GEORGIAN BEANS (LOBIO)

Number Of Ingredients 15

2 cups dry red kidney beans
1 large onion, chopped fine
2 carrots, chopped fine
1 rib celery, chopped fine
8 pitted prunes
1/3 cup balsamic vinegar, plus 1 tablespoon
3 cloves garlic
1 tablespoon tamarind paste
1/2 teaspoon hot pepper flakes
1 teaspoon coriander seed
1/2 teaspoon fenugreek
5 tablespoons olive oil
1/4 cup fresh cilantro
1/4 teaspoon salt or to taste
Freshly ground pepper to taste

Steps:

  • Soak beans overnight or cook beans for 2 minutes in plenty of water and allow to sit for one hour.
  • Drain water from beans and add plenty of fresh water to cover with onion, carrots and celery. Cover and simmer for about one hour, until beans are tender, but not mushy. Drain and set aside.
  • Simmer the prunes in 1/3 cup of the vinegar for 20 minutes.
  • With food processor running, put garlic through tube. Add remaining vinegar, tamarind paste, hot pepper flakes, coriander seed, fenugreek, olive oil, prunes and vinegar and process to a paste. Add the cilantro and process to chop fine. Season with salt and pepper. Stir into warm beans.

1 pound dried navy beans
1 pound thick-sliced bacon strips, chopped
6 medium onions, chopped
2 medium tomatoes, chopped
3 garlic cloves, minced
1 cup packed brown sugar
1 cup beef stock
1 cup strong brewed coffee
3/4 cup chili sauce
1/2 cup tomato paste
1/4 cup molasses
1 tablespoon white vinegar
1 tablespoon ground mustard
3 bay leaves
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon ground cloves
1/4 teaspoon cayenne pepper
1 smoked ham hock

Steps:

  • Sort beans and rinse in cold water. Place beans in a large bowl; add water to cover by 2 in. Cover and let stand overnight. Drain and rinse beans, discarding liquid. Transfer to a greased 5-qt. slow cooker., In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; drain, reserving 3 tablespoons drippings. Brown onions in drippings. Add tomatoes and garlic; cook 2 minutes longer. Stir into slow cooker with reserved bacon., Combine the brown sugar, stock, coffee, chili sauce, tomato paste, molasses, vinegar, mustard, bay leaves and seasonings. Stir into slow cooker. Add ham hock. Cover and cook on low for 10-12 hours or until beans are tender., Discard bay leaves. Skim fat. Set ham hock aside until cool enough to handle. Remove meat from bone; discard bone. Cut meat into small cubes; return to slow cooker. Heat through.

Easy BBQ beans image

Quick, simple and packed with goodness, try these beans as part of a pick-and-mix Mexican supper

1 tbsp olive oil
1 onion , thinly sliced
2 garlic cloves , chopped
1 tbsp white or red wine vinegar
1 heaped tbsp soft brown sugar
400g tin pinto beans , drained and rinsed
400ml tub passata
1 tsp Worcestershire sauce or vegetarian alternative (optional)
small bunch coriander , chopped

Steps:

  • Heat the oil in a small pan. Fry onion until starting to brown, then add garlic and cook for 1 min. Add vinegar and sugar and cook until onions are caramelised. Stir in beans, passata, Worcestershire sauce (if using) and seasoning and simmer for 10-15 mins until thickened. Stir through coriander and serve.

4 lbs country-style pork ribs
1/2 cup brown sugar
1/4 cup ketchup
1/4 cup white vinegar
1 garlic clove, minced
1 teaspoon salt
1 teaspoon pepper
2 tablespoons soy sauce
1 (15 ounce) can spiced yellow cling peaches, cubed with juice
3 tablespoons cornstarch
3 tablespoons water

Steps:

  • Mix brown sugar, ketchup, vinegar, garlic, salt, pepper, and soy sauce.
  • Add peaches and juice and mix thoroughly with sauce.
  • Dip each rib in sauce to coat and place in crockpot (slow-cooker).
  • Pour remaining sauce ingredients over the ribs.
  • Cover and cook on Low 5-6 hours.
  • Remove ribs to platter and keep warm.
  • If needed, thicken sauce by putting 3 cups
  • of sauce into pan on Medium-high on stove.
  • Put cornstarch in a small bowl; add water and stir until cornstarch is dissolved.
  • While stirring, slowly pour cornstarch mixture into sauce a little at a time until sauce is at your desired thickness.
  • Serve sauce over ribs.

1/2 pound Ground Beef
1/2 cup Chopped Onion
2 tablespoons Sugar
3 tablespoons Brown Sugar - Firmly Packed
2/3 cup Your Favourite BBQ Sauce (Montgomery Inn)
1/3 cup Ketchup
1/2 teaspoon Salt
1/2 teaspoon Pepper
1/2 teaspoon Chili Powder
2 tablespoons Molasses
2 teaspoons Dijon Mustard
1 can Kidney Beans, Drained
1 can Black Beans, Drained
1 can Chick Peas, Drained
1 can Pork and Beans, Do not drain
10 strips Crumbled Bacon

Steps:

  • Cook ground beef and onion, stirring until meat crumbles. Drain and place in large bowl.
  • Stir sugar and remaining ingredients into mixture.
  • Spoon into lightly greased slow cooker.
  • Cook on low for 3-4 hours, stirring once or twice.
  • Alternative to slow cooker. Place in baking dish and cook uncovered at 350 for 1 hour, stirring once.
