1 cup sweet rice flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 egg, beaten
3 tablespoons sugar
1/4 teaspoon vanilla extract
1/2 cup water
1/4 teaspoon cinnamon

Steps:

  • Mix together all dry ingredients (flour, powder, sugar, cinnamon and salt).
  • Beat egg, water and vanilla together in another bowl.
  • Add wet to dry and mix with a fork, it will be runny.
  • Coat a mini muffin pan with coconut oil and fill each cup to the top with the batter.
  • Bake at 375 degrees for about 8 minutes. They are almost done once they have risen and the tops are 'cracking'. Cook another two minutes after this happens. They will not get brown.
  • Cool completely and enjoy! Top with warm jelly, icing, or nothing at all!

1/2 cup unsalted butter
4 cups milk
4 eggs, beaten
4 cups sweet rice flour (mochiko)
3 teaspoons baking powder
2 teaspoons vanilla

Steps:

  • Cream together 3 cups sugar and 1/2 cup butter.
  • Blend in the remaining ingredients.
  • Pour into greased 9"x13" pan. Bake in 350 degree oven for one hour. Cool.
  • Cut into squares with a plastic knife.

This is a different take on a traditional Persian dish that I love. My sister, Naomi and I came up with the recipe together. We were trying to use ingredients that would not only taste great for kids and adults alike but also follow a gluten free casein free diet for her son with Autism. When she served this for dinner to her husband, who is very picky, he exclaimed, "Wow,Amazing! You have to make this for Christmas dinner. The entire chicken disappeared very quickly and he was disappointed that she had not made two!

1/2 cup long-grain rice
1 (3 -4 lb) roasting chickens
2 teaspoons salt (divided)
1 tablespoon vegetable oil
1 tablespoon butter or 1 tablespoon margarine
1/2 tablespoon cinnamon
1/4 teaspoon black pepper
1 teaspoon orange peel, spice
1 cup chicken stock
2 tablespoons lemon juice
1/2 cup raisins
1/2 cup orange-flavored dried cranberries
1 granny smith apple (cored,peeled,chopped)

Steps:

  • Wash the chicken in cold water, and clean the inside cavity out too. Then pat dry and rub with 1 tsp of salt. Then move chicken to greased baking dish/roasting pan.
  • In a skillet, heat 1 tbsp oil over medium heat. Add the uncooked rice, cinnamon, orange peel, 1 tsp salt and pepper. Stir fry for 2 minutes.
  • Add chicken stock, cover and simmer over low heat for 20 minutes. Please make sure your to cover the rice, it needs to be cooked prior to stuffing into the chicken.
  • Preheat oven to 400 degrees.
  • Add the raisins, orange cranberries, lemon juice and chopped apples. Mix together and then remove from heat.
  • Stuff the chicken with the rice stuffing mixture. Preferred method: Melt 2 tbsp butter and pour over stuffed chicken. Rub melted butter over all areas of the chicken. (If making the casein free version use margarine instead of the butter.).
  • Cover with foil or baking lid. Roast for 1 1/2 hours till tender.

I got an insane deal on my favorite rice cakes (plain, unsalted), and bought two cases. After the first case was finished, I noticed that I had quite a bit of leftover rice cake crumbs. They are very similar to popcorn in texture, so with Recipe #14680 as my guide, I made this corn-free version of "popcorn." Of course, you can use popcorn too! 1/2 cup light corn syrup or 1/2 cup agave nectar
1/3 cup brown sugar, firmly packed or 1/3 cup sucanat
1/2 cup creamy peanut butter or 1/2 cup chunky peanut butter
1 teaspoon vanilla extract
1/8-1/4 teaspoon salt (omit if using salted popcorn or salted peanut butter)
1/2 teaspoon ground cinnamon
8 cups plain rice cakes, just the crumbs or 8 cups popped popcorn

Steps:

  • Preheat your oven to 250ºF.
  • In a medium-sized saucepan over medium-low heat, combine the syrup and sugar, stirring and cooking until the sugar is pretty well dissolved. This should just take a few minutes.
  • Remove from the heat and stir in the peanut butter, vanilla, salt (if using), and cinnamon. If the peanut butter isn't melting, place the pan back on the heat just long enough to coerce that peanut butter inches
  • Stir in the popcorn or rice cake crumbles until well coated with the pb mixture.
  • Spread the popcorn or crumbles out on a cookie sheet or in a baking dish, and pop them in the oven for 20 to 30 minutes, stirring once, about mid-way through.

This is a Filipino dessert made from glutinous sweet rice and coconut milk. My friend asked for this recipe after someone made it for a potluck.

3 cups sweet rice
1 1/2 cups water
3 cups coconut milk
1 1/2 cups sugar
3/4 teaspoon salt
2/3 cup dark brown sugar
1/4 cup evaporated milk
2/3 cup milk
1 tablespoon unsalted butter
3 tablespoons flour
4 tablespoons water

Steps:

  • Soak rice in 3 1/2 cups water overnight.
  • Combine rice with coconut milk, sugar, and salt in a rice cooker or heavy non-stick pot over medium low heat, stirring frequently until fully cooked. Add a little more water if needed. If you are using a rice cooker, keep cooker on warm setting until rice is cooked.
  • Line a 9x13x2 inch pan with foil greased with butter.
  • Transfer rice to pan and spread evenly; smoothing the top with the back of a spoon. Set aside.
  • Combine flour and 4 tablespoons water in a small cup and stir to make a slurry and set aside.
  • Combine brown sugar, butter, evaporated milk, and milk in a non-stick saucepan over medium heat. Cook, stirring constantly until mixture comes to a boil.
  • Stir in flour mixture and whisk until sauce has thickened and is smooth.
  • Spread over rice evenly.
  • Brown top under broiler for 3-5 minutes until golden brown. Do not burn.
  • Let cool at room temperature until firm and cut into pieces with a plastic knife.
  • I decrease the sugars by 1/2 cup and cut the salt to 1/2 tsp as I do not like very sweet desserts. Sweet rice is available in Asian markets. The short grain sweet rice is normally used. Long-grained glutinous rice is used by Thai's for sweet sticky rice. Coconut milk can be purchased canned or frozen.

It is made like banana bread, topped with sliced bananas, brushed with butter, and then covered with a cinnamon and sugar mixture. Just grab one on your way out the door and enjoy or take a whole batch to work for everybody. You'll probably have to pass out the recipe for them too.

2 large eggs
1 1/2 cups mashed ripe bananas (about three large)
1 teaspoon vanilla extract
2/3 cup buttermilk
3 cups all-purpose flour

1 teaspoon baking soda
1 teaspoon cinnamon
banana, for slicing
2 tablespoons melted butter (for brushing on the cake tops)
3 tablespoons sugar (mixed with)
2 teaspoons cinnamon

Steps:

  • Preheat the oven to 350°F
  • Cream the butter and sugar together until light and fluffy.
  • Add the eggs and continue beating.
  • Add the bananas, vanilla, and buttermilk.
  • In another bowl, mix the flour, baking powder, baking soda, and cinnamon together.
  • Fold flour mixture into the butter-banana mixture.
  • Spoon the batter into the muffin papers.
  • Slice the bananas and arrange them on top of the dough. Use as many slices as desired. (Remember, the dough will expand in the oven while the banana slices will tend to become smaller).
  • Brush the tops with the melted butter and then sprinkle them with the cinnamon-sugar mixture.
  • Bake 20 to 25 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • Cool on wire racks.
