Yield Makes about 1 quart

Number Of Ingredients 7

2 cups hazelnuts (8 ounces), toasted , skins rubbed off, and cooled
3/4 cup sugar
1/8 teaspoon salt
4 1/2 cups whole milk
3 tablespoons cornstarch
4 ounces bittersweet chocolate (no more than 60% cacao), finely chopped
Equipment: an ice cream maker

Steps:

  • Pulse hazelnuts with sugar and salt in a food processor until finely ground. Transfer to a heavy medium saucepan with milk and bring just to a boil, stirring occasionally. Remove from heat and let steep, covered, 20 minutes.
  • Strain mixture through a fine-mesh sieve into a bowl, then return to cleaned saucepan.
  • Put 1/4 cup milk mixture in a small bowl and whisk in cornstarch. Return to saucepan, then boil over medium heat 2 minutes, whisking often (mixture will be thick). Remove from heat and add chocolate, stirring until melted and incorporated. Chill, stirring occasionally, until very cold, 3 to 6 hours.
  • Freeze mixture in ice cream maker. Transfer to an airtight container and put in freezer to firm up.

250 g mascarpone
200 ml cream
1 cup milk
2 tablespoons cocoa
1/3 cup dried cranberries, chopped
1/3 cup pistachios, chopped
1 orange, zest of
100 ml cream
100 g white chocolate chips
1 tablespoon coconut, grated
4 -6 ice cream wafers

Steps:

  • Whip 200 ml of cream.
  • Stir together the mascarpone and the milk. Add the cocoa and the orange zest.
  • Carefully mix in the cream.
  • Put this mixture in the icecream maker. And let turn 5-10 minutes.
  • Add the cranberries and the pistachios to the mixture in the icecream maker.
  • Let turn until done. Pour in a container and freeze for a few more hours.
  • At serving time, make the sauce.
  • Pour the cream and the chocolate chips in a glass bowl and melt over a hot water bath. When you have a smooth sauce add the grated coconut.
  • Put 2-3 scoops of icecream in a beautiful bowl, pour some hot sauce over and decorate with an ice cream wafer.
  • You can add some fresh fruit if you like.

  • Whip the egg yolks with the sugar at maximum speed for about 5 minutes, until you have a soft fluffy cream.
  • Meanwhile, pour the milk in a saucepan and bring it almost to a boil. Cook for about 5 minutes. Don't boil the milk. Check that the temperature remains at about 85°C (185 F) with a kitchen thermometer.
  • Transfer the egg and sugar fluffy cream to a saucepan. Pour the hot milk slowly. Keep mixing while you do it. If you want to flavor your gelato, this is the time to add either grated lemon zest or two drops of vanilla extract or vanilla bean. Now put it back on the heat and cook for another 5 minutes without boiling and always stirring. Then turn off the heat and add the cold heavy cream. Mix really well.
  • If you have an ice cream maker, pour the mixture into the machine and start it. It will take about 40 minutes, depending on the model. After the necessary time, your gelato is ready! Fresh, creamy and nutritious.
