the cookies--they're supposed to be white).
- Stores at room temperature for up to a week.

- In a large bowl of a stand mixer or using an electric hand mixer, cream together the softened butter and powdered sugar. Add the rose water and beat until dissolved.
- Add the flour, one cup at a time, and use a wooden spoon or rubber spatula to mix until well combined. You may want to use your hands because the dough can feel crumbly. Chill the dough in the fridge for one hour.
- Divide the dough into 1 1/2 tablespoon-sized balls using a spring-loaded scoop or your hands. Makes 20-24 balls.

- First, mix the butter with the powdered sugar using a rubber spatula. You want to cream the both together until they are combined nicely.
- Then, add 1 cup of flour at a time. Use the same spatula to mix it all together. When folding in the second cup, mix with your hands in order to have everything well incorporated. It should resemble pie dough. You want to be able to shape a disk or ball out of the dough. Don't be discouraged if the dough appears crumbly; keep working with it until it all comes together because it will!
- Wrap the dough in plastic wrap and place in the fridge to chill for at least 1 hour. This is imperative.
- Once you take out the dough, it should be hard to touch but it will be easier to mold once the heat of your hands come in contact.
