SPANISH PAELLA



Spanish Paella image

You can make a delicious, authentic Paella--the most popular dish of Spain--in your own kitchen with simple ingredients like rice, saffron, vegetables, chicken, and seafood.

1/4 cup Extra virgin olive Oil ((Spanish EVOO if you have it))
1 Onion (, diced)
1 bell pepper (, diced (I like to use ½ red and ½ green))
4 cloves Garlic
3 roma tomatoes (, very finely diced (or 8 oz. tomato sauce))
Bay leaf
1 teaspoon paprika (, sweet or smoked)
1 pinch saffron threads*
Salt and pepper
¼ cup white wine
4 boneless , skinless chicken thighs (, cut into pieces*)
¼ cup fresh chopped parsley (chopped, divided)
2 cups Spanish Rice*
5 cups Chicken Broth*
1/2 cup frozen peas
½ lb Jumbo Shrimp or prawns (, about 12 - peeled, tail on)
1/2 lb Mussels ((about 10-12), cleaned properly (beards off))
8 oz calamari rings
Lemons (, for garnish)

Steps:

  • *Please note, this is my version of Paella Mixta I learned to make while living in Madrid, Spain. I've simplified the recipe as best I could for anyone to be able to make without a special pan or equipment. There are MANY variations to Paella so please be respectful that my authentic recipe may be different from yours!
  • Add olive oil to a skillet over medium heat. Add the onion, bell peppers and garlic and cook until onion is translucent. Add chopped tomato, bay leaf, paprika, saffron salt and pepper. Stir and cook for 5 minutes. Add white wine and cook for 10 minutes. Taste and add salt if needed.
  • Add chicken pieces, 2 tablespoons chopped parsley and rice to the pot. Cook for 1 minute.
  • Pour the broth slowly all around the pan and jiggle the pan to get the rice into an even layer. (Do not stir the mixture going forward!).
  • Bring mixture to a boil. Reduce heat to medium low. Give the pan a gentle shake back and forth just once or twice during cooking. (We don't ever stir the rice, so that a crispy crust forms at the bottom, called a socarrat).
  • Cook for about 15-18 minutes (uncovered), then nestle the shrimp, mussels and calamari into the mixture, sprinkle peas on top and continue to cook (without stirring) for about 5 more minutes. Watch for most of the liquid to be absorbed and the rice at the top nearly tender. (If for some reason your rice is still not cooked, add ¼ cup more water or broth and continue cooking).
  • Remove pan from heat and cover pan with a lid or tinfoil. Place a kitchen towel over the lid and allow to rest for 10 minutes.
  • Garnish with fresh parsley and lemon slices. Serve.

1 cup olive oil
2 -3 heads garlic, with cloves detached but not skinned
6 red peppers (cored, seeded and sliced) or 6 piquillo peppers (cored, seeded and sliced)
5 -6 lbs chicken, preferably legs and thighs with bone in
4 yellow onions, chopped
2 (16 ounce) cans diced tomatoes
6 -7 1/2 cups chicken stock
20 -25 saffron threads, crushed
2 -2 1/2 teaspoons smoked paprika (Spanish)
4 -5 cups short-grain rice (uncooked)
2 (16 ounce) cans garbanzo beans
1 lb green beans (could also substitute slender asparagus or baby artichoke hearts)
20 -24 jumbo shrimp (16/20 count)
20 -24 clams (Manila) or 20 -24 mussels (New Zealand)
4 -5 lemons, cut into wedges, for garnish

Steps:

  • Heat the paella pan (or any large, flat bottomed saute pan) over medium-high heat, add olive oil and garlic and fry the peppers (Add more peppers if you want to serve some as an appetizer.)
  • Remove peppers and set aside.
  • Add chicken parts to the pan, turning to sear all sides.
  • When chicken is golden, add the onions and saute until translucent.
  • Add the tomatoes and the stock and reduce the sofrito base down for about a half hour.
  • Meanwhile, crush the saffron with the smoked paprika in a mortar and pestle and add it to the stock.
  • After a half hour, stir in the rice and let it simmer for about 20 minutes.
  • Important: Do not stir or cover the rice; as the rice cooks, add the vegetables and the garbanzo beans.
  • During the final 10 minutes, poke the shrimp and shellfish into the rice mixture so that they will cook.
  • You will know the dish is done when you can smell the smoky odor of the rice caramelizing on the bottom of the pan, and all the liquid is absorbed by the rice.
  • Finish with squirts of lemon and leave lemon wedges in the paella pan or perched along the rim.

