AUTHENTIC TEXAS FRITO PIE
This is the original Frito Pie Recipe, created by the wife of one of the Frito executives in the 1950s. It's a classic, perfect football game food or anytime you want something that's quick and easy that the whole family will love. There are a lot of variations but this is the original!

Steps:
- Heat the chili until it is steaming hot.
- Place Fritos in a lightly oiled casserole dish.
- Cover with the chili.
- Cover top with cheese.
- Heat until cheese melts.
- Serve sprinkled with onions and sour cream if desired.

THE REAL FRITO PIE
First, let me say that chili for Frito Pie doesn't come from a can. It comes from honest-to-goodness stove top cooked chili using the finest of ingredients. Steps:
- 1. Grease your baking dish...I know it sounds silly, but it makes a nice crust on your pie.
- 2. Bottom is a light layer of crushed corn chips.
- 3. Spoon on a layer of left over chili.
- 4. Top with more chips (thicker this time).
- 5. Top the chips with the rest of the chili.
- 6. Cover that with the rest of the crushed chips and then another 2 cups of cheese.
- 7. Bake at 375 for 40 minutes or until cheese is melted and the whole concoction is bubbling.
- 8. **Making Chili: Sometimes I use beef or moose chunks, most of the time it is ground meat. I ALWAYS include beans, tomatoes, cumin, garlic, onions, red chile puree (Hatch), red chili flakes, and I thicken it with tapioca just like my mom taught me to do. Don't salt the beans before you add to the chili.
GENUINE FRITO PIE
Growing up in the 50's in the south, Frito Pie could be found at every drive-in, ballpark and greasy spoon cafe. It isn't put in a casserole, it isn't baked in the oven. It's eaten right out of the Frito package with a plastic spoon. The greasier the chili, the better the Frito Pie.

- Crunch pack of Fritos. You don't want them in crumbs but you want them broken up a bit. Slice open side of package. Pour in greasy chili. Squeeze in one hearty squirt of mustard. Sprinkle onions on top. Top it all with cheese.
- Grab a plastic spoon and stick it in the middle and you're ready to enjoy a genuine Frito Pie.
