Geoduck Scramble with Crème Fraîche image

This would make a lovely brunch dish, but you could serve it as an appetizer, too, with some toasted or grilled bread and a glass of sparkling. The quenelle of crème fraîche is made using two spoons like paddles to shape softer ingredients into an oval or a football. For a throwback to dot.com excess, pile some caviar on top if you like. If you aren't feeling fancy, just dollop the crème fraîche on top instead.

Number Of Ingredients 6

3 tablespoons unsalted butter
8 fresh eggs
Kosher salt and freshly ground pepper
1 prepped geoduck mantle (see page 23), halved and thinly sliced
3 tablespoons minced chives
4 tablespoons crème fraîche

Steps:

  • Melt the butter in a sauté pan over medium heat. Crack the eggs into a bowl, season with salt and pepper, and beat lightly. Add the geoduck mantle to the beaten eggs and stir to combine. Pour the mixture into the prepared pan and scramble, over medium to low heat, until the eggs are creamy and just set. Add the chives and stir.
  • Divide among 4 shallow bowls and top each with a quenelle of crème fraîche.

1 cup crème fraîche or sour cream
2 teaspoons grated Meyer lemon peel or regular lemon peel
1/2 teaspoon salt
12 large eggs
3/4 cup heavy whipping cream
1 teaspoon salt
2 tablespoons olive oil
2 1/4 cups thinly sliced leeks (about 1 1/2 leeks)
1 tablespoon olive oil
12 slices smoked salmon (about 8 ounces)
1 tablespoon finely chopped fresh chives

Steps:

  • Whisk together crème fraîche or sour cream, lemon peel, and 1/2 teaspoon salt in small bowl. Refrigerate until ready to use, up to 4 days ahead.
  • Whisk together eggs, heavy whipping cream, and 1 teaspoon salt in large bowl. Refrigerate until ready to use, up to 2 hours ahead.
  • Heat 2 tablespoons oil in large nonstick skillet over medium heat. Add leeks and sauté covered until soft, stirring occasionally, about 10 minutes. Add 1 tablespoon olive oil to same skillet. Increase heat to medium-high. Pour egg mixture into pan. Cook until light and fluffy, stirring constantly with a rubber spatula, about 8 minutes. Spoon eggs onto warm serving platter. Top with Meyer lemon crème fraîche, smoked salmon, and chives
  • Serve remaining Meyer lemon crème fraîche alongside.

DUCK BREAST WITH CRèME FRAîCHE AND ROASTED GRAPES

Juniper is a traditional seasoning for meats and game. Look for the dried berries in the spice section of the supermarket. What to drink: A Rhône red or varietal Syrah.

Yield Makes 6 servings

Number Of Ingredients 8

6 6- to 8-ounce duck breasts (thawed if frozen)
1 tablespoon dried juniper berries, crushed in resealable plastic bag using flat side of mallet
1 tablespoon fresh thyme leaves
1/2 pound purple seedless grapes, cut into small clusters
1/2 tablespoon olive oil
Coarse kosher salt
3 cups arugula
1/4 cup crème fraîche or sour cream, stirred to loosen

Steps:

  • Using sharp knife, score skin of duck breast diagonally to create 3/4-inch-wide diamond pattern. Sprinkle crushed juniper berries and thyme over both sides of breast; press to adhere. Place on rimmed baking sheet, cover with plastic wrap, and refrigerate at least 4 hours. (Can be prepared 1 day ahead. Keep refrigerated.)
  • Preheat oven to 500°F. Arrange grape clusters in single layer on baking sheet. Drizzle with olive oil and sprinkle with kosher salt and pepper. Roast until skins are slightly crisp but grapes are still soft and juicy inside, about 14 minutes. Cool. (Can be made 4 hours ahead. Let stand at room temperature.)
  • Sprinkle both sides of duck breasts with salt and pepper. Heat heavy large skillet over medium heat. Add duck, skin side down; cook until almost all fat is rendered, about 7 minutes. Increase heat to medium-high and cook until skin is brown and crisp, about 4 minutes. Turn duck over and cook about 3 minutes longer for medium-rare. Let duck rest 5 minutes.
  • Divide arugula among 6 plates. Thinly slice duck breasts crosswise and fan out slightly; place 1 breast atop arugula on each plate. Drizzle crème fraîche over each breast. Divide grapes among plates.

This is a wonderful, slightly creamy egg dish. The chopped parsley gives it tons of great color! If you can't find creme fraiche in your grocery store, just combine 1 tablespoon of buttermilk with 1 cup heavy whipping cream. Stir together and pour into a jar. Very lightly screw the lid on and let sit for 5 to 8 hours. This it can be refrigerated for 10 to 14 days.

Stir in 1 tablespoon creme fraiche; cook and stir until eggs are set, 2 to 3 minutes more. Transfer to a plate and garnish with remaining creme fraiche.