Chicken:
1 tablespoon sweet or smoked paprika
2 teaspoons oregano
1 (3 pound) frying chicken, cut into 10 pieces
Paella:
1/4 cup extra-virgin olive oil
2 Spanish chorizo sausages, thickly sliced
Kosher salt and freshly ground pepper
1 Spanish onion, diced
4 garlic cloves, crushed
Bunch flat-leaf parsley leaves, chopped, reserve some for garnish
1 (15-ounce) can whole tomatoes, drained and hand-crushed
4 cups short grain Spanish rice
6 cups water, warm
Generous pinch saffron threads
1 dozen littleneck clams, scrubbed
1 pound jumbo shrimp, peeled and de-veined
2 lobster tails
1/2 cup sweet peas, frozen and thawed
Lemon wedges, for serving

Steps:

  • Combine the paprika and oregano in a small bowl. Rub the spice mix all over the chicken and marinate chicken for 1 hour in the refrigerator.
  • Heat oil in a paella pan over medium-high heat. Saute the chorizo until browned, remove and reserve. Add chicken skin-side down and brown on all sides, turning with tongs. Add salt and freshly ground pepper. Remove from pan and reserve.
  • In the same pan, make a sofrito by sauteing the onions, garlic, and parsley. Cook for 2 or 3 minutes on a medium heat. Then, add tomatoes and cook until the mixture caramelizes a bit and the flavors meld. Fold in the rice and stir-fry to coat the grains. Pour in water and simmer for 10 minutes, gently moving the pan around so the rice cooks evenly and absorbs the liquid. Add chicken, chorizo, and saffron. Add the clams and shrimp, tucking them into the rice. The shrimp will take about 8 minutes to cook. Give the paella a good shake and let it simmer, without stirring, until the rice is al dente, for about 15 minutes. During the last 5 minutes of cooking, when the rice is filling the pan, add the lobster tails. When the paella is cooked and the rice looks fluffy and moist, turn the heat up for 40 seconds until you can smell the rice toast at the bottom, then it's perfect.
  • Remove from heat and rest for 5 minutes. Garnish with peas, parsley and lemon wedges.

EASY PAELLA

2 tablespoons olive oil
1 tablespoon paprika
2 teaspoons dried oregano
salt and black pepper to taste
2 pounds skinless, boneless chicken breasts, cut into 2 inch pieces
2 tablespoons olive oil, divided
3 cloves garlic, crushed
1 teaspoon crushed red pepper flakes
2 cups uncooked short-grain white rice
1 pinch saffron threads
1 bay leaf
½ bunch Italian flat leaf parsley, chopped
1 quart chicken stock
2 lemons, zested
2 tablespoons olive oil
1 Spanish onion, chopped
1 red bell pepper, coarsely chopped
1 pound chorizo sausage, casings removed and crumbled
1 pound shrimp, peeled and deveined

Steps:

  • In a medium bowl, mix together 2 tablespoons olive oil, paprika, oregano, and salt and pepper. Stir in chicken pieces to coat. Cover, and refrigerate.
  • Heat 2 tablespoons olive oil in a large skillet or paella pan over medium heat. Stir in garlic, red pepper flakes, and rice. Cook, stirring, to coat rice with oil, about 3 minutes. Stir in saffron threads, bay leaf, parsley, chicken stock, and lemon zest. Bring to a boil, cover, and reduce heat to medium low. Simmer 20 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a separate skillet over medium heat. Stir in marinated chicken and onion; cook 5 minutes. Stir in bell pepper and sausage; cook 5 minutes. Stir in shrimp; cook, turning the shrimp, until both sides are pink.
  • Spread rice mixture onto a serving tray. Top with meat and seafood mixture.

