ITALIAN BREAD SALAD (PANZANELLA)
Like so many Mediterranean bread salads, stale bread is combined here with red onion and tomato and dressed with vinegar and olive oil. It's like a bread salad version of gazpacho.

Steps:
- If your bread is very hard, douse it with water first and saw it into a few pieces that will fit into a medium bowl. Cover with the onions. Pour on cold water to cover and let sit for 20 minutes. Lift the onions off the bread and rinse in a strainer. Drain the bread, squeeze out excess water and crumble the bread into a salad bowl.
- Add the tomatoes, basil, and parsley to the bowl. Mix together the vinegar, garlic, salt, pepper, and olive oil, and toss with the bread mixture. Cover and refrigerate for 1 hour or longer before serving.

- Roughly chop the cucumbers, bell peppers, tomatoes, and red onions into 1-inch cubes. Put each vegetable separately into a food processor fitted with a steel blade and pulse until it is coarsely chopped. Do not overprocess!
- After each vegetable is processed, combine them in a large bowl and add the garlic, tomato juice, vinegar, olive oil, salt, and pepper. Mix well and chill before serving. The longer gazpacho sits, the more the flavors develop.
GAZPACHO PANZANELLA
This yummy salad combines the classic Spanish soup with Italian bread salad. Go ahead and chop the vegs. and toast the bread ahead of time, then toss the salad just before serving because the bread will soak up the juices and become soggy if it sits too long. If you prefer your panzanella drier, just use less dressing. For a vegetarian version, leave out the chicken. Adapted from Cooking Light magazine.

- Preheat oven to 350*F.
- For Salad:.
- Arrange bread cubes in a single layer on a baking sheet. Lightly coat bread cubes with the olive oil cooking spray. Bake at 350*F. for 15 minutes or till golden brown, stirring once. Set aside.
- Put tomato, chicken, cucumber, bell pepper, onion, and parsley in a large bowl; toss lightly to combine.
- For Dressing:.
- Combine the vegetable juice, vinegar, olive oil, water, garlic, salt and pepper, stirring with a whisk. Drizzle over salad tossing gently to coat. Stir in the bread cubes. Let stand for 5 minutes. Serve immediately. Enjoy!

- In a large mixing bowl, combine bread cubes with large drizzle of extra virgin olive oil and a generous pinch of kosher salt. Toss to make sure the bread is well coated (save the bowl for later use). Spread the bread cubes on a sheet pan and bake in heated oven for about 10 minutes or until golden (the edges should get crisp, while the bread gains some color and crisp but remains still a bit chewy).