1/3 cup olive oil, plus more for serving
1 red bell pepper, cut into 1/2-inch-wide strips
1 nora or cascabel chile
Kosher salt
6 bone-in, skin-on chicken thighs
8 cloves garlic
1 large onion, diced
1 (15-ounce) can diced tomatoes, with juices
4 cups homemade chicken stock (see page 220) or canned low-sodium chicken broth
1 tablespoon smoked sweet Spanish paprika
Pinch of saffron threads
6 littleneck clams
2 cups medium-grain rice
6 jumbo shrimp, preferably with heads on
6 mussels
8 ounces green beans, cut into 2-inch pieces (about 2 cups)
1/2 cup canned chickpeas, drained, liquid reserved
8 ounces rockfish fillets, or other firm-fleshed white fish, cut into 2-inch chunks
2 Meyer lemons, cut into wedges
1/4 cup chopped fresh flat-leaf parsley leaves

Steps:

  • Heat a 12-inch heavy-bottomed skillet over medium-high heat, or heat a paella pan on a grill over medium-high heat. Add the olive oil, red bell pepper, and nora chile and sauté until lightly browned, about 3 minutes. Season with salt and scrape out onto a plate.
  • Season the chicken thighs all over with salt. Put them in the skillet, skin side down, and brown thoroughly on both sides, about 8 minutes. Transfer to a plate.
  • Reduce the heat under the skillet to medium and add the garlic cloves and onion; season with salt. Cook until the onion is translucent, about 12 minutes. Add the diced tomatoes and cook until syrupy, 10 minutes. Add the chicken stock, raise the heat to medium-high, and bring to a boil. Crush the paprika, saffron, and 1 teaspoon salt with a mortar and pestle, and stir into the sauce.
  • Add the clams, cover, and remove them as they open, 5 to 10 minutes; set the clams aside. (Discard any that do not open.)
  • Return the chicken to the pan and simmer for 10 minutes. Scatter the rice evenly in the pan, turning the chicken to let the rice fall to the bottom of the pan, but do not stir! Nestle the shrimp, mussels, green beans, and chickpeas into the liquid. Adjust the heat to maintain a brisk simmer.
  • Turn the shrimp over to cook them through. Add the bell pepper mixture. Cook until all of the liquid has been absorbed and the rice is caramelized on the bottom of the pan, 20 to 25 minutes. About 5 minutes before the rice is fully cooked, add the fish to the pan along with the cooked clams, lemon wedges, and parsley. If you need more liquid, add the reserved chickpea liquid.
  • Let stand for 5 minutes. Then drizzle with olive oil, and serve.

GRILLED PAELLA

Here is a recipe inspired by the cooking exploits of Manny Howard, a size-large Brooklynite with a generous spirit, a healthy capacity for self-deception and the cooking skills of a dude-ranch Escoffier. It may be slightly intimidating to consider: a giant pan of rice and protein cooked on an outdoor grill. But it is remarkably easy to pull off if you have a paella pan (available online and in most cookware stores) and a healthy amount of patience. The whole game is in the preparation, so that you're not muddling around with ingredients while the fire burns down. Read the recipe two or three times before you get started and, the first time you make the paella, make sure you have everything ready before even you light the fire. Your overall time will improve with practice. But the flavors will be sublime from the very first attempt.

A handful of wood chips, such as fruit or hickory (optional)
One large pinch saffron
2 1/4 quarts low-sodium chicken broth
1/4 cup extra-virgin olive oil
2 pounds chicken thighs
Salt and freshly ground black pepper
1 pound chorizo, cut into half-moons
1 medium onion, peeled and finely chopped
1 tablespoon minced garlic
4 cups short-grain rice, such as arborio
1 1/2 pounds jumbo shrimp, peeled, deveined, chopped
1 cup fresh or frozen peas
2 dozen littleneck clams, cleaned
2 tablespoons finely chopped parsley (optional)

Steps:

  • If using, soak the wood chips in water. In a large pot, stir the saffron into the chicken broth and set over medium heat. Once hot, lower the heat and keep warm.
  • In an 18-inch paella pan, heat the olive oil over medium-high heat. (A large, wide, shallow, flameproof saucepan may be substituted - or, in a pinch, an enameled Dutch oven.) Season the chicken thighs all over with salt and pepper and brown on all sides in the hot oil. Transfer to a plate. Cook the chorizo in the same pan until it starts to brown. Transfer to a second, paper-towel-lined plate. Remove the pan from the heat.
  • Light a charcoal grill with about a large cereal box's worth of charcoal. Return the paella pan to the stove and set over medium-high heat. When hot, add the onion and cook until translucent, about 4 minutes. Add the garlic and stir until fragrant, then add the rice and stir to coat. Season with salt and pepper.
  • Bring the stock, paella pan, chicken, chorizo and other ingredients to a table near the grill. When the fire is at its peak heat (all of the coals are lit, and you can hold your hand over the hottest part of the fire for only a few seconds), quickly stir the shrimp, chorizo and peas into the rice, then add 2 quarts of stock. Add the clams hinge-side up so that when they open in the heat, their juices are released into the rice. Nestle the chicken on top. Using thick gloves and a pair of tongs, carefully remove the grill grate. Drain the wood chips and drop them into the fire. Quickly replace the grill grate and set the paella pan on the grate. Cover the grill and cook the paella until all the liquid has absorbed, 25 to 30 minutes. If the rice is underdone, add another cup of stock and return to the fire for 5 to 7 minutes. Season with salt and pepper to taste and, if you choose, top with parsley.

1/3 cup all-purpose flour, plus
1/4 cup all-purpose flour
4 tablespoons bacon grease
4 tablespoons cooking oil
1 large bell pepper, chopped
2 medium onions, chopped
1 cup diced celery
3 large garlic cloves, minced
4 cups beef broth or 4 cups water
3 bay leaves
1 teaspoon dried thyme
2 tablespoons hot sauce (recommended ( Texas Pete)
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon dried basil
5 medium fresh tomatoes or 4 large fresh tomatoes, peeled and quartered
1 (10 ounce) can extra hot stewed tomatoes (recommended ( Ro-Tel)
1/2 cup chopped fresh parsley leaves

Steps:

  • Season beef with kosher salt, black pepper and garlic powder.
  • Dust beef with about 1/3 cup flour and toss lightly.
  • Spray a cast iron Dutch oven with cooking spray.
  • Heat 4 tablespoons of bacon grease and 4 tablespoons of cooking oil (you may use all bacon grease, all solid shortening, or all cooking oil if desired).
  • Brown meat in hot fat and remove to a large bowl using a slotted spoon.
  • Leaving fat in Dutch oven, saute bell pepper, onions, celery, and garlic. Brown vegetables and remove to bowl with a slotted spoon, leaving fat in the pot.
  • Add or take away to total 3 tablespoons of fat to make your roux.
  • To make roux, add about 1/4 cup of flour, stirring constantly and slowly until flour is a nice deep brown, being careful not to burn the flour.
  • Slowly add 4 cups of beef broth or water and stir. Bring to a simmer and add back beef and vegetables.
  • Add bay leaves, thyme, hot sauce, Worcestershire sauce, salt, dried basil and stir.
  • Add fresh tomatoes and 1 can extra hot tomatoes.
  • Simmer for about 1 hour and 15 minutes, stirring occasionally.
  • Just before serving, remove bay leaves and stir in 1/2 cup chopped parsley.
  • Serve over your favorite hot buttered grits.
